Eggplant rolls, Molto Siciliano.

Same Same but Different is a wonderful Balinese-English expression that was devised many years ago by a streetwise Balinese salesperson. It spread quickly among the shopkeepers and Mr T still wears his 10 year old Same Same But Different T shirt which always cracks me up. Same same on the front, But Different on the back. I love this expression: it captures the humour and inventiveness of the Balinese people and their ingenuity at devising new ways to lure a few dollars from the mindless tourist.

I often think about this crazy expression when imagining ways to use eggplants. Our usual standby dish is eggplant parmigiana, that well loved classic with an interesting culinary history. ¹ Involtini di Melanzane, or eggplant rolls, require very similar ingredients to the former classic, and yet the dish seems much lighter and more interesting. Same same but different.

The following recipe is by Karen Martini. The quick process of flouring and egging the eggplant slices before frying prevents them from absorbing too much olive oil, resulting in a much lighter dish. The original recipe uses a simple tomato passata for the sauce. I found this too bland. A more flavoursome dish results from making a garlic and oregano laced tomato ragù, but if you are in a hurry, go for the bottled passata.

Melanzane Involtini. – eggplant rolls ( serves 4 as a main, 6 as a starter)

  • 3 eggs
  • 2 large eggplants
  • 75g plain flour
  • olive oil, for frying
  • 250g ricotta
  • salt and freshly ground black pepper
  • 3 tablespoons currants, soaked in red-wine vinegar for 5 minutes, then drained
  • 40g grated parmesan
  • 200g mozzarella, cut into 1cm thick sticks ( or grated)
  • extra virgin olive oil
  • 500ml tomato passata ( 2 cups) ( see notes above)
  • 3 sprigs flat-leaf parsley
  • 50g pine nuts
  • 3 tablespoons chunky fresh breadcrumbs

In a small bowl, lightly beat 2 large eggs with 1 tablespoon of water. Peel the eggplants to create a striped effect, then cut lengthways into 1 cm thick slices. Dust the eggplant slices with flour, then dip into egg wash. Heat olive oil in a large heavy  based frying pan over high heat. Cook eggplant slices for 1-2 minutes on each side until golden. Drain well on kitchen paper.

In a medium bowl, mix the ricotta with remaining egg. Season with salt and pepper. add the drained currants and half the parmesan and stir to combine. Spoon about 1 tablespoon of this mixture onto each eggplant slice. Add a little mozzarella and roll up tightly.

Preheat oven to 170ºC. Brush the base of a large ovenproof dish with 1 tablespoon of EV olive oil. Spread half the tomato passata or ragù in base of dish. Place the eggplant rolls on the sauce, seam side down, so they don’t unroll. Drizzle with remaining oil, spoon over the remaining sauce and sprinkle with parmesan.

Combine the chopped parsley, pine nuts and breadcrumbs in  a small bowl. Sprinkle over the top. Cover with foil and bake for 25 minutes. Remove foil and bake for a further 10 minutes or until cheese is melted. and top golden.

Gnocchetti Sardi. Pasta of the week number 2.

The pasta variety, Gnocchetti Sardi, or little Sardinian gnocchi, is a small ridged pasta around two centimetres long. It’s a great shape to use when you want an amalgam of pasta, vegetables and protein, blending nicely into one comforting bowl.

Malloreddus, the Sardinian name for these little gnocchi shapes, means small calves. They have been prepared since ancient times, often for festivals and weddings and are usually combined with sausage, or meat and saffron. Traditionally they were made from semolina flour and water and hand rolled into long strips of dough, then shaped into cubes and crushed against a straw basket (a ciuliri or straw sieve) to make the textured stripes. They were meant to resemble vitellini, ( the Italian translation of Malloreddus ) meaning small calves. As you can see in the photo above, they do look a lot like gnocchi, the striped pattern designed to hold a good sauce

This vegetarian dish combines shredded silverbeet (chard) with a little gorgonzola dolce, thin cream and toasted walnuts to create a wholesome dish. The recipe is deliberately imprecise. Combine the ingredients listed to suit your taste, keeping a fine balance as you go. This dish is an Almost Italian original and one inspired by the return of chard to my garden.

Gnocchetti Sardi con Bietola, Gorgonzola e Noci/ Sardinian gnocchi with Silverbeet, Gorgonzola and Walnuts

Ingredients in sequence of use.

  • 100 gr pasta Gnocchetti Sardi per person
  • salt
  • EV olive oil
  • one garlic clove
  • some small silverbeet leaves, finely shredded
  • a small chunk of gorgonzola dolce, {DOP is you can find it/flash but so good}
  • some fresh walnuts, toasted in oven, then chopped into small pieces.
  • pouring cream
  • ground black pepper
  • Parmigiano cheese shavings for serving, optional.

Cook the pasta in a large pot of boiling salted water until al dente. Meanwhile in a wide and deep frying pan, heat the olive oil and gently saute the garlic clove. Remove the clove after it has flavoured the oil. Add the shredded silverbeet and toss around for a minute or so until wilted. Tear the gorgonzola into small clumps and add to the pan. As it begins to melt, add some pouring cream to the pan and a few grinds of black pepper. Don’t swamp the dish with cream. Reduce the cream and cheese mixture a little. When the pasta is ready, drain it then add to the pan, tossing through the sauce. Add the nuts, toss once more. Serve with shaved parmigiano.

About draining pasta. I rarely drain pasta in a colander over a sink, preferring to keep a small amount of residual pasta water to add to the secondary cooking which happens in a deep wide frying pan. With long pasta shapes, I lift them from the boiling pot to the pan with tongs or a claw pasta lifter: with short shapes I scoop them out with a wire sieve and shake a little. In this way, a small amount of the starchy, salty water helps to loosen the sauce.

Risotto Invernale with Radicchio

According to market research, many people prefer recipes that take 27 minutes or less to make.¹ I think my patience level runs very close to this figure. A comforting risotto just fits it into this time frame, so long as you prep most of the ingredients as you go, which to me makes sense; it gives you something else to do while you are stuck beside that pan for 20 minutes or more, stirring, watching, and knocking back the wine you opened to make it.

Risotto is my favourite winter food, especially when the garden provides winter loving treasure such as Cavolo Nero, the dark green Tuscan king of kale, and ruby coloured radicchio, a bitter leafed vegetable that adds colour and crunch to winter meals. As the morning temperatures drop below zero and the ground turns crunchy with white frost, these two plants come into their own. They love a cold snap.

The other ingredients are fridge and pantry staples. Butter, olive oil, onion, good Italian rice and Parmigiano Grano Padano. Which rice is best for this task? I generally find that the cheaper brands of arborio produce a less appetising result. Although I do enjoy frugality, some cheaper ingredients make for false economy. One kilo of good quality Carnaroli or Vialone Nano rice goes a long way.

Risotto Invernale con Radicchio. Winter Radicchio Risotto. A step by step recipe. Ingredients for two large serves.

  • 1 cup good quality risotto rice ( Carnaroli or Vialone Nano)
  • 1 tablespoon EV olive oil
  • 1 tablespoon butter
  • 1/2 small red onion, very finely chopped
  • 1/2 small carrot, very finely chopped( optional)
  • vegetable stock, homemade or made with a stock cube, around 3 cups or more
  • dry white wine such as Pinot Grigio
  • a small head of radicchio, finely sliced
  • black pepper
  • grated parmesan cheese, Reggiano or Grano Padano
  • more butter, a good knob

Chop half an onion into tiny dice and add it to a wide pan with a generous slurp of olive oil and butter. Although a diced carrot isn’t generally added to the base of a risotto, a little carrot adds some sweet notes, since radicchio can be quite bitter. As the onion gently cooks, bring a pot of vegetable stock to the boil and let it simmer next to your risotto pan.  I like to have more stock than most recipes suggest, just in case it’s needed. This can be either home-made or made from a stock cube. Open the white wine. Measure the rice. Cut a small head of radicchio into fine strips. Find a small butt of Parmesan cheese and ask someone to finely grate it.

Add the rice. One cup of rice makes a generous meal for two people. Adjust the recipe for more people. Stir the rice to coat the grains- the rice will turn opaque – then add a big slurp of white wine, ( at least a quarter of a cup, though I  never measure it)  and stir well. At this point, you are allowed to begin drinking, to fortify you for the task ahead.

Step two, add the wine.

Once the wine has evaporated, begin adding the hot stock, one ladle full at a time. There’s no need to stir too vigorously or continually. The heat should be on medium to high, though I generally adjust this up and down as I go. When the stock evaporates, add another ladle, and continue this activity for around 20 minutes or so.

Add the radicchio and the last ladle of stock and stir vigorously for around 5 minutes. The leaves will soften and the dish will become more creamy. Add a grinding of pepper.

The final and most important step. Add a good amount of parmesan and butter, la mantecatura, then cover and turn off the heat. Let it sit for 2 minutes.

Take off the lid and stir through the butter and cheese vigorously. The dish will become creamy and smooth. Shake the pan backwards and forwards to observe a wave movement ( all’onda)  in the mixture. If you think that the risotto is a little dry, add a small amount of hot stock and stir through well. You are aiming for a soft, creamy and well united dish that has a little wetness.

Serve with more parmesan.

Take Three Eggs

Eggs are always in season around here, though the number increases dramatically during Spring. I’m now gathering around 15 eggs per day, requiring some strategic marketing as well as more baking. My grandmother, with regard to the economy of keeping chooks, used to say, ‘put in a shilling and get back sixpence’, and I often think this is true. Fresh egg pasta is one simple way to reduce the stash.

Take three eggs and crack them into a bowl over 300 gr of plain white flour, do a little mixing, some kneading, some waiting, followed by some cutting, and within one hour, you have enough pasta to feed a crowd. Of all the transformations that happen in my kitchen, pasta making is high up on the list, running a close second to the mystical and semi- religious transfiguration of flour, salt and water into bread.

I often use a softer flour for pasta making, such as an Italian doppio zero ’00’ flour but really, any plain white flour is just as good. After measuring the flour, add it to a bowl, then crack 3 large eggs into the centre and mix well. There is no need to make a little volcano of flour on a flat bench with eggs cracked into its crater. Volcanoes are messy things and explode in unexpected ways. Use a bowl. I usually have an extra egg yolk on hand, in case more moisture is needed to bring the dough together. I don’t use water, salt or oil. Just flour and eggs! After the dough comes together, knead well on a floured bench for around 10 minutes. As you knead, the dough will turn silky and more elastic.

I often cheat, and who doesn’t, by mixing the dough in the food processor, then when it forms a ball, I remove it to knead on the bench. There’s no getting out of the kneading: it is the only tedious part of pasta making so turn the radio on. (Did I hear you sing that old song, ‘who listens to the radio, that’s what I’d like to know.’? Has Jon Faine become a shock jock? Turn that man off and play some Puccini instead.)

Take the ball of kneaded dough and flatten into a disc, then wrap it in plastic and leave it for at least half an hour to relax and further hydrate. It won’t hurt to let the dough rest for longer so you can go out at this point, saving the fun part for later.

Hand cranked pasta machines: a basic and economical kitchen tool.

Attach your pasta machine to the bench. Flour up some cutting boards and tea towels. Cut one sixth of the pasta dough and feed through the machine at its widest setting. Fold it in half then feed through again. This makes the pasta sheet wider. Then continue to feed the pasta through the rollers, lower the setting cogs down a notch each time, stopping at number two. This part of pasta making is best shared with a helper.

Now you get to choose the shapes you want. My last week’s batch produced enough pasta squares for two trays of cannelloni, some cenci or rags which I love to add to soup, and a pile of cappellini, a finely cut spaghetti. Three eggs. Three hundred grams of flour. Three meals. It really is much simpler than my long winded description and the results are worth the effort.

I followed Stefano de Pieri’s recipe for Spinach and Ricotta Cannelloni, from his Modern Italian Food, 2004, which is reproduced here, unchanged. Sometimes it’s good to follow a recipe for a dish that you think you know well. You might learn some new tricks. I always use a heat diffuser when making besciamella or white sauce as it has a tendency to catch. And you will need to cut around 20 squares from your fresh pasta batch for this amount of filling.

Ingredients

300g spinach
1 tablespoon butter
500g fresh ricotta
2 eggs
100g parmigiano reggiano, grated, plus an extra handful
salt and pepper
200g  home made egg pasta

Bechamel Sauce

150g unsalted butter
100g plain flour
1.5 litres hot milk
freshly grated nutmeg

Method

  1. To make the béchamel sauce, melt the butter and mix with the flour. Cook a little but without browning. Stir in the milk, bit by bit, mixing with a wooden spoon. Initially the mixture will be like a gluggy lump but as you add the milk it will break down more and more. Cook it gently for 20 minutes or more, taking care that it does not stick to the bottom of the pan. Add nutmeg to taste. This recipe should yield a fairly soft sauce, which is what we want. If it is too thick add more milk or water. If you think you have some lumps in it, pass it through a fine sieve and everything will be all right.
  2. Bring a large pot of salted water to the boil and blanch the spinach, drain and squeeze dry. (I far prefer using proper bunches of spinach, rather than ready-trimmed little spinach leaves.) Roughly chop the spinach.
  3. Heat the butter in a large pan and briefly sauté the spinach. In a separate bowl, combine the ricotta, eggs, grated cheese, salt and pepper. Stir in the spinach and mix well.
  4. Roll the pasta through the last setting on your pasta machine and cut the sheets into sections about 10 cm wide. Cook the pasta sheets in plenty of boiling salted water, then plunge into a bowl of cold water. When cold, place on a tea towel to dry.
  5. When you are ready to cook the cannelloni, preheat the oven to 180°C. Spread a third of the béchamel sauce over the bottom of a baking dish. Lay the pasta sheets on a work surface and spoon some filling along the centre of each. Roll up to form fat cigars. Arrange the filled cannelloni in the baking dish and spread the remaining béchamel sauce over the top. Sprinkle with the extra cheese and bake for around 15 minutes until the top is bubbling and golden.
  6. If you like, you can introduce a tomato element to this dish. Spoon a few tablespoons of home-made tomato sauce over the béchamel before topping with the extra grated cheese. Don’t overdo the tomato though, as the acid can rather dominate the flavour.

It was in Castellina in Chianti, just north of Siena, in 1993, when I first ate Tagliatelle con Burro e Salvia. I remember the day quite vividly. At the time I was studying Italian at the Scuola di Dante Alighieri per Stranieri for a month and, as school attendance required me to be present only from 8 am to 1 pm, I had the rest of the day, as well as each Sunday, to roam around Siena and Tuscany, often taking the local bus to a small village, followed by a lunch and a stroll. It was on one of these jaunts that I ended up in Castellina in Chianti, and not long after hopping off the bus, I was drawn to a modest ristorante where a big pile of freshly made tagliatelle was laid out on display. I was in like a shot.

Although seemingly a very simple dish, fresh tagliatelle with butter and browned sage leaves does require some hours of preparation. There is no point making this dish with dried pasta or even shop purchased fresh pasta. This is where I get bossy. The pasta must be freshly made up to two hours before. This is why it tastes so good and comforting.

Making pasta at home is an easy process if you have a little time AND a helper. I never make pasta on my own, but when young Daisy Chef is around, what seems like a tedious business becomes a joy. We flour up the benches, get the aprons on and make a load of yellow snakes. She loves to crank that handle and feed the stretched pasta through the wide cutting blades.

First make the pasta.

  • 300 g flour, preferably farina doppio zero, or ’00’ flour
  • 3 large eggs ( around 60 g each)

Make the pasta dough either by hand or in a food processor. I simply place these two ingredients into the food processor and pulse until the dough clumps together. If it doesn’t, have another small beaten egg on hand and add it, bit by bit, until the pasta clumps. Don’t over process it.

Bring the dough together on a lightly floured bench and, without kneading, cover the dough ball in plastic for 20 minutes or so to rest. Unwrap the ball and knead the dough for around 5 minutes, turning and folding, until it is smooth. Wrap again in plastic and leave on the bench to rest for another 30 minutes or more, until you are ready to continue. In summer, this step may involve resting the dough in the fridge, but always bring it back to room temperature before rolling

Flour the bench well. Feed the dough through the pasta machine, twice at each number, from 7 to 5, then once on each number down to number 2. If the dough sheets get sticky along the way, dust them with more flour.

Feed the long sheets through the tagliatelle blade, then place them on a large flour covered tea towel and toss around so that the strands don’t stick together. Cover the pasta with another tea towel until ready to use.

The fun part!

  • Boil up a large pot of water and add ample salt.
  • Cook the pasta until al dente- two minutes is usually enough but this will depend on how long the pasta has been resting.
  • Meanwhile, melt some unsalted butter in a wide frying pan and cook some sage leaves until crisp. Remove. Then add more butter to the pan to melt. Return the sage leaves. The butter is main sauce so be generous, around 40 g for two serves.
  • Drain the tagliatelle and toss through the butter and sage in the pan. Add some freshly ground pepper or nutmeg. Serve with lots of freshly grated grana padano or reggiano parmigiano.

Zucchini Alert. Zucchini Parmigiana

I know what you’re thinking, not another zucchini recipe from Casa Morgana. The zucchini in our garden don’t look like they’re slowing down soon- in fact, they are gaining momentum, so my zucchini repertoire continues to expand. This recipe is based on the famous Melanzane Parmigiana but is made with fresh zucchini instead of eggplant, along with a sauce from their garden team-mate, fresh tomatoes. It is, for me, Italian comfort food at its best, and good when I feel tired. If you don’t have fresh tomatoes, use a large can of tomatoes instead. Start the prep early, given the stages to this homely dish.

Zucchini Parmigiana (Serves 4-6 with salad and a side dish)

Ingredients.

  • one kilo medium-sized zucchini
  • a little olive oil
  • salt and pepper
  • 4-5 garlic cloves, crushed then chopped
  • one kilo of fresh vine ripened tomato
  • herbs, either fresh basil or fried oregano
  • 1-2 tablespoons of tomato paste
  • sliced mozzarella
  • grated grana padano parmigiano cheese.

  1. Choose a kilo of medium-sized zucchini. Cut the ends off and slice them vertically. Don’t cut these too finely as they need to stand up to some intense cooking and hold their shape in the final layering.
  2. Choose a gratin baking dish, either oval or oblong. Butter or oil base and sides.
  3. Grill the sliced zucchini on a stove top ridged griller. When all done, keep aside and season lightly as you go.
  4. Skin the tomatoes, then chop them, removing most of the seed.
  5. Add some olive oil to a saucepan, cook the garlic briefly, then throw in the tomatoes and herbs. Let the sauce simmer and cook down slowly for 30 minutes or more. Add tomato paste to thicken. The sauce should still have some texture, unlike tomato passata.
  6. Begin layering the dish, starting with a little sauce, followed by the zucchini (cut these to size as you go to match your serving dish). Then some mozzarella, then some grated parmesan.
  7. Continue layering in this way until the ingredients are used, finishing with a cheese layer.
  8. Bake in a medium oven, 180c FF for around 20 minutes or until the top has coloured.
  9. Serve with a side dish that will soak up the juices. I chose some orecchiette with a little butter, pepper and fresh basil leaves. Mash is also good or just crusty bread.

Inspired by these beautiful hand edged tea towels brought to Australia by Alberto last summer, this month’s kitchen post is dedicated to Nonna Gina who lives in Carmagnola, Piedmonte, Italia. Hemmed, edged and crocheted meticulously, I stashed them away, thinking that they were just too lovely to use. Now they are out and ready for work. Age, washing and softening will give them a faded patina. And naturally, when I use them, I will think of Gina and life in Piedmonte, a region I am keen to visit. Grazie di cuore, Gina ed Alberto.

The star of any Italian kitchen is a good wedge of Parmigiano cheese, either Grana Padano or Reggiano.  Look for a parmesan that is  ‘stagionato‘, or at least 24 months old, the grainier the better. I have noticed that cheap parmesan cheese is being dumped in Australia from who knows where and sells for $13.00 a kilo. I suspect it will lack ‘graininess’ and taste like soap. Beware of cheap imitations.

Italian jugs are handy, especially when pouring ‘vino da tavola’, ordinary cheap wine. Whenever I use these jugs, I pretend I am sitting in some quaint little trattoria in Urbino, Lucca or Puglia. My fantasy world is well-developed.

One of my favourite Italian white wines is Vernaccia di San Gimignano. It brings back so many memories of the time I spent studying in Siena where I first discovered this wine at the local Upim store. A good one will be crisp and dry with honey notes. Dan Murphy used to stock a range of Vernaccia but now the range is limited to ‘el cheapos’. This one turned up in my favourite Italian supermarket, Gervasi, Sydney road, Brunswick. Cheap and cheerful is the best description for this brand!

The last and only time I went to Costco, I found this big tub of salted capers for a song. I knew there was a reason for trudging around that place for four hours! This big stash is so handy and gives a lift to a salsa verde, pizza or pasta putanesca.

Risotto all’Onda for Carla.

Over lunch yesterday, I came across a new Italian expression, Risotto All’Onda. At the time, I was serving a classic Marcella Hazan rice soup, or rather a minestra which, to be truthful, was more like a wet risotto. A soup or a wet risotto, I commented, knowing that this distinction is not particularly relevant to those from the Veneto region in Italy.  Alberto, a visitor from Lombardy in Italy, then related the story of his prozia, or great-aunt, who uses her brodo (stock) rather liberally when making risotto, earning the comment ‘all’onda!!!’ in a disparaging way from her husband, who had a preference for a drier risotto. Drier risotto is the preferred style in Lombardy, Piedmont and Emilia-Romagna. It has a stickier texture and can be plated rather than served in a bowl. Alberto’s family continues to describe a wet risotto in this way, to recall their late prozio’s reaction to wet risotto, risotto’all’onda!!

As it turns out, risotto all’ onda is a common enough term for Venetian style risotto, ‘all’onda‘ meaning that the finished product should ripple like the ocean current, yet maintain its classically creamy consistency. It should be liquid enough to make it pourable. Carnaroli or Vialone Nano rice are the preferred varieties for a wet style risotto: also using smaller pan when cooking helps to maintain the moisture.

The following recipe is an adaptation of Marcella Hazan’s Minestra di Sedano e Riso or rice and celery soup, from the Classic Italian Cookbook, 1980. I have replaced the celery with zucchini, given the continuing summer glut. The method of this soup is rather interesting, with half the zucchini pureed, adding a lovely green cremoso texture to this minestra/soup/risotto.

Minestra di Zucchini e Riso- Zucchini and Rice Soup.

Ingredients

  • 2-3 small zucchini, diced
  • 6 tablespoons EV Olive Oil
  • half small onion, finely chopped
  • 25 g butter
  • 200g rice, preferably Carnaroli or Vialone Nano
  • 500 ml of stock or one stock cube dissolved in the same quantity of water
  • 3 Tablespoons freshly grated Parmesan cheese
  • 2 tablespoons finely chopped parsley.

Method

  1. Wash the zucchini, finely dice,. Put the zucchini, olive oil and salt in a heavy base saucepan and add enough water to cover. Bring to a steady simmer, cover, and cook until the zucchini is tender. Turn off the heat.
  2. Put the chopped onion in a heavy based saucepan with the butter and saute over medium heat until pale gold but not browned.
  3. Add half the zucchini to the saucepan with the onion, using a slotted spoon. Saute for two or three minutes, stirring, the add the rice and stir it until well coated. Add all the broth.
  4. Puree the rest of the zucchini, including all its cooking liquid, with a stick blender. Add this puree to the saucepan containing the rice.
  5. Bring to a steady simmer, cover, and cook until the rice is tender but firm to the bite, around 15- 20 minutes. Watch and check that it doesn’t catch as some rice absorbs stock too quickly- you may need to add a little more to make it ‘all’onda’.
  6. Stir in the grated cheese, turn off the heat, add the parsley and mix. Serve at once! This dish should be eaten immediately before it turns too soft. Make it only just before you are ready to eat!

Spring on a Plate. Cucina Povera.

OLYMPUS DIGITAL CAMERACucina Povera is my kind of cooking.  Historically, as the name suggests, it is the cuisine of the poor, or rather that of the Italian contadini or peasant class, those who relied on their own home grown seasonal produce and preserves stored in the dispensa, but not much else. It also suggests eating what’s on hand- what is available or in season. As Italy is now a very urban society, this style of cooking can be seen, historically, as rural cooking. It becomes cuisine of the wealthy when many different fresh herbs and vegetables are purchased from farmers’ markets to produce a simple Pasta Primavera.

The garden is your best friend: grow food among your flowers, in your front yard, on your balcony, on the nature strip, in containers. Many tasty and nutritious pasta dishes can be thrown together with a handful of wild rocket, herbs or silverbeet (chard). These things grow like weeds. Along with a few staples from the pantry, such as rice, pasta, lentils and dried beans, anchovies and EV olive oil, cucina povera is a few short steps away.

This week’s pasta ingredients are shown in the photo below.  It assumes you have stashed a few little luxuries in the pantry, such as some very good extra virgin olive oil, and a chunk of parmigiano Grano Padano or Reggiano. The other little splurge for today’s pasta recipe is a box of Farro pasta, in this case by Monograno Felicetti. I picked this up at the Mediterranean Wholesalers in Brunswick, and I must say here, that I receive no kickbacks from either of these companies. Substitute any short pasta you have on hand.

OLYMPUS DIGITAL CAMERAI picked some lovely leggy broccoli shoots, a small radicchio, young broad beans/fave, a few baby kale leaves, some fresh oregano and a big silverbeet/chard leaf. Some of the greens were shredded, hand torn or plucked. The picture also shows two small chunks of cheese- fetta and parmigiana. Some goats cheese, or tiny nuggets of gorgonzola, would make a good substitute. Again, use what cheese you have. Not shown, but always assumed, are a few cloves of garlic, smashed up, salt, and olive oil. I often melt a few anchovy fillets for flavour, but not this time- I wanted a pure Spring taste.

Pasta Primavera

  1. Into a big open pan goes a generous glug of oil and a few cloves of smashed garlic.  After a quick stir on medium heat, in go the garden pickings.OLYMPUS DIGITAL CAMERA
  2. Meanwhile, or even before one plays with the garden greens, a big stockpot of boiling salted water is on the go, then Butta La Pasta, throw in the pasta. I count on 100 grs per adult if the dish is un piatto unico, a one course dish.
  3. Within no time, the leaves wilt and the baby broad beans soften. Time for some salt and a few grinds of pepper.
  4. OLYMPUS DIGITAL CAMERAWhen the farro spirali pasta is ready, scoop out a little pasta water before draining.
  5.  Add the drained pasta to the cooked vegetables and consider whether to add a few tablespoons of the reserved cooking water to loosen the dish, making a garlicky unctuous sauce. Increase the heat and briefly toss again.  Add lots of ground pepper then crumbled fetta. Feel the creative energy of Spring. Then plate.

Serve with a golden lick of good olive oil and some grated parmesan.
