From Garden to Soup

Stepping back into my vegetable garden after three months away, I’m immediately overcome with horticulture shock. It’s not only a sense of disorientation and sadness over neglect, but a looming frustration that the work ahead might be too difficult. The cavolo nero plants are now treelike, with thick grey trunks and yellow flowers waving in the breeze high above my head. The bees are happy. Mizuna lettuces resemble a triffid forest, delicately frilled in maroon and topped with more yellow flowers. The coriander, endive, parsley and chicory follow on their march towards the sky. There are weeds galore, some trying to smother the garlic, requiring gentle hand pulling so as not to disturb the still emerging bulbs of our precious annual crop. Most weeds are valuable additions to the compost bin: they might not be edible, but many have sought out valuable trace elements in the soil. Those in flower are drowned. Beds full of broad beans support each other like good friends, their black eyes winking with promise, roots setting nitrogen in the soil.

Once the borders are clipped, the pathways revealed, the beds pulled into shape, the snow peas supported and tied, and edible greens harvested for pies and soups, I can see my way forward. My vegetable patch, my precious orto, is a labour of love, it’s a statement about the value of fresh food, and it’s an act of defiance against the capitalist diet.

Ingredients for a Garden Soup. Minestra dell’Orto

  • 1/2 kilo fresh borlotti beans, podded or substitute dried borlotti if fresh are unavailable.
  • 3 cloves garlic, 2 finely chopped,
  • fresh rosemary branch
  • 1 medium onion, finely chopped
  • 2 celery sticks, finely chopped
  • 2 Tablespoons EV olive oil
  • 4 large silver beet leaves, finely shredded, or more if small
  • 3 handfuls big pasta, such as mezzi rigatoni
  • homemade vegetable stock ( ingredients listed separately in method )
  • salt, pepper to taste

Steps for a tasty spring soup

  1. Make a vegetable stock from chopped carrots, onion, celery,bay leaves, parsley stalks, mushroom stalks. Cook for 30 -45 minutes.
  2. Pod the borlotti beans, add to a pot, with one whole garlic clove and one small rosemary branch. Cover with water, bring to the boil, lower heat and cook till beans are soft and liquid is brown and thick, around 30- 45 minutes. If using dried beans, soak overnight, then cook until soft. Time will vary depending on the age of the beans.
  3. Make a soffritto with one chopped onion, two chopped garlic, chopped celery in the olive oil. Add a little dried chilli and more finely chopped rosemary to the mix if you like. Cook on gentle heat, stirring occasionally, until the onions have softened but not coloured.
  4. Add the silverbeet ( chard) and toss around for a minute or so to coat in oil. Then add the cooked beans with some of the cooking water. Add stock, enough to well cover the beans and silver beet. Bring to the boil then reduce heat and cook for five minutes or until the greens have softened. Add salt.
  5. Add the pasta, making sure there is enough liquid in the pan, and cook until the pasta is al dente.

Serve topped with a drizzle of good olive oil, grated parmigiano reggiano and crusty bread.

 

Spring Gardening and Green Recipes

‘Eat your greens’ was a familiar reproach from the elders around my childhood dinner table, as the boiled beans lay listlessly on the plate at the end of a meal. My father tried to lighten the mood by inventing riddles to encourage or distract the young diners, “Beans were made for queens”, or rhymes about historical events. There was nothing appetising or appealing about cooked greens in the Australian kitchens of the 1950s and 60s. All the culinary devotion was given to the meat, the centre piece of all our meals except on Fridays. The range of greens was fairly limited and included beans, peas, cabbage, brussel sprouts and lettuce, that is, iceberg lettuce. Broccoli, broccoletti, cima di rape, kale, cavolo nero, fennel, asparagus, broad beans, radicchio, bok choy, chinese broccoli, choy sum, wong bok and the vast variety of lettuces came to Australia much later. Silverbeet appeared occasionally, always served under a blanket of bechamel. Parsley was the main herb grown, the curly variety used to decorate scrambled eggs or a casserole, never featuring in its own right as a pesto or in tabouleh. Basil Genovese was still to make itself known and loved, followed by Thai and Greek basil. And then came Japanese herbs and leaves, shiso and mustard greens, mizuna, as well as the wild pungent rocket, rucola selvatica, that pops up everywhere, anise, coriander, lemon grass, the green tops of turnips and radish, the leaves of pumpkins, and the chicory family of greens.

All the greens of the world have their moment of glory in my garden and I would be lost without them. Most grow wild now. They are the star of many a dish, or are the inspiration for others. My green garden is most prolific in Spring and now, as I pull out the last of the broad beans, and watch the parsley and silverbeet bolt towards heaven, I’ll share a few simple green recipes.

These silverbeet and haloumi fritters were popular for lunch. They are fast and easy to prepare. I’m tempted to call them gozleme fritters as the taste is similar to the filling of a Turkish gozleme. Some oil softened onion could be a good addition to the mix. I always keep a tub of brined Haloumi in the fridge and find that buying it bulk in a Middle Eastern store is economical. A big tub lasts a year.

Silverbeet and Haloumi Fritters

  • 180g haloumi cheese, coarsely grated
  • 2 cups silverbeet, finely shredded
  • 2 Tablespoons mint, finely shredded
  • 1 lemon, finely zested
  • 2 eggs
  • 1/2 cup plain flour
  • 2  Tablespoons EV olive oil

Grate the haloumi on a box grater ( large hole) into a bowl. Remove the white stalks from the silver beet and finely shred then add to the bowl. (Save the stalks for a soup or gratin). Add the mint, lightly beaten eggs, and flour. Mix well. Heat the oil in a large frying pan. Scoop large tablespoons into the pan, and slightly flatten as you go. Don’t overcrowd the pan. Gently turn to brown both sides and place them on a plate with paper towels to absorb the oil. Serve with a lemon wedge or yoghurt.

The broad beans starred in many a recipe during Spring, but this dish, also using haloumi, was popular.

  • up to 1 kilo broad beans
  • 150-200 g haloumi
  • one garlic clove
  • sea salt, black pepper
  • EV olive oil
  • mint
  • lemon wedges

Shell the beans and cook briefly in a pot of boiling water for 1-2 minutes. Drain and submerge them in cold water to stop the cooking. Remove the skins by popping the green centres out between your thumb and forefinger. (This is an easy but tedious task, and one I hand over to my kitchen hand, Signore Tranquillo, who is an uncomplaining soul.) Smash most of the beans in a mortar and pestle, adding some finely chopped garlic, salt and pepper and a dash of olive oil. Meanwhile fry rectangular pieces of haloumi in hot oil. They don’t take long to turn golden. Prepare the serving dish with salad leaves, then the smashed fava beans, then the fried haloumi and torn mint leaves. Place lemon  wedges on the side.

I have a few more wonderful green dishes to share with you dear reader, but am waiting on one of my taste testers to give her final verdict on my latest silverbeet invention. Until then, addio, and happy green cooking and I mean that literally.

Pasta of the week: Pizzoccheri della Valtellina

One of my favourite winter pasta dishes is Pizzoccheri della Valtellina. The combination of buckwheat pasta, savoy cabbage or other greens, with fontina cheese and a buttery garlic sauce is so comforting and nourishing on a cold day. I bought some buckwheat flour recently, fully intending to make my own buckwheat tagliatelle but then I heard a little voice whisper, ”Don’t create a rod for your own back.” My home-made version will have to wait. Meanwhile, a timely box of Pizzoccheri turned up in that famous pasta aisle of Melbourne’s Mediterranean wholesaler. Organic, made in Valtellina in Lombardy, and labelled I.G.P ( Indicazione Geografica Protetta), who could resist the real thing.

Recipe for 6 people. Adjust quantities accordingly, but I usually measure around 175g of pasta for 2 people and keep the whole garlic clove.

  • 500 g Pizzoccheri della Valtellina
  • 250 g potatoes peeled and cut into small cubes
  • 200 g Savoy cabbage, silver beet or Cavolo Nero ( I like to mix these for colour and use those that are growing in my garden )
  • 160 g Fontina cheese
  • 160 g grated parmesan
  • 200 g butter
  • 1-2 cloves garlic
  • salt/pepper

Method

Cook the potatoes in a large pot of salted water for 5 minutes. Add the Pizzoccheri pasta and the roughly chopped greens and boil for 12-15 minutes. Meanwhile melt the butter and cook the finely chopped garlic gently. Slice the fontina cheese and grate the parmesan. Heat a large serving plate and your pasta bowls. Once the pasta and vegetables are cooked, strain them and layer into a large serving bowl, along with the cheeses, alternating until the ingredients are used. Pour over the garlic butter and season. Serve.

The cheeses melt once layered through the hot pasta while the garlicky butter adds another tasty layer to the sauce. Simple and sustaining. Fontina cheese is a must in this recipe.

 

 

Gnocchetti Sardi. Pasta of the week number 2.

The pasta variety, Gnocchetti Sardi, or little Sardinian gnocchi, is a small ridged pasta around two centimetres long. It’s a great shape to use when you want an amalgam of pasta, vegetables and protein, blending nicely into one comforting bowl.

Malloreddus, the Sardinian name for these little gnocchi shapes, means small calves. They have been prepared since ancient times, often for festivals and weddings and are usually combined with sausage, or meat and saffron. Traditionally they were made from semolina flour and water and hand rolled into long strips of dough, then shaped into cubes and crushed against a straw basket (a ciuliri or straw sieve) to make the textured stripes. They were meant to resemble vitellini, ( the Italian translation of Malloreddus ) meaning small calves. As you can see in the photo above, they do look a lot like gnocchi, the striped pattern designed to hold a good sauce

This vegetarian dish combines shredded silverbeet (chard) with a little gorgonzola dolce, thin cream and toasted walnuts to create a wholesome dish. The recipe is deliberately imprecise. Combine the ingredients listed to suit your taste, keeping a fine balance as you go. This dish is an Almost Italian original and one inspired by the return of chard to my garden.

Gnocchetti Sardi con Bietola, Gorgonzola e Noci/ Sardinian gnocchi with Silverbeet, Gorgonzola and Walnuts

Ingredients in sequence of use.

  • 100 gr pasta Gnocchetti Sardi per person
  • salt
  • EV olive oil
  • one garlic clove
  • some small silverbeet leaves, finely shredded
  • a small chunk of gorgonzola dolce, {DOP is you can find it/flash but so good}
  • some fresh walnuts, toasted in oven, then chopped into small pieces.
  • pouring cream
  • ground black pepper
  • Parmigiano cheese shavings for serving, optional.

Cook the pasta in a large pot of boiling salted water until al dente. Meanwhile in a wide and deep frying pan, heat the olive oil and gently saute the garlic clove. Remove the clove after it has flavoured the oil. Add the shredded silverbeet and toss around for a minute or so until wilted. Tear the gorgonzola into small clumps and add to the pan. As it begins to melt, add some pouring cream to the pan and a few grinds of black pepper. Don’t swamp the dish with cream. Reduce the cream and cheese mixture a little. When the pasta is ready, drain it then add to the pan, tossing through the sauce. Add the nuts, toss once more. Serve with shaved parmigiano.

About draining pasta. I rarely drain pasta in a colander over a sink, preferring to keep a small amount of residual pasta water to add to the secondary cooking which happens in a deep wide frying pan. With long pasta shapes, I lift them from the boiling pot to the pan with tongs or a claw pasta lifter: with short shapes I scoop them out with a wire sieve and shake a little. In this way, a small amount of the starchy, salty water helps to loosen the sauce.

Last weeks pasta of the week: Ditalini con Cacio e Uova

Pasta del Giorno. Casarecce, Silver Beet and Chickpeas.

My best meals are  usually spontaneous and unplanned. Ingredients present themselves from the Spring garden: I wander about, basket in hand, and pick a few likely candidates to make the Pasta Del Giorno ( pasta of the day) while Mr T digs out a cheap, light red wine, to go with it. He does most of the hard physical labour in the orto, carting wheelbarrows of compost about or making fences and mowing grass, so a proper lunch is in order most days. I add a few pantry staples and a new combination is born.

Today’s pasta takes around 20 minutes to prepare and cook. Meanwhile, have a munch on these radishes while I boil the pasta water.

Pasta del GiornoCasarecce con bietola, acciughe, e ceci./ Casarecce pasta with silver beet, anchovies, and chickpeas for two or three people.

Recipe for two or three.

  • 180 gr casarecce pasta ( I prefer De Cecco brand)
  • 6 anchovy fillets in oil
  • 2 large garlic cloves, finely chopped
  • 2 tablespoons olive oil plus extra
  • a pinch of ground chilli flakes
  • 4 medium-sized young silver beet leaves including stems.
  • a few tablespoons of chickpeas, well-drained, from a can. ( reserve the rest for another use)
  • black pepper
  • more oil and parmigiano to serve

Method

In a heavy based deep sided frying pan, add the oil and stir fry the garlic and anchovies together, mashing the anchovies as you go.

Add the chilli and finely shredded silver beet leaves, stirring well. Add a handful of chickpeas to the mixture. Turn heat down to very low or off until the pasta is ready.

Meanwhile cook the casarecce pasta in a large pot of salted water and as per packet directions. Keep a cup of the cooking water, then drain the pasta OR, simply scoop out the pasta with a large wire strainer and add to the frying pan of sauce. The second method retains enough liquid to loosen the sauce.

Turn heat to high, then toss around in the frying pan, distributing the ingredients well. Season with black pepper. Consider adding a little more oil or cooking water. Serve in hot bowls with grated parmigiano. Salute!

The Bossy Stuff or Basics for Beginners.

It is easy enough to create a nourishing and well-balanced pasta dish so long as a few basics are observed:

  • Start with a flavour base for your sauce. Each soffrito should match the ingredients and the season.
  • Don’t overload your pasta dish with too many ingredients. Choose around 2-3 main ingredients to star in the sauce.
  • Choose a pasta shape that will match or showcase your ingredients.
  • Consider how to make your sauce wet. Short, fat pasta shapes are hard to digest if the sauce is too dry.
  • Save some of the cooking water at the end to add to the sauce.
  • Add the pasta to the sauce, and toss around in a large pan. This technique guarantees that the sauce is well-distributed through the pasta, and reheats as well. ( Don’t serve the cooked pasta in a bowl and plonk the sauce on top. Aussie style, alla 1970s – very stodgy )
  • Time the cooking of the pasta and taste it for doneness. Al dente or to the tooth means a little undercooked and not too soft. Remember that the pasta will continue to cook when added to the sauce.
  • Always heat the serving plates. A good pasta meal can become instantly cold through the omission of this step.
  • Use large shallow bowls for serving. Large deep bowls are better for Asian noodle dishes. Small ‘old school’ bowls are good for breakfast cereal.

Silver Beet Paneer: Curry for a Cold Snap

OLYMPUS DIGITAL CAMERAWe have been forced back indoors. Today, at the height of Spring, a cold front blew in and the temperature plummeted to 8.5 celsius. That’s Melbourne for you.

Yesterday afternoon was a different story. I felt like Mortisha in my Melbourne black: the hot sun beat down on my layered clothing, making the post- prandial walk quite uncomfortable. For those readers who live anywhere in the world but Melbourne, I should mention that Melbournians favour black dressing.

We had lunched at the Woodlands Hotel, a quirky hotel with an unusual menu, in Sydney Road, Coburg. We were merrily celebrating a birthday and enjoying a post- Bali get together when I noticed Madame Rosalie’s curry, a play on that Indian classic, Muttar Paneer, only substituting silverbeet and broad beans for the peas. What a brilliant idea! These seasonal vegetables have reached plague proportions in my garden. Today I’m making a silver beet Paneer curry, then next week, the Muttar Paneer, substituting broad beans for regular peas, using the same curry base as below.

Silverbeet Paneer

Ingredients.

  • A big bunch of young silver beet
  • 1 tablespoon vegetable oil or ghee
  • 1 tomato, diced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2cm piece of ginger, finely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 120 ml thickened cream, (or whey from paneer or yoghurt making, as well as some cream)
  • 200gr paneer, cut into 2cm square cubes, either purchased or homemade.

Method.

Strip leaves from silver beet and add to a large pan, and add a little water. (Use stalks for another recipe). Cook quickly until the leaves are wilted but still vibrant looking. Drain, and squeeze out as much moisture as you can.OLYMPUS DIGITAL CAMERA

Meanwhile in a heavy based pot, heat oil or ghee, then add onion, garlic and ginger and cook until the onion has softened. Add the chopped tomato, and spices (except garam masala) . Stir for 30 seconds, then add a little whey or cream to loosen. Add the silver beet leaves, salt and sugar, and the rest of the cream.  Cook on low heat for a few minutes, stirring. When cooler, use an immersion blender and puree the mixture.

This dish is ample for four, with rice, assuming that there is another dish, such as dhal or another curry, and raita.

Just like the cucina povera of Italy, Indian food costs little to make. The ingredients came from the garden or the pantry.  The blow out was the purchased paneer.  Next time, I’ll make my own.

My Favourite Soup. An all year silverbeet recipe.

OLYMPUS DIGITAL CAMERAWhen Leah nominated Marcella Hazan’s The Classic Italian Cookbook for this month’s Cookbook Guru title, I was in two minds. Don’t get me wrong. I went through a Marcella Hazan stage from the late 80s  and I believe she has influenced my cooking profoundly. I was studying Italian at the time and her discussion of things like the importance of ‘soffritto’ and ‘salt’ changed my cooking style. At the time, Marcella became my cooking mentor,- I loved the sound of the Italian titles; the two obsessions in my life, Italian language and cooking, complemented each other so well.OLYMPUS DIGITAL CAMERA

In those days I owned two other cookbooks written by Marcella. They preceded her The Classic Italian Cookbook which I don’t enjoy as much. So I am sure you won’t mind if I share my favourite soup recipe, taken from her earlier work. This recipe is a family favourite: we have adapted it along the way but it is still close enough to the original. Marcella, I recall, flavours the oil with whole garlic cloves and then discards them. I chop it and keep it all- it flavours the stock beautifully. It has become our ‘chicken soup’, a pick me up.  I have attempted to list quantities here: normally it’s a handful of this, a bunch of that and a couple of cups of beans. The beauty of the soup relies on fresh ingredients and it costs almost nothing to make. The costly items are the Parmigiano cheese and good quality oil.

Zuppa di Bietola e Fagioli Bianchi.

(or less romantically, Silverbeet and White Bean Soup)

Ingredients

  • one small branch of fresh rosemary, stripped, chopped.
  • 5 Tbles EV olive oil
  • 4 cloves garlic or more, finely chopped.
  • 6 fillets anchovies

Make a soffritto with these ingredients in a large pot. Melt the anchovies down in the oil, stirring well, being careful not to over colour the garlic.OLYMPUS DIGITAL CAMERA

  • one large bunch silverbeet
  • 500 gr cooked cannellini /great northern beans ( from 300 dried)
  • salt
  • two small handfuls of macaroni/digitali/small shaped pasta
  • grana padano/reggiano parmigiano cheese
  • best EV olive oil for serving.

Wash and trim the silver beet. Finely slice, including the stems, and add to the soffritto, stir around and coat with oil till they wilt.
Add beans. Add enough water to barely cover ingredients. Cook on a steady heat for around 5 minutes. Add pasta, some salt, and cook until the pasta is al dente.

Adjust salt, stir some grated parmigiano through the soup.  Serve with a little stream of fine oil and extra parmigiano.

This is a piatto unico, a one course meal, with good bread.  Serves 4-6.

Hunza Pie to the Rescue. Silverbeet.

OLYMPUS DIGITAL CAMERADuring the 70s, a little paperback vegetarian cookbook – Diet for a Small Planet by Frances Moore Lappé – was all the rage.  It was a political book, the first to argue an environmental approach to vegetarianism, that ‘world hunger is not caused by a lack of food but by ineffective food policy.’  As a cookbook, it took a rather scientific approach to food, and emphasised combining grains and nuts with sesame seeds and so on, to provide sufficient protein. It was hugely popular at the time and marked a shift in my cooking, from the earlier influence of Elizabeth David, to a wholefood approach. Since then, my cooking has acquired many layers of influence, all coming together in the food of today, but a little of that simple wholesomeness remains.

As I consider the rampant forest of silverbeet/chard/bietola in the vegetable garden, a classic dish from this era springs back to mind, the Hunza Pie, along with faded memories of our old Kombi van heading towards the then undeveloped hippy havens of Byron Bay and Mullumbimby, and us, dressed in flared jeans with something to smoke.

If you also are inundated with silverbeet, I recommend this wholesome classic to you. It might be a tad hippified, but it’s still good.

Hunza Pie, the old way.

The Pastry

  • 150 gr wholemeal plain flour
  • 75 gr butter
  • pinch of salt
  • one egg yolk
  • two tablespoons of icy cold water.

The filling

  • 6 or so large stems of silver beet, stems and leaves cut up separately
  • half a small red onion, chopped finely
  • 100g cooked brown rice ( do this as you make the pastry)
  • 130 gr tasty cheddar cheese
  • one egg
  • pepper

Make the pastry by whizzing the flour and butter in a processor, then adding the egg yolk, process, then add a bit of the water until the pastry comes together in a ball. Pat out flat, and wrap in cling wrap to rest in the fridge for an hour.

Remove pastry. Prepare and grease an 8-9 inch pie dish or quiche tin, roll out the pastry and lay it in the tin. Trim the edges. As this is a simple rustic dish, there is no need to blind bake the pastry. The filling is fairly dry so the case is able to cook crisply
in one go.

Cook the chopped silver beet stems in ample salted water for 8 minutes, then add the chopped leaves for another two minutes. Drain well and squeeze dry. Mix the silver beet in a bowl with the remaining filling ingredients, holding back some of the cheese. Fill the pastry shell, smooth the top, then sprinkle the reserved cheese on the top.

Preheat oven to 220c. Add the pie and turn down oven to 175c ( fan on) and bake for 20-25 minutes. Serve with a salad. Serves four. Leftovers make great work and school lunches.

Garden Monthly. September 2014

This month my garden news is not good.  I am recording a few disasters.

Heavy frosts have continued to damage the citrus trees, especially the limes. The top leaves are badly burnt. It is too soon to prune these back as more frosts could be on the way.

The next cause of damage is the white cockatoo. This bird is the most annoying visitor to my garden. Cockies are vandals, hoodlums from the sky, descending on the garden in mobs, swooping down and causing havoc.

They don’t eat the vegetables, they cut them in half- just for fun! This particularly applies to tall-growing vegetables such as garlic, cavolo nero, and silverbeet. In the front garden, they took a particular dislike to the succulents this year, pulling them all out, leaf by leaf, as if to say ‘ we don’t like you, wrong colour, odd shape’.

The next annoyance-  the rabbits. Its seems we have a few gaps in our fencing and so these little devils have heavily pruned my parsley and radicchio. They breed in the nearby gullies and are a continual problem.

Harvest. Cavolo nero ( black kale) is now picked from one side of the plant (cockies stripped the other side) to make my favourite pasta dish. Silverbeet, coriander, and herbs are abundant. The broad beans are coming along nicely.

On the bright side, these two calves, Dougie and O’Dannyboy were born in the last fortnight, adding a touch of Spring joy to our paddocks. They, and their mothers, provide our garden with manure.

To do list:

  • I think the time has come to build a netted cage over the whole veggie patch. Out damn cockies, out.
  • Build some shelters or breaks to protect citrus before next winter.
  • Sow plots of lettuce, spring onion, rugola.
  • Prepare and enrich other beds for the big planting which will take place in early October.
  • Collect more manure from the Dexter paddocks.
