My joy in cooking is directly related to the level of productivity in my vegetable garden and orchard. This year’s summer crops are inspiring, despite the difficult and dangerous weather we’ve experienced this summer in Australia. I can only put this abundance down to a few things- the time spent monitoring the garden, good compost, mulch and water, the latter, in our case, pumped from a dam to a header tank. Each day, it’s simply a matter of combining the day’s pick with some pantry staples to make deeply satisfying meals. The first and most prolific summer vegetable, the zucchini, will come first in my Summer Cookbook, a reverse alphabetical approach. They are a versatile vegetable, lending themselves to slow braising, frittatas, ratatouille, fritters, sweet cakes, pasta sauces, soups, Greek pies, and shapes to be stuffed. This year I’m growing three varieties: Blackjack ( Black beauty), a dark green fleshed fruit, a good keeper, adding colour to soup and fritters, Cocozelle, an Italian heirloom variety, which is striped and long, the flowers more likely to cling to the young fruit, making it a great one for tempura battered zucchini flowers, and the pale green Lebanese zucchini, a good one for braising. I prefer to pick zucchini when very young for most dishes. Medium sized zucchini are set aside for soups and the large ones go straight to the chooks or are dried for seed collection.
My latest simple recipe, Grilled zucchini with Marinated Goat’s cheese, is a great addition to the summer table.
five or more very young zucchini, halved vertically or cut into three lengthwise. Note, if you shave these into thinner strips, they will char to quickly and virtually disappear on the BBQ.
good olive oil
2 large garlic cloves, smashed into a paste
fresh marjoram leaves
Meredith marinated goats cheese or equivalent product
a pinch of sea salt flakes
Light a hooded BBQ and get the temperature above 250 º c. ( you could also use a kitchen iron grill ). Toss the cut zucchini long pieces and toss in a little EV olive oil in a bowl. Add the garlic paste to a separate small bowl of EV olive oil. Using tongs, place the lightly oiled zucchini directly onto the BBQ and close the lid. Raise the lid after a minute or so and turn the zucchini strips. When nicely done on both sides, add to a serving bowl, and toss through some of the garlic paste oil. Add salt and pepper, fresh marjoram leaves and a few hand torn cubes of marinated goats cheese, as much as your conscience allows. Serve alongside other summer dishes.

One of the classic ways of conserving seasonal food, especially in rural Italy, is to preserve food in jars ‘sott’ olio’ or under oil. Usually vegetables, such as peppers, artichokes, eggplant and mushrooms, are partially cooked, grilled or brined beforehand, then covered completely in oil. The oil excludes air and acts as a seal against deterioration. The shelf life of these country treasures is shorter than other foods preserved using the bottling or ‘canning’ method, and once opened, they should be stored in the fridge.
One of the most enticing treats done in this way is anchovies under oil. I have vivid memories of the first time I tried anchovies conserved in this way. It was February 1993 and I was living in Siena for a month to attend a language course in Italian at the Scuola di Dante Alighieri per Stranieri, a short course wedged between my first and second year Italian studies at university. The course was demanding, with daily classes from 8 am to 1 pm, with a short coffee break in between. This left the afternoon free to explore the countryside or to wander the streets of Siena before returning home for a wine, a snack and more homework. One lunchtime, a fellow student and his wife invited me to lunch- he was, like me, an older student and was studying Italian to enhance his wine writing career. He recommended a little osteria, a simple place, with an appealing array of antipasti dishes displayed at the front counter. And there they were, sitting neatly in a rectangular glass dish, acciughesott’olio, pink tender fillets of anchovy glistening under golden olive oil, carpeted above in finely chopped parsley. I ordered a large scoop, along with some other bits and pieces and a panino. Anchovies have never been the same for me since that day. When in Italy, I always order a small container of acciughesott’olio from an alimentari: they taste nothing like the jarred or tinned variety.
Last Wednesday as I was trawling the fish market at Preston, a big shiny pile of fresh anchovies caught my eye. I could barely contain my excitement, largely because in all the years I’ve been frequenting fish markets around Melbourne, I’ve never seen them offered for sale. I bought one kilo, raced back home and spent the next hour, with some help from Mr T, de-heading and gutting hundreds of these tiny fish: no bigger than my little finger, this was a real labour of love, the anticipation of eating the finished product inspiring me to gut neatly and well. The following recipe is for those who might come across fresh anchovies in their travels and who don’t mind some tedious gutting. The gutting becomes quite easy once you get a rhythm going. Once gutted, they are easy to brine and conserve. Don’t confuse fresh anchovies with sardines- they are two quite distinct species: anchovies are much smaller and look and taste completely different.

1 kilo fresh anchovies
red wine vinegar
EV olive oil.
First of all, wash the fish a few times in a large colander to remove some of the blood. Then start the de-heading and gutting process, well armed with a strong wooden cutting board and newspaper for the scraps ( perfectly fine sent to the compost heap). As you cut off head, push down against the board and drag it away from the body- you’ll find that the guts come out with the head in one simple movement. If the anchovy separates into two parts, pull out the backbone: if not, leave it there, to be removed later.
Once prepared, lay in a glass or ceramic container – I used a large earthenware gratin dish. Liberally sprinkle with course salt, lifting the little fillets through the salt, then arrange them neatly in the dish. How much salt? Quanto basta, as they say in Italian recipes, q.b. for short, which means as much as you think they need. Cover with red wine vinegar. Cover the dish, and put it in the fridge for 24 hours.
The next day, sterilise two medium sized jars for the anchovies. Drain the brine from the fish, remove their fine backbones, which will pull out very easily, then pop into jars, layering them with a little finely chopped garlic and some oregano if you wish. Don’t overdo the extra flavours as they may come to overwhelm the fish over time. Fill the jars with olive oil, knock the jars against the bench a few times to remove air-pockets, then top up with more oil as needed. The contents must be covered. Put on lids tightly then store in the fridge. Leave for around five days before eating. As olive oil turns cloudy when cold, remove the anchovies a few minutes before serving and place in a small bowl. The oil with clear in no time in a warm room.
As the flavoured oil is a component of this antipasto dish, you want to use good tasting oil, but perhaps not a top notch one. I used Cobram Australian Extra Virgin olive oil, a good quality everyday oil and one that tastes quite good too.
Serve as part of an antipasto selection, or simply place them on top of good sourdough bread, along with parsley and black pepper, and eat them when the mood takes you.
The recipe was inspired by a post by Debi who wrote about finding fresh anchovies in Greece, around one year ago. I remember that post well, thinking that I would never see the fresh species land in my local fish market.
Lots of Italian food is vegan by nature and vegan by tradition but you never see it labelled as such. And that, in my opinion, which is neither humble or otherwise, is a good thing. I can’t stand labels. Most of the food you will read about on my blog is vegetarian, but I rarely mention that word in the post. I firmly believe that once we do away with labels- vegetarian, vegan, plant-based, omnivore, ethically farmed (hallelujah) and heaven forbid, Paleo- the culinary world will be a better place. A good recipe tempts the taste buds with the summary of its parts and its visual tease.
I’ve tasted very good vegan food in restaurants without that little colour- coded ‘v‘ in the corner to guide me, many a fine Italian antipasto and primo, as well as lovely traditional Indian, Greek and Middle Eastern dishes. Last Saturday I joined the throngs at the popular A1 bakery in Brunswick and ordered the Ful Mesdames platter. It was comprised of a large bowl of semi mashed warm Ful,( dried fava beans recooked) dressed with a few chick peas, olive oil, parsley and sumac, sitting on a wooden board full of extras, gherkins, pink turnip pickles, warmed middle eastern bread cut into quarters, and a generous side salad of tomatoes, lettuce and onion. It was a surprising bargain for $8, a dish that would generously feed two people. No v word in sight. The stuff that parades as vegan around the cooler traps of Melbourne is either bland or highly processed and appeals to those whose taste buds are still transitioning from childhood to something else. The newly converted may need a label to spur them on. The best vegan food is never described as such. Look at the wonderful Italianesque recipes of Rose Gray and Ruth Rogers of The River Cafe fame, whose simple vegetable based recipes make me drool at the thought, sending me running to the kitchen garden. Again, no v word required. Good food is based on fresh seasonal ingredients, combined with a solid understanding of the role played by complementary herbs and spices, then presented in such a way in such a way to excite the diner.
This week’s Pasta Della Settimana ( pasta of the week) came about thanks to the current seasonal offerings from my garden- abundant rocket, fresh borlotti beans, tomatoes, garlic and chilli. It’s a solid meal for a cooler day. It’s another take on Pasta eFagioli, that classic Italian dish that has moved up the ranks from Cucina Povera to bourgeois heaven. It can be deveganised by adding some finely grated parmigaino or any other animal based shavings you might fancy.
Today’s pasta of the week calls for Pantacce, a mini bite sized lasagna pasta shape with a diagonal cut and a frilled edge along one side. These shapes are made by Molisana, another brand of pasta I sometimes use. It’s a versatile shape that goes well with most sauces. My garden inspired the rest. In this recipe, the beans are the main star, with a small handful of pasta per person to help unite the dish, providing a farinaceous element for the hungry.

Ingredients. Once again, this recipe is descriptive, not prescriptive.
Fresh borlotti beans, cooked slowly with a handful of herbs, a pinch or two of salt and a drizzle of oil. If you can’t access fresh borlotti, use dried beans and cook them slowly so they don’t split or go soggy.
Pantacce pasta, a lasagnette shape made by Molisana or any other medium-sized short pasta shape. I have used one large handful per person as I wanted the beans to star.
Some left over home-made tomato sugo, a few tablespoons per person. If you don;t have fresh tomatoes, use a good quality, thick tomato passata, cooked with a little garlic and oil.

one finely chopped fresh chilli or a pinch or two of dried chilli flakes.
EV olive oil
fresh oregano, finely chopped.
fresh rugola ( rocket) torn.
Boil pasta in abundant salted water until al dente. Keep back some of the cooking water.
Meanwhile, in a wide and deep pan, add some olive oil to the pan and heat it on medium. Add the garlic, chilli, and oregano. Stir about for one minute then add the tomato sugo or passata, a few tablespoons per person. Stir through the beans, season well, then add the cooked pasta. Use a tablespoon or two of the pasta cooking water to loosen the sauce. The dish needs to be well sauced. Bring the dish to high heat, stirring, then add the rocket and move it about until it wilts. Serve hot with a drizzle of good oil.

Village markets in France roll around once or twice a week, and if you happen to miss your local marché, there’s always another one the following day in a village nearby. I can sense pre- market excitement when I’m staying in a village but maybe it’s just my own eagerness to get there. I must confess, I’m a French market junkie, having been to around a dozen or so over the last four weeks, and I put this down to my greed and lust for good food. I’m in the right country. French markets are integral to life here. Supplies come to your village from the local district: some from the farmers, cheese makers, apiarists, some from local artisans, and of course, manufacturers of cheap clothing. Heading out the front door, with strong bags in hand, and strolling through narrow lanes and medieval arcades, with no car traffic to deal with enroute, is far more pleasurable than heading off to a supermarket by car. If only my local market back at home near Melbourne was as easy to visit, without fear of being run down by speeding tourists keen to park as close to the market as possible. In French country markets, cars are banned: they are parked on the outskirts of the village, allowing easy access for vendors’ vehicles. All shoppers must walk to the market.
What treasures will turn up this week? What new seasonal vegetables will be on offer and will I show some restraint for a change? The church bells are chiming 8 am and I can hardly wait. Today’s market in Pezenas, Occitanie, will be interesting. It takes place in a nearby square, a stone’s throw from our 16th century apartment. As I write, I can hear the trolleys being wheeled in through the port below the window.
The markets in the Dordogne region varied in size and style. The large and colourful Sunday market at Issigeac was a favourite. It snaked its way around the narrow and winding village streets in an unpredictable way, given that Issigeac doesn’t have a large market square. All sorts of vendors turned up: the mushroom man, selling girelles, trompe du mort and Cèpes(porcini): a rugged looking duo selling oysters of every size, boxed up for buyers on beds of seaweed, a curly red headed lady with honey and bees wax for sale, who played the squeeze box and sang French folk songs when not engaged in selling, and the usual array of vegetable, cheese and saucisson stalls.
The Thursday market at Monpazier ( it has always been held on Thursdays since the 13th century ) was much smaller, though on one occasion, a mattress seller took pride of place in the square and I did rather fancy the knife sharpening man, a skill that is slowly dying. The big town market at Bergerac encircled the town’s cathedral, then radiated uphill along adjacent streets. A huge christening ceremony took place one Saturday while the market was in full swing, the shoppers and vendors forming a row of honour as the family and baby arrived.
There were little stalls selling sweet canelè in every flavour, lots of walnut stalls, chestnuts, and a substantial flower market. The Saturday market at Le Bugue, right on the Dordogne, sold the best Paella, cakess and quiches and the huge poissomiere truck did a roaring trade. I purchased a small tub of brandade to spread on croutons: this is one dish I never bother to make at home given the tedious soaking of salted cod required.
In each market you’ll usually find a separate area where cheap clothing, linen, shoes and handbags are sold. These stalls are appealing at first, then after a while, you recognise the same garments at every market- this season it’s oversized knitted sloppy joes, women’s tops with large stars on the back, and retro looking cotton tops with a lot of glitter and sequins.
One of the other features of the village market, and one I’m too shy and too foreign to join, is the footpath café scene. Coffee and wine are sipped slowly, double or triple kiss greetings take place as locals gather to catch up, though you can always spot a French poseur or two, and a few expats trying very hard to appear local. I’ll head to the Café des Arts in the late afternoon for a Pastis. I’ve acquired a taste for this old Provençal drink. I’ll wave about an imaginary Gauloises and if chilly, I may even don my new fingerless gloves or perhaps a beret.Bonne journée.
Four years ago, almost to the day, I began ‘Almost Italian’ in an attempt to document my obsession with food along with some of the cultural aspects of Italy that inform my life, my cooking and gardening. Since then, I’ve drifted away from my main theme, especially when travelling, and so I hope, dear reader, that these little indulgent travel stories are a pleasant distraction from whatever you are doing. Once I step back into my home and garden, the recipes will flow once again.
I’ve enjoyed the food of Dordogne, France, immensely. Everything I’ve eaten, with only two exceptions, has been quite special. Small restaurants and bistros respond enthusiastically to the seasons, and so a trip around a French country market will indicate what you’ll see that week on any menu. This season, cèpes ( porcini mushrooms) are still being hunted in the woods, pears and apples are sold ready to eat, kissed by the Autumn sun, irregular in shape and handsomely mottled. Small yellow fleshed potatoes are good just as they are, or with some salted butter from up Brittany way. Small bunches of parsley are added to your fish purchase, a box of oysters will be laid gently of a bed of seaweed, and vegetable stalls offer bunches of bouquet garni, consisting of thyme and bay laurel, for a small coin. This month, many bistros list omelette aux cèpes, which may seem like a simple enough dish, until you notice that fresh cèpes cost around €22 per kilo at the local market. I bought a small box and the flavour will haunt me forever. Walnuts turn up in every sweet dish imaginable, tarts, macarons, biscuits, as well as fresh walnut oil, which I resisted buying. Organic food is sold in markets, farmer’s roadside stalls and on supermarket shelves: there’s nothing precious about it- it’s a choice that doesn’t involve a huge premium or a special stamp of approval.
What I’ve loved most about French bistro food is the saucing, a technique that the French are famous for. A well executed sauce transforms a simple fish dish. The French are also reasonably adventurous and don’t stick to the formulaic dishes of the region but happily borrow and adapt from modern culinary trends, while maintaining a French slant.

The three course menu du midi, above, cost €21, which seems like a real bargain to an Australian reader, where restaurant dining and wine pricing is ridiculously expensive. But then, wages are much lower in France, and waiting staff are usually run off their feet.
