Mujaddara. Lentil Alimental

I am often aghast when my mother tells me about her cure for general lethargy. She cooks up a small rump steak, the ‘point’ of the rump, she insists, along with two eggs for breakfast! Part of my awe is her amazing appetite for meat at this early hour of the day. Even when I used to eat meat, now more than 40 years ago, I doubt I could have stomached this meal first thing in the morning. My mother lived through an era without internet ‘authorities’ proselytizing about food, although she is aware of the modern-day TV cranks, those we love or love to loathe, who promote a high protein, no carb diet to the gullible. Mother has always eaten modestly and sensibly, cooking all her meals from scratch until very recently and included a daily quota of vegetables, fruits and carbs in her diet. But she NEVER cooked lentils.

When I’m feeling run down and tired, my body growls for lentils. These humble little pulses cure me instantly, especially when combined with rice or grain. Food associated with poverty to some, or hippy era food to others, lentils come into their own when treated well and cooked in interesting ways. Red and yellow lentils in Indian dhal, or whole black lentils combined with red kidney beans in a soothing Dhal Makhani, red lentils and a scoop of bulgur wheat in Turkish bride soup, brown lentils for burgers, puy lentils in shepherds’ pie, lentil and vegetable soups finished with a dash of lemon juice, lentil and zucchini fritters, Indian Kitchari and the addictive Lebanese dish, Mujaddara, the list goes on and on.

In the last two months, I’ve made Mujaddara three times, trying to streamline the method. The SBS version, hosted by Maeve O’Meara, is quite good, the Diane Henry version tends to stick to the pot, whereas the more straight forward version I like comes from Abla Amad of Abla’s Lebanese Restaurant, Carlton, Melbourne. I love the way Mujadarra goes well with easily prepared side dishes: labne, radishes, any pickled vegetable, salads of tomato, cucumber and mint, and perhaps some Lebanese pita bread. Leftover Mujaddara can be combined with grated zucchini and a little binding egg for fritters, or stuffed into silverbeet (chard) leaves for dolmades. Or, simply microwaved for breakfast, and served with a big dollop of yoghurt. My kind of pick me up.

The following recipe is from Abla’s Lebanese Kitchen. I have slightly modified a couple of small details along the way.

Lentils and Rice ( Mjadra’at addis)

  • 300 grams ( 1 ½ cups) brown lentils, washed and drained. ( I used Australian grown Puy lentils)
  • 1 ½ teaspoons fine sea salt
  • 150 ml EV olive oil
  • 2 large onions, halved and finely sliced
  • 200 g ( 1 cup) long grain rice, washed, soaked then drained

Method

Place the lentils in a saucepan and 750 ml ( 3 cups) of water. Cover and bring to the boil over high heat. Add another 250 ml ( 1 cup) of cold water ( this prevents the lentils from splitting) and boil for about 15 minutes.

Meanwhile, heat the oil in a frying pan over high heat and cook the onion for 7 minutes or until golden brown, stirring often to prevent the onions from going too dark. Set aside one quarter of the onion, and add the remainder, together with its oil, to the brown lentils. Stir in the rice, then add another small cup of water ( about 150ml if using puy lentils) and cook, covered, over low heat for 20-30 minutes, or until all the water has been absorbed and the rice is tender. I recommend using a simmer mat for this final step.

Spoon the mixture into a shallow serving bowl and sprinkle with reserved onion. Add any left over onion cooking oil. Serve with yoghurt, Lebanese salad, and other found fridge meze.

Secret Osteria, Lake Como and a Special Risotto

Wander around the little lanes and back streets of the smaller and less touristy villages of Lake Como and you will find some real gems. One perfect but modest osteria can be found in Cernobbio, a village accessed easily by bus or ferry. I  prefer the ferry option, not only for the wonderful views of the Palazzi and gardens along the way, but just to hear the ferryman call out the names of the villages en route, “Torno, Moltrasio, Blevio, Cernobbio”, lazily trilling those ‘r’s and the nautical sounds of whistles, ropes and gangway planks landing.

The day we went to Cernobbio, the wind was icy and the ferry was almost empty: we were well rugged up for the day. It was early November and most of the large gardens had closed for the season. Among our fellow travellers was a young chap, honey blond hair perfectly groomed, sporting a mustard coloured scarf carefully arranged over the shoulder of an expensive and conservative blue outfit, tanned ankles bare above sockless and effeminate boating shoes, with a newspaper tucked under one arm. Too affected to embody the insouciance of a Castiglione courtier, la bella figura gone awry. An aimless and idle palazzo owner perhaps? He was the only other passenger to leave the ferry at Cernobbio. The place looked deserted.

We wandered around Cernobbio: it had that empty, out of season look. Although not accustomed to taking coffee at 11 am, it seemed like a sensible thing to do, given the weather. And this decision led to a most wondrous find, the Osteria del Beuc, a small worker’s cooperative and restaurant up a back lane in Cernobbio. This is where all the locals were hiding on that cold November morning. At one large table, a group of older men in sensible jackets were grazing on morning snacks to go with their pre- lunch wines. A few tables away, couples were partaking of coffee but there was a sense of expectation in the air. More people were beginning to arrive. I glanced at the paper sheet listing the menu of the day. The gregarious waiter/front of house/barman advised that I should book immediately as there was only one table left for 12.30. Good advice. I ordered a Spritz and settled in for some more people watching, buoyed by the glowing euphoria that only a Prosecco laced with Campari can produce at such an ungodly but most welcome drinking hour.

By 12.40, the place was packed. The elderly gentlemen reluctantly vacated their morning table and wandered back to the safety of their separate homes, wives and a home cooked meal. The table was then replaced with a large group of hungry young office workers. Smaller tables were occupied by elegantly dressed couples, some accompanied by small, pampered dogs on leads: the place was alive as the enthusiastic waiter theatrically went about his business.

But then, dear reader, you didn’t come all the way with me to Cernobbio to simply ogle the locals, although if you’re a bit like me, you probably enjoy a bit of people watching as you travel through life, inventing scenarios and stories for each one. The food at Osteria del Beuc is well priced and seriously very good. Honest and simple food cooked perfectly. The lunch menu came with prices for one, two or three courses, 9€/ AU$14, 12€/AU18/ €14/AU22, which included a 250 ml carafe of wine per person. Of course I went for the three course option. 

For il primo, I had a composed salad of endive, spinach and soft white cheese, beautifully dressed while Mr T had a zucchini frittata. Then came a creamy risotto dish, perfectly cooked, nicely moistened, cooked in red wine, with rosemary and Taleggio cheese, the latter still visible and just beginning to melt. Sadly there is no photo, but if there were, it wouldn’t look great- just a pile of wet white rice on a plain plate. And yet it tasted sensational. The bread supply was generous. A fairly ordinary chocolate mousse followed. This didn’t detract from the overall delight of the meal and the venue: I have come to expect unimaginative desserts in Italy and should remember not to order them, unless there’s a visible nonna on site who may have just baked a homely torta of fruit or nuts.

I have worked on recreating that lovely risotto dish and will continue to refine it. The Cernobbio version retained a lovely creamy white appearance and perhaps used less red wine and a little less rosemary than my version. Every time I make this, my heart flies back to Lake Como. Below is a version but feel free to play with it to suit your palate.

Risotto, red wine, rosemary and taleggio. Large serving for two or three. Ugly but good.

Ingredients for two smallish serves. Adjust quantities to suit your appetite, bearing in mind that it’s a rich dish and best served with a simple salad before or afterwards.

  • 150 g Carnaroli rice
  • 1/2 red onion, very finely chopped
  • 150 ml good quality red wine ( the one you’ve opened for dinner is best)
  • 350 – 400 ml vegetable stock ( it’s always better to have extra on hand)
  • 20 gr butter
  • 40 gr or more of Taleggio ( substitute Stracchino if on a budget)
  • 40 gr grated Parmigiano Reggiano or Grana Padano or more to taste
  • a teaspoon of very finely chopped fresh rosemary
  • salt and white pepper to season

Method

In a small saucepan, warm the vegetable stock and keep it on a low heat. In a separate cast iron casserole, choosing a suitable size for the measure of rice you are using, add the butter and saute the onion gently until soft and pale golden. Add the rice and toast for a minute or two. Then add the red wine and heat, stirring, until it is fully absorbed. From this point, begin to add a ladle of hot stock to the rice and stir through on low to medium heat. Don’t stir too vigorously: an occasional stir is enough. Once that stock is fully absorbed, continue to add more ladles, one at a time, for around 20 – 25 minutes, as per the usual method of risotto making. The only way to judge the readiness of the rice is by biting it. If the centre is still hard, continue cooking. Once ready, turn off the heat, and add the rosemary and Parmigiano and half the Taleggio chopped into smallish chinks. Stir through then cover with a lid and leave to steam for a few minutes. When ready to serve, add the remaining Taleggio to the dish.

Simple Seafood Paella

Paella is an uncomplicated and quick dish to prepare at home, once you get to know the basic ingredients and keep a few of these on hand. When a bag of mussels and a handful of fresh green prawns saunters my way, I now turn to Paella. It’s easier than risotto, with no stirring involved, and can be made on a regular gas stove.

In the pantry you will need these standbys:

  • a small container of commercial pre-made fish stock, or home-made frozen stock or one vegetable stock cube
  • some good quality Spanish smoked pimenton ( paprika )
  • Calasparra rice- no other rice will do for this dish
  • saffron strands

Some other desirable ingredients for a seafood paella for two people are:

  • some left over calamari wings, stashed in the freezer*
  • some green prawns, three large or 6 small per person
  • mussels, around 6 per person
  • one green or red capsicum, sliced
  • one finely sliced onion
  • one finely chopped garlic
  • good olive oil
  • parsley

You don’t need a special paella pan for a no fuss paella for two people. I use a heavy based frying 20-25 cm frying pan with a glass lid. My other paella pans come out and are used for bigger gatherings. Just double or triple the quantities for your larger pans and seek out an even and very large heat source.

Add the sliced strips of calamari wing and smoked pimento to the pan along with 2 1/2cups of stock.

Add extra water if needed, or use a stock cube. Cover the pan with a suitably fitting glass lid and cook on low to medium heat for 15- 20 minutes. Relax.

When the rice has swelled and most of the liquid has been absorbed, add the mussels to the pan, and cover. After another five minutes, add the prawns and cover until cooked. Check that liquid has been absorbed and the dish should now be ready to serve.

After preparing fresh calamari for another meal, stash the wings in the freezer for occasions like this. They defrost very quickly and add depth of flavour to the rice as it cooks. I have also used a small fillet of Dory in the same way.  I learnt this trick from Sandra at Please Pass the Recipe and the habit has stuck.

Home Again Recipes. Pumpkin and Haloumi Salad and Nasi Goreng Ikan

After six weeks of travelling, it takes a while to adjust to the rhythm of cooking your own meals, let alone all those other tedious tasks, such as bed making and house cleaning. Where are those fairies who come and clean up? Home cooking routines return more quickly; after all, we do need to eat at least twice a day. After purchasing one packet of inedible bread, the sourdough starter was revived and our breads are back on the table, using a variation of this recipe. I dehydrated my sourdough starter (Celia’s method can be found here) back in July, but then discovered that one very kind sir kept my fridge dwelling starter, Sorella, alive, replenishing her each week while visiting to feed my other animals.

Home made food tastes glorious, modest yet satisfying and comforting, filling that yearning for more olive oil and cheese that is missing in most Asian diets. And then there’s the wine- beautiful Australian and New Zealand wines at an affordable price. The Spring garden is neglected, with only leeks, celery and herbs ready for picking, while our hens keep pumping out eggs, now far too many for our own needs. It is with these modest supplies and a well stocked pantry of basics ( lentils, rice, pasta, dried beans, olive oil, cheese) that we can eat well for very little.

My budget dishes this week included a Flamiche, a leek based quiche, enabling me to make a dent in the leek and egg bounty.  A leek and potato Vichyssoise for the export market (my mother), a lentil shepherd’s pie with Kumara mash, (my $1 per person comfort food), a salad of baked pumpkin with haloumi, the pumpkins left over from last Autumn’s harvest screaming to be used. Haloumi can be picked up in 1 kilo jars at Bas foods for around $10, another pantry/fridge essential for a quick salad. A purchase of 400 grs of Dory fish fillets was stretched over three meals: 200 gr went into a Vietnamese caramel claypot, (still trying to perfect this method of cooking), 100 gr accompanied some fresh mussels in a Pasta Marinara, and the last 100gr added more flavour to a Balinese nasi goreng ikan.

  • a generous chunk of Kent pumpkin, cut into 5 cm cubes
  • haloumi cheese
  • olive oil
  • salad leaves
  • 1 small cucumber
  • EV olive oil
  • Balsamic vinegar
  • salt and pepper
  1. Toss the pumpkin cubes in a little olive oil, season, then bake for around 20 minutes, stirring or turning over once during cooking.  I often bake extra to stash in the fridge for a pumpkin risotto or a pumpkin and caramelised onion pasta or topping for a foccaccia. Cool the pumpkin.
  2. Cut the Haloumi into strips and fry in olive oil until golden on both sides.
  3. Refresh chosen salad leaves and dry.  Cut the cucumber into long thin edges. Toss the leaves and cucumber in a bowl with salt flakes, a little olive oil and balsamic vinegar.
  4. Plate the leaves, cover with baked pumpkin cubes, and haloumi strips. Add ground pepper and another drizzle of oil.

Nasi Goreng Ikan ( Fried rice with fish, Indonesian style)

I became quite fond of this simple dish and ordered it often in a little Balinese Warung by the sea. My version includes some sliced fresh turmeric, as I believe all the healthy hype surrounding this little tuber, despite my general cynicism regarding supposed ‘superfoods’. The Balinese always colour their seafood nasi with red, simply using tomato ketchup from a bottle. I used some bottled tomato passata. The choice is yours- use what’s on hand.

Nasi Goreng Ikan Recipe- serves 2-3.

Ingredients

  • left over steamed white rice, cooled. (one cup of uncooked rice will make a large nasi goreng for two or three)
  • a little neutral flavoured oil, not olive oil
  • one fish fillet (100g or so) of boneless fish, for example Dory, chopped into small 2 cm chunks.
  • 2 finely chopped garlic cloves
  • 2 small purple shallots, chopped.
  • a small finger of fresh turmeric, scrubbed, finely sliced or grated
  • a small knob of ginger, finely chopped or grated
  • 2 small kaffir lime leaves, centre vein removed, shredded
  • 1/2 red capsicum, finely sliced or 1/2 cup grated carrot
  • 1 small birds eye chilli, finely sliced (optional)
  •  some greens, for example, 1 cup of finely shredded cabbage or wombok
  • freshly ground black pepper
  • 1-2 Tbs tomato passata or tomato ketchup
  • 1 Tbs  ketchap manis
  • lime wedges to serve
  1. Heat the wok on a strong, high gas flame, add  two or so dessertspoons of oil. When the oil is hot, add the aromatics- garlic, ginger, shallot, turmeric, chilli, and kaffir leaves. Stir and toss for 30 seconds.
  2. Add the fish, toss about until opaque, then add the capsicum and cabbage.
  3. Add the rice, breaking up large clumps with your hands, then stir fry the rice through the vegetables, tossing well as you go and colouring all the rice.
  4. Add the sauces, toss further, then season with pepper.
  5. Serve with lime wedges.

Keralan Lemon Rice

The travel brochures in Kerala refer to their State as “God’s own Country” and I have to agree. Bordered on one side by the Malabar Coast, there are many spots along that stretch of sea to while away the hours, Varkala being the most famous. The breeze blows gently from the Arabian sea, the people are friendly, it is the home of Ayurvedic medicine, the food is sensational and the fertile jungle, reaching up into the tea gardens at Munnar, provide the world with the spices we love- cardamom, vanilla, black pepper, along with other goods such as coffee, tea, cashews, rubber and coconut. Like most folk who visit that State in India, we arranged to spend two days travelling on a rice barge through the backwaters,  a ‘network of  interconnected canals, rivers, lakes and inlets, a labyrinthine system formed by more than 900 km of waterways.’ Kettuvallums, old restored rice barges, are houseboats which travel very slowly around the tranquil backwaters near Alleppey (Alappuzha), passing colourful villages, fertile agricultural scenery and larger lakes. It is easy enough to organise your trip once you are in Alappuzha. There are many agencies around the town or be guided by the recommendation of your guest house owner.

Our houseboat tour for two included all meals, a comfortable bedroom with en suite, two living areas, one with a dining table, the other, a deck with two comfortable cane chairs to watch the world go by. You may need to do some serious exercise after the trip as the meals are generous. We enjoyed a mostly vegetarian diet with the occasional fish when available. The meals included rice, chappatis or puri, four curries and raita, and fried river fish. The cook, a young man trained to work in hotel restaurants, would negotiate a fish purchase along the way by popping into backwater village markets for fresh supplies. On one occasion, he came back with some huge fresh water marron, which he cleaned and then rubbed with a wet masala mix to marinate for some hours before frying. I loved watching him prepare our meals.

Lemon rice appears on the menu often in Kerala. It makes a perfect side dish to fried fish or an egg curry. It is  also a very soothing dish: there are never any leftovers.

Lemon Rice

  • 1 tablespoon coconut oil
  • 1 teaspoon brown mustard seeds
  • ½ teaspoon cumin seeds
  • 2 teaspoons blanched cashews, coarsely chopped
  • 2 teaspoons channa dal
  • 3 cups (330g ) cooked rice
  • 1 teaspoon minced ginger
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • 1 tablespoon chopped coriander leaves
  • 2 teaspoons or more of lemon juice
  • 1/2 teaspoon asafoetida

Heat the oil in a large frying pan over a medium heat, then add the mustard and cumin seeds. When they start to splutter, add the cashews and channa dal, and stir over heat to roast. When the nuts begin to colour, add the hot rice, ginger, turmeric, salt and freshly chopped coriander. Stir thoroughly to combine.

Sprinkle with the lemon juice and asafoetida to serve.

Notes.  The success of this dish relies very much on all the little crunchy bits which are roasted at the beginning. If you don’t have channa dal, use masoor or mung dal instead. Broken raw cashews are often found in Middle Eastern stores. Use long grain or medium grain rice, not basmati.

Risotto all’Onda for Carla.

Over lunch yesterday, I came across a new Italian expression, Risotto All’Onda. At the time, I was serving a classic Marcella Hazan rice soup, or rather a minestra which, to be truthful, was more like a wet risotto. A soup or a wet risotto, I commented, knowing that this distinction is not particularly relevant to those from the Veneto region in Italy.  Alberto, a visitor from Lombardy in Italy, then related the story of his prozia, or great-aunt, who uses her brodo (stock) rather liberally when making risotto, earning the comment ‘all’onda!!!’ in a disparaging way from her husband, who had a preference for a drier risotto. Drier risotto is the preferred style in Lombardy, Piedmont and Emilia-Romagna. It has a stickier texture and can be plated rather than served in a bowl. Alberto’s family continues to describe a wet risotto in this way, to recall their late prozio’s reaction to wet risotto, risotto’all’onda!!

As it turns out, risotto all’ onda is a common enough term for Venetian style risotto, ‘all’onda‘ meaning that the finished product should ripple like the ocean current, yet maintain its classically creamy consistency. It should be liquid enough to make it pourable. Carnaroli or Vialone Nano rice are the preferred varieties for a wet style risotto: also using smaller pan when cooking helps to maintain the moisture.

The following recipe is an adaptation of Marcella Hazan’s Minestra di Sedano e Riso or rice and celery soup, from the Classic Italian Cookbook, 1980. I have replaced the celery with zucchini, given the continuing summer glut. The method of this soup is rather interesting, with half the zucchini pureed, adding a lovely green cremoso texture to this minestra/soup/risotto.

Minestra di Zucchini e Riso- Zucchini and Rice Soup.

Ingredients

  • 2-3 small zucchini, diced
  • 6 tablespoons EV Olive Oil
  • half small onion, finely chopped
  • 25 g butter
  • 200g rice, preferably Carnaroli or Vialone Nano
  • 500 ml of stock or one stock cube dissolved in the same quantity of water
  • 3 Tablespoons freshly grated Parmesan cheese
  • 2 tablespoons finely chopped parsley.

Method

  1. Wash the zucchini, finely dice,. Put the zucchini, olive oil and salt in a heavy base saucepan and add enough water to cover. Bring to a steady simmer, cover, and cook until the zucchini is tender. Turn off the heat.
  2. Put the chopped onion in a heavy based saucepan with the butter and saute over medium heat until pale gold but not browned.
  3. Add half the zucchini to the saucepan with the onion, using a slotted spoon. Saute for two or three minutes, stirring, the add the rice and stir it until well coated. Add all the broth.
  4. Puree the rest of the zucchini, including all its cooking liquid, with a stick blender. Add this puree to the saucepan containing the rice.
  5. Bring to a steady simmer, cover, and cook until the rice is tender but firm to the bite, around 15- 20 minutes. Watch and check that it doesn’t catch as some rice absorbs stock too quickly- you may need to add a little more to make it ‘all’onda’.
  6. Stir in the grated cheese, turn off the heat, add the parsley and mix. Serve at once! This dish should be eaten immediately before it turns too soft. Make it only just before you are ready to eat!

Rajma Curry and Back to the Budget.

I’ve indulged in a few wanton and delicious splurges lately. One involved a long lunch at a nearby restaurant. Mr Tranquillo and I, tired of picking, prepping and pickling produce, agreed it was time someone else cooked our lunch. We chose Mercer’s Restaurant in Eltham, not only because of it’s ‘hat’ awards over the years, but also because the menu looked like it might please my very fastidious palate. The degustation menu for two looked perfect, and at $90 each, a steal. The whole experience was delightful and exquisite: the setting, elegant with soft lighting, the staff discreet but well-informed, the food exceptional, cheffy but very good. No photos were taken. I was rather pleased to discover a vacuum in my camera’s memory card slot. It was a sign not to spoil a heavenly experience with the tedious, pedestrian business of the taking of photos. Enough said. Just go to Mercer’s when you need to be spoilt.

As an antidote to this splurge, and in keeping with my resolution of the New Year, I now return to my $1.00 per head feasts with this Rajma Masala recipe. The Indian ( Hindi) word for red kidney bean sounds more exotic than the English, the latter with allusions to tie-dyed hippydom. This is a classic Indian vegetarian curry.  Break out the Bollywood and dance as you prepare your simple feast. OLYMPUS DIGITAL CAMERARajma Curry for 2 (or many as part of a larger banquet)

Ingredients

  • 200 gr red kidney beans/rajma
  • 1 large onion, finely chopped
  • 2 Tablespoons vegetable oil
  • 2 medium to large tomatoes, chopped
  • 3-4 garlic cloves + 1 inch ginger, peeled and chopped + 1 green chilli, crushed to a paste in a mortar and pestle ( or small blender)
  • 1 tsp coriander powder
  • ¼ to ½ tsp red chili powder
  • ¼ tsp turmeric powder
  • a pinch of asafoetida
  • ¼ tsp to ½ tsp garam masala powder
  • 2 cups of stock or water
  • 2 to 3 tbsp cream
  • salt

  1.  Rinse and soak the beans in enough water overnight or for 8 hours. The next day, discard the water and rinse the beans again in fresh water and cook in a pressure cooker, or on the stove till soft and cooked.
  2. Heat oil in a large pot or wok. Add cumin seeds and let them crackle and brown a little, then add the onions and cook gently until soft and caramelised
  3.  Add the ginger/garlic/chili paste. Stir and saute for 5-10 seconds on low heat.
  4. Add the chopped tomatoes. Saute for 2-3 minutes till soft.
  5. Add all the spice powders- turmeric powder, red chilli powder, coriander powder, asafoetida and garam masala powder and stir through until the oil separates from the masala.
  6.  Add the drained beans to the mixture. stir through. You may decide not to add them all.
  7. Add 1+ 1/2 cups or stock, water or bean cooking liquid to the mixture and add salt to taste.
  8.  Simmer uncovered for 10-12 minutes or more till the curry thickens slightly.
  9. Mash around a third of the bean mixture in a mortar and pestle and add back to the mixture to thicken the curry.
  10.  When the curry has thickened, add the cream and stir through. Check seasoning.

  • small cucumber, peeled , seeded, diced.
  • 1 cup plain yoghurt
  • small handful chopped coriander
  • pinch salt
  • 1/2 teaspoon each of cumin seeds and mustard seeds
  • a little plain oil.

Mix the yoghurt and cucumber together, add the chopped coriander and a little salt. Heat the oil in a small frying pan, add the seeds till they pop and brown and add to the yoghurt mixture, Return mixture to fridge to cool further. Make this ahead of time. OLYMPUS DIGITAL CAMERA

The Not So Humble Broad Bean Risotto

OLYMPUS DIGITAL CAMERABroad beans ( Fave) are often associated with poverty and simple, peasant eating. They grow prolifically and produce a bounty of fresh beans, with plenty to stash in the freezer or dry. The Italians who migrated to Australia in the 1950s and 60s, with “Courage in their Cases,” also had a few dried fave beans sown into the lining, a memento of home and a good luck seed.

OLYMPUS DIGITAL CAMERA When married with quality risotto rice such as Vialone Nano or Carnaroli rice, as well as a small slab of hot smoked salmon or trout, the humble broad bean enters the realms of rich man’s food, la cucina borghese. You decide: keep it cheap and leave out the hot smoked fish and use a cheaper everyday arborio rice, or lash out!

Ingredients ( two as a main, 4 as a small entrée)

  • 1 cup shelled broad beans/fave
  • 1  small onion, finely chopped
  • 1 cup vialone nano rice ( or other arborio)
  • 30 gr butter
  • 1 Tbles EV olive oil
  • 1/2 cup white wine
  • salt/pepper
  • 3 cups vegetable stock, simmering on the stove
  • 75 gr hot smoked salmon or trout, torn in small pieces
  • fresh herbs, such as marjoram, oregano or dill
  • Grana Padano or Reggiano Parmigiano, grated, a generous amount.

Method

  1. Firstly, boil the shelled broad beans for 3 minutes, drain, then peel by simply squeezing the outer shell, and sliding out the tender, bright green inner bean. Even better, get some little person to help.
  2.  Heat 20 gr of butter and the olive oil in a heavy base pot, add the chopped onion and cook on low until the onion has softened and is golden in colour. Add the rice and stir about until the rice becomes covered and opaque. Turn up the heat to medium.  Add the wine, and stir until it bubbles away. Then add a ladle full of stock, stirring as you go, until the liquid has been absorbed. Continue in this way until all the stock has been used, around 20 minutes or so.  In the last few minutes of this process, just as you add your last stock, add the beans and stir through.

  3. Gently stir through the salmon and the chopped herbs, then fare il mantecare. This is an essential step to add creaminess and finish to the risotto. Add the remaining knob of butter and a generous amount  of grated parmesan ( 1/2 cup)  to the rice, stir through to ‘cream’ the rice, then cover the pot, off the heat, and leave for a couple of minutes.OLYMPUS DIGITAL CAMERAServe on a large round or oval platter, with more parmesan, and serve from the outside, in a circular fashion, which maintains the heat in the centre.

The Mad Tabouleh Lady

You may have heard of Kevin McCloud‘s drinking game. There are a few versions but a simplified version goes like this.  Whenever Kevin mentions the following words in his programme, Grand Designs,  bespoke, artisan, the build, integrity, take a big sip. Extra drinking points are acquired if he says it in French or Italian. In the world of food, I propose a board game: the rules are similar, you score a drink when you read or hear the following: artisan, (the Italian artigianale deserves two drinks), quinoa, kale, ancient grains, and gluten-free. There are probably more buzz words out there and I hope someone will let me know so my bored, no board game can expand.  I have nothing against these foods per se, but I am tiring of their takeover. Normal, sensible eating is now dominated by these faddish foods. Why has barley become an ancient grain? Or brown rice? Farro has been used in Northern Italy forever. As for quinoa, it’s overrated and tasteless and has an unpleasant texture.  Kale? A common enough plant in my veggie garden which enhances a good minestrone or risotto. But kale chips, kale smoothies? Kale and eggs for breakfast? National Kale Day? Gluten- free products are important for celiacs, but now every normal non gluten free product carries this selling tag: gluten-free jam, gluten-free eggs, gluten- free tomatoes – the marketing departments are having a field day with labelling for the naive and gullible.

Nothing like a good rant after cleaning out the pantry – an onerous and tedious job, involving small flying creatures and much waste.  Whilst there, I found a packet of unopened “Ancient Grains” bought on a whim at some stage  The packet is labelled, in capitals, ‘gluten- free rice plus‘ and contains a ‘powerful blend of rice, nutritional ancient grains and seeds which includes brown rice long grain, white basmati, red basmati, buckwheat, white quinoa, and millet, and black sesame seeds. Putting aside my cynical self, I whipped up a tasty tabouleh, adapting the recipe from the back of the packet. I served it with a little side of chopped boiled eggs with Dukkah. All Gluten-free, and not like chook food at all!!

Powerful Tabouleh

  • Cook one cup grains with two cups of vegetable stock ( or water) using the absorption method. ( 15 minutes) ( I used a good home-made stock as these grains need help with flavour)
  • 6 chopped spring onions, including lots of the green part
  • 1 cup or more of Italian parsley, chopped
  • a handful of mint, chopped
  • a handful of currants
  • some small tomatoes, chopped, preferably ‘heirloom’ ( whoops, another buzz word ).
  • 2 -4 cloves of garlic chopped
  • 1/3 cup extra virgin olive oil
  • 1 Tbls lemon juice
  • 1/2 teas Dijon mustard
  • salt/pepper.

When the rice blend has cooled, add the other ingredients to the bowl, and let them sit for a bit to absorb the dressing.

The original recipe called for far too much parsley and used dried cranberries, which I find too sweet.

Serves two as a big lunch or a side salad for four or more.

Verdict? I liked it more than a regular Tabouleh and was pleasantly surprised.
