In My Kitchen, October 2021

In hindsight, when it comes to kitchens and cooking, 2020 was the year of sourdough baking. It appears that 2021 is emerging as the year of the picnic. As we tentatively step out of lockdown, picnicking in the great outdoors has become an exciting option. The media, social or otherwise, has jumped on this bandwagon, with food sections dedicated to suitable recipes, and an article in the Guardian about famous picnic paintings. There will, no doubt, be a plethora of picnic cookbooks coming our way. A few packed sandwiches, some cheese, breadstick, purchased dips in plastic tubs and a thermos of tea, does not a picnic make, though it’s a speedy solution to lunch in the park on a road trip. A good picnic is a carefully orchestrated event, where the food excites the palate and the setting is well chosen to give pleasure per se, enticing one to loiter at the table, the fresh air enhancing the flavour of the food, or encouraging a postprandial nap on a rug under a shady tree or on comfy folding chairs. A tartan rug really does add that traditional picnic touch.

When thinking about the accoutrements for a picnic, I am reminded of a wonderful passage by Marlena de Blasi,

“always ready in the boot is a basket fitted with wine glasses, two of our most beautiful ones, plus two Bohemian cut-crystal glasses, napkins made from the unstained parts of a favourite table cloth, a box full of odd silver, a wine screw, a good bottle of red wine – always replaced immediately after consumption – a flask of grappa, a Spanish bone- handled folding knife, a pouch of sea salt, a small blue and white ceramic pepper grinder, plates of various sizes, a tiny plastic bottle of dishwashing liquid, two linen kitchen towels and paper towels”.1

Now that is organised. I would add a blanket and two comfy chairs.

A walk in a park

On our most recent picnic, the day was still and the sun shone gently. A day for hats and sunglasses, but not forcing us under cover. The event was organised by a friend to celebrate a significant birthday. The setting was perfect as only the Australian bush can be on a clement day: the stringybark gums sparkled in that grey green Australian way, like a Piers Bateman painting. The bench seats were draped in tartan rugs, the table covered with a linen cloth, linen napkins, beautiful mismatched champagne flutes, and retro brown stoneware. And there was Moët Chandon on arrival. A warm cheese and artichoke dish was served on sourdough: I had forgotten how good this classic dish is. It was followed by a zucchini tart, and an exciting composed salad. I made the birthday cake, a rather over the top concoction. As bench chairs are fine for eating but not so comfortable for loitering, we retired to our folding chairs for duration.

I plan to go on many a midweek picnic over the next few months while the weather is still mild. The maps are out, there are plenty of unexplored spots close to home- national parks, waterfalls, formal parks next to weirs, village parks with lush shade and tables. I’m thinking more about those classic picnic dishes, such as French onion and gruyere tarts and quiches. I was reminded about the tarts of Elizabeth David in the excellent recent article in The Saturday Paper by Annie Smithers of Du Fermier fame. And I also plan to improve my pastry making techniques thanks to the opening chapters of All Day Baking: Savoury, not Sweet, by Michael James, a book I acquired recently.

A long anticipated purchase, the pasta attachment for my KitchenAid mixer, finally arrived last week. The item took exactly 32 days to arrive. Following its journey on the Australian Post app, the parcel travelled from Sydney to a sorting centre in Western Australia then back to Melbourne, an unnecessary journey of around 8000 kms. I know things are slow at Australia Post at present but this one wins the prize. Despite this, I love this gadget and will be using it often.

Further cooking episodes in my kitchen included the weekly Indian night, in this case a Palak Paneer. The paneer came via the supermarket and is definitely not in the same street as the homemade version. One hack I have since discovered is to soak prepackaged paneer in hot water for twenty minutes before using it. It becomes softer and less rubbery. The home made lime pickle was opened for the occasion. It is the perfect accompaniment.

I was keen to make some spanakopita rolls which required some good firm ricotta. My son graciously found me a tub, which contained 1.5 kilos!! Once opened, ricotta has a very small cooking window before it goes off. Consequently we had ricotta in everything last week. The cake below included 400 g of ricotta, almond meal, lemons, and 6 eggs as well as sugar. Nice, but incredibly filling.

Another 450g of ricotta went into these lovely warm savoury ricotta patties. They were a success and the recipe will be handy over summer when staring down the basket of leftover ricotta. Served with leftover marinated peppers and capers.

Blistering a bunch of red peppers, peeling then marinating them in olive oil, garlic, pink salt and herbs is something I often do for handy lunches.

And now, getting back to picnics, you are invited to Manet’s picnic in the park, Dejeuner sur l’Herbe, painted in 1862-3, an intriguing painting. That nude woman is looking right at you, she’s caught your eye, she knows what you’re thinking which is just as well, because the two over dressed dandies look like they’ve drunk the contents of that bottle: one chap has rather glazed eyes while the other gesticulates madly- he’s probably a real bore. Maybe the oversized woman in the creek will leap out and splash them with a bit of luck. And as for that picnic food, not much effort went into it.

On My Way to Lunch in Castellina in Chianti. Pasta and Authenticity.

February 1993.

Today is un giorno festivo according to the bus timetable, which simply means it’s Sunday, a holiday, a holy day, as opposed to all the other working days of the week. I’ve arrived in Castellina in Chianti, a small village 15 kilometres from Siena, after a slow but pleasant bus trip through rolling Tuscan hills dotted with small historic settlements with names that resonate more loudly than they should: Ficareto, Colombaio, Quercegrossa, Croce Fiorentina, San Leonino. I mentally translate every printed word that flashes by: names of villages and rivers, traffic directions and road signs, as figs and doves, large oak trees and Florentine crosses, saints, wells and fountains overload my thinking. This habit is mentally exhausting. Last night’s drift of snow left no visible sign in these hills, but it’s still cold and bleak. I’m wearing a thick brown coat- one that I purchased from the bi – weekly market near the medieval wall just outside the centro storico in Siena. It’s my bag lady coat, coarse and graceless, but warm. I feel like an outsider, an imposter, and terribly lonely: this coat doesn’t help. I’ll blame the coat for my sense of estrangement, given that all the Senese look so elegant in their long, fur trimmed woolen coats, not unlike those well- behaved citizens in a medieval Ambrogio Lorenzetti fresco. Not to mention the local taste for expensive, narrow, fine leather or reptile skin shoes, elegant and totally impractical, which don’t fit my broad Australian feet. The stall holders at the Sunday market in Castellina in Chianti are now packing up: I’ve arrived too late to pick up a little antique hand worked pillow case or vintage ceramic plate. The village looks deserted and uninviting. I’m not sure why I came, or where to go, not having done much research before making this lone journey. A church bell chimes in the distance signalling that it’s already past one pm, a reminder to the secular that it’s time to eat. Distant church bells can be comforting or dispiriting, arousing a sense of belonging or sadness. Today’s bells ring melancholy. A sense of cognitive dissonance overcomes me: it seems that the more I learn this language and bathe in the familiarity of Italian sounds, the less certain I feel about my place here. The empty streets loudly announce that everyone else is already seated at a table, either in a family home or warm restaurant, coats now hanging on pegs by the front door, primo piatto about to be served, a bottle of Chianti Classico proffered, as loud and excitable conversation fills the room. The choice on the menu won’t be novel or foreign: Italians are far more comfortable with regional food, or even more precisely, the food of their paese, the local village or district, food that is cooked simply and according to tradition. That’s what is so appealing about Italian food. At times, I’ll admit, Italian regional cuisine can become stubbornly insular and unbending too. Campanilismo, a word derived from campanile, the village church bell, suggests a rigid adherence to one’s local food, method of cooking, ingredients, dialect and ways of doing things: it’s about local pride. The bell tolls for many reasons.

I’m feeling anxious now and walk more desperately. The town is much smaller than I anticipated. If I’m not seated at a table by 1.15, I may miss out on lunch altogether. I’m looking for a small restaurant or trattoria, one that isn’t too well patronised by noisy extended families in elegant clothes, having attended, or pretending to have attended, church. Pretending to attend church is an art form in Italy, a performance that I greatly admire. You don your Sunday best, make a brief appearance at the church with the family, double or triple kiss your friends at the front steps, enter and sit down for a bit, pop out the front for a smoke (male), or chat loudly with your friends in the mid to rear rows (female), while ignoring most of the action at the front altar. The reverberating monotone of the priest echoing around the walls, ‘Santo, Santo, Santo il Signore Dio dell’universo. I cieli e la terra sono pieni della tua gloria’, produces a ready response from the front two rows of pews. High pitched, croaky voices pray in unison, the pious and the permed: small boned and ancient women kneel, rosaried and devout, as they prepare for their future in paradiso.

I peer through the window of a small and very plain looking trattoria and see a tangle of bright yellow pasta lying on a wooden bench, liberally dusted with flour. A plump middle aged woman in a plastic cap adds more to the pile- pasta freshly rolled and cut for today’s lunch. The menu board says Tagliatelle al Burro e Salvia. ( tagliatelle with butter and sage). I don’t read any further, I don’t need to know what’s on offer for the piatto secondo. I walk straight in.

When the eggs are plentiful and spring vegetables and herbs announce their readiness to be picked before bolting to heaven, I think back to that simple meal in Castellina in Chianti. It was elegant yet comforting, it’s success arising from restraint. Freshly made egg pasta is a joy to make and consume soon after. It requires only 2 ingredients: eggs and flour, along with a bit of kneading, resting, rolling and cutting and that’s all. No salt, no oil, no sourdough starter, no colours, no heavy artisan type flours, no chia seeds and no fuss. The sauce should gently coat the strands. Ideally, you want the fresh eggs to sing, their golden yolks colouring the mixture. At this time of the year, fresh pasta is almost saffron in colour, the eggs are so good. In the case of Tagliatelle with Butter and Sage, the sauce comes from lightly browned butter in which you crisp a few sage leaves. You could add a grating of nutmeg. It is served with grated parmigiano. Authenticity, although a fraught concept, requires you to stick, as much as possible, to the traditions of a country’s cuisine, if you have the ingredients on hand to do so. Once you start fiddling with a recipe, expect the results to speak a different language. Restrained is a good word to describe the elegance of Italian food. I hear those bells ringing. Time to make fresh pasta.

Maccheroni Rigati with Sweet Pepper Sauce

Since beginning my little pasta series, Pasta della Settimana, readers have asked me all sorts of pasta questions. Is pasta fresca (fresh) better than pasta secca, (dried)? How do I choose a good dried pasta without paying a fortune? And the answer always comes down to the same thing: taste a variety of pasta brands and discover the difference between good and bad pasta. Commercial ‘fresh pasta’ sold in plastic packets in supermarkets is stodgy, far too thick and is inedible, despite the alluring sounding stuffings. It tastes just like the wrapping it comes in. If you want good fresh pasta, either make a batch yourself or find a reliable source of fresh pasta that is not too thick and floury. A good quality dried pasta beats a badly made industrial fresh one any day. Look for dried pasta that has a rougher surface and has been manufactured using bronze dies, or ‘Trafilatura al Bronzo’, meaning it has been extracted through bronze and not teflon dies, the latter more commonly used. A good pasta should hold its shape when cooked, the cooking water should not become overly cloudy and it should be firm and not floury to taste.

The other key thing about pasta is to choose a shape that marries your sauce. Short pasta with ridged lines (rigati) are good to hold creamy sauces. Look for this word on the packets (lisce means smooth, the opposite of rigati). Other golden rules include:

  • Never overcook pasta
  • Never over drain pasta, unless you are saucing with a thin brothy sauce or seafood. Pasta needs to be moist to marry well with the sauce.
  • Never over sauce pasta.
  • Use fresh, seasonal ingredients.
  • Find the best quality ingredients, including pasta, parmesan and EV olive oil that is fresh. When it comes to olive oil, check the use by date and choose one closest to the oil’s date of harvest and crush, which should be mentioned on the tin or bottle. In Victoria, Australia, Cobram oil is released in May each year so it’s easy to check the freshness annually. Many European oils often end up in famous delis with close to rancidity dates. Buyer beware.

In late Autumn, red peppers – bell peppers, pepperoni or capsicums- depending on where you come from, are at their peak and can be purchased in markets rather cheaply. They are far more suited to a sub- tropical climate: this is one vegetable that I prefer to buy than waste 5 months waiting for one two to ripen in my own orto.

The following recipe is a luscious creamy sauce which makes a great accompaniment to grilled fish as well as a pasta sauce. It keeps well, covered with a film of olive oil, for two weeks in the fridge.

This makes enough pasta sauce for 4 serves or a 225 g jar.

  • 4 large red peppers ( capsicum, bell pepper, pepperoni)
  • 65 g ground almonds or almond meal
  • zest of 1 lemon
  • 4 Tablespoons EV olive oil
  • 1 garlic clove
  • 2 teaspoons balsamic vinegar
  • 50 g freshly grated Parmigiano Reggiano or Padano
  • sea salt, black pepper to taste
  • pasta to serve, around 80 -100g per person
  • fresh basil leaves to serve.
  1. Preheat oven to 200c. Place the peppers on a baking sheet and roast them in the oven for 25 minutes. turning once during cooking. They should become charred and deflated. Remove and place them in a plastic or paper bag to cool.
  2. When the peppers are cool, peel off the skin and remove all the seeds. Try to save the pepper juice by holding them over a bowl.
  3. Put the pepper flesh and all the other ingredients into a food processor and whizz until blended, smooth and thick. Taste and adjust seasoning.
  4. Cook your chosen pasta, such as rigatoni, penne rigate or maccheroni rigati. Reheat the sauce gently in a wide and and deep frying pan then add the cooked pasta to the sauce, tossing well to completely cover.
  5. Serve hot with torn basil leaves.

    Sides- a good bitter leaf salad and sourdough bread, Panmarino.

Inside a Pasta Factory and a Very Italian Soup.

It is hard to imagine a world without pasta. Italian style pasta was unknown to most Australian households until the 1970s, despite the presence of Italian pasta manufacturers here in Melbourne. One of the earliest producers of quality pasta, Nello Borghesi, established La Tosca Company in 1947 in Bennett’s Lane, Melbourne. They eventually moved to a larger factory in Brunswick in 1971.

“Before then, Melbourne’s Italian community were largely the only customers of this fine pasta. By the 1970s many new Italian restaurants emerged: it was, for many families of Anglo-Saxon background, the first time they had tasted real pasta beyond spaghetti or macaroni from a can.” ¹

Dried pasta could be bought in supermarkets, especially around Carlton and Brunswick, but it was still unusual to eat pasta at home regularly, and when it did make a regular appearance, it came only in one form: the ubiquitous Spaghetti Bolognese.

‘The Borghesi found it challenging at first to introduce the pasta to the Anglo-Australian consumers. The Italian Australian market also had to be convinced that the product was as good as that which they could make themselves. The pasta would be made in the mornings, then delivered in the afternoons in the family van. It was a very labour intensive process and the whole family would help in the production. Deliveries were made to most Melbourne Italian food outlets and restaurants, such as Florentino’s, The Latin, and Mario’s. By the 1960s, the clientele grew to catering for weddings and non-Italian cafes, and then the business really took off. In the 1960s, the delivery of dry pasta was replaced by frozen products.”¹

The Borghesi business and I became very well acquainted in 1997 when I decided to take a job at La Tosca Pasta Company in Victoria Street, Brunswick, a suburb of Melbourne. This short-lived factory job was wedged between one era of teaching and another, a time when I felt lost in my search for meaningful work. I took the job thinking that it might be interesting to work in a completely different field, to do some physical work for a change, and that the Italian staff might help me acquire a better grasp of idiomatic Italian. I had finished a degree in Italian, followed by three years translating an autobiography. Without daily interaction in Italian, I feared that I might lose the language. So off to La Tosca I went.


Our working day started at 8 am precisely. We would begin by moving the racks of drying spaghetti, linguine or tagliatelle which had been stored on wooden drying rods in darkened rooms overnight. The pasta was carefully scooped off the rods, taking care not to break any of the brittle strands, and bundled neatly onto the bench for packing. Each stack was then weighed to a precise weight: after a while it was easy to gauge this visually. The pasta was placed in small boxes, ready for the machine to wrap and seal with the La Tosca logo. These packets were then placed in large boxes, twenty to a box, ready for the delivery trucks. The work was relentless and swift: there was no time for conversation beyond the conveying of basic instructions. pasta-labels-2
At 10 am on the dot, a whistle would sound, and a short Neapolitan woman would yell “Andiamo,” let’s go. All activity ceased instantly, machines and work stations were abandoned, the factory floor silenced by the call to coffee. We climbed the narrow stairs in single file and gathered in a cramped morning tea room above the factory floor for a piccolo cafe ristretto, made in an old beaten up aluminium Napolitana by the Andiamo lady. Ten minutes later it was back to work. Huge dough mixers gyrated above, operated by men on platforms, moving effortlessly in a noisy industrial ballet. Other machines chugged permanently in the background- pasta cutters, ravioli stuffers, packing machines- the factory floor was alive with mechanical noise. The strong coffee kept us going for more back-breaking work, boxing, stacking, wrapping, then sweeping, constantly in piedi for the 8 hour working day.  I lasted for about 6 weeks at the La Tosca Pasta factory- the unremitting noise eventually drove me demented, my legs longed for that moment of rest and my back was trashed. I began to consider other forms of paid work.

In that short time, I came to admire the endurance and stamina of these women who had worked in factories since migrating to Australia in the 1950s and 60s, sturdy middle- aged and older women, dressed in sensible and spotlessly clean factory uniforms, standing solidly on concrete floors in stockinged legs and sensible shoes. The work was hard and relentless. They made the pasta that Melbourne came to love.

Melbourne’s Italianita´can be found far more easily without taking such drastic steps, as I was to discover. Inner city libraries specialise in Italian film and magazine collections, there is a local Italian newspaper, Il Globo, an annual Italian film festival, numerous Italian regional  and cultural clubs as well as fresh markets, delis, restaurants, and Italian supermarkets. Melbourne’s Italian manufacturing centred around pasta, cheese making, salami and shoes, though this was far more pronounced in the last century than it is today.

I recently made a large batch of pasta and after cutting the square shapes for some cannelloni, I was left with a nice pile of maltagliati, irregular shaped off cuts. ( I often call these cenci or stracci too ) These little pieces make a wonderful addition to a rustic soup, which can be thrown together in minutes, becoming a meal in a bowl. Like many good Italian recipes, my quantities are approximate. The soup is designed to be eaten at once- any soup with pasta is not suitable to be eaten the next day. The amount below makes three good serves.

Ingredients

  • 2 -3 large garlic cloves, chopped finely
  • one stem fresh rosemary, leaves stripped, finely chopped
  • 4-6 anchovy fillets
  • one dried chilli, finely chopped
  • a generous glug of EV olive oil
  • cooked chick peas- around two cups ( if using canned chick peas, drain off well and rinse off that awful preserving liquid)
  • one vegetable stock cube with water or home-made stock, vegetable or chicken.
  • Fresh pasta offcuts/maltagliati
  • Italian parsley, finely chopped
  • black pepper to taste
  • grated Parmigiano to serve

Using a heavy based saucepan, add the oil to the pan and gently fry off the soffritto, the garlic, anchovy, chilli, and rosemary, pressing the anchovies to a paste as you go.

Add the chickpeas and stock to cover (or water and stockcube). Bring slowly to the boil, then add the pasta pieces. Fresh pasta should cook in two minutes- if the pasta has been left overnight, allow a little longer. Taste as you go. Season with black pepper. Serve with ample parmesan cheese.

Take Three Eggs

Eggs are always in season around here, though the number increases dramatically during Spring. I’m now gathering around 15 eggs per day, requiring some strategic marketing as well as more baking. My grandmother, with regard to the economy of keeping chooks, used to say, ‘put in a shilling and get back sixpence’, and I often think this is true. Fresh egg pasta is one simple way to reduce the stash.

Take three eggs and crack them into a bowl over 300 gr of plain white flour, do a little mixing, some kneading, some waiting, followed by some cutting, and within one hour, you have enough pasta to feed a crowd. Of all the transformations that happen in my kitchen, pasta making is high up on the list, running a close second to the mystical and semi- religious transfiguration of flour, salt and water into bread.

I often use a softer flour for pasta making, such as an Italian doppio zero ’00’ flour but really, any plain white flour is just as good. After measuring the flour, add it to a bowl, then crack 3 large eggs into the centre and mix well. There is no need to make a little volcano of flour on a flat bench with eggs cracked into its crater. Volcanoes are messy things and explode in unexpected ways. Use a bowl. I usually have an extra egg yolk on hand, in case more moisture is needed to bring the dough together. I don’t use water, salt or oil. Just flour and eggs! After the dough comes together, knead well on a floured bench for around 10 minutes. As you knead, the dough will turn silky and more elastic.

I often cheat, and who doesn’t, by mixing the dough in the food processor, then when it forms a ball, I remove it to knead on the bench. There’s no getting out of the kneading: it is the only tedious part of pasta making so turn the radio on. (Did I hear you sing that old song, ‘who listens to the radio, that’s what I’d like to know.’? Has Jon Faine become a shock jock? Turn that man off and play some Puccini instead.)

Take the ball of kneaded dough and flatten into a disc, then wrap it in plastic and leave it for at least half an hour to relax and further hydrate. It won’t hurt to let the dough rest for longer so you can go out at this point, saving the fun part for later.

Attach your pasta machine to the bench. Flour up some cutting boards and tea towels. Cut one sixth of the pasta dough and feed through the machine at its widest setting. Fold it in half then feed through again. This makes the pasta sheet wider. Then continue to feed the pasta through the rollers, lower the setting cogs down a notch each time, stopping at number two. This part of pasta making is best shared with a helper.

Now you get to choose the shapes you want. My last week’s batch produced enough pasta squares for two trays of cannelloni, some cenci or rags which I love to add to soup, and a pile of cappellini, a finely cut spaghetti. Three eggs. Three hundred grams of flour. Three meals. It really is much simpler than my long winded description and the results are worth the effort.

I followed Stefano de Pieri’s recipe for Spinach and Ricotta Cannelloni, from his Modern Italian Food, 2004, which is reproduced here, unchanged. Sometimes it’s good to follow a recipe for a dish that you think you know well. You might learn some new tricks. I always use a heat diffuser when making besciamella or white sauce as it has a tendency to catch. And you will need to cut around 20 squares from your fresh pasta batch for this amount of filling.

Ingredients

300g spinach
1 tablespoon butter
500g fresh ricotta
2 eggs
100g parmigiano reggiano, grated, plus an extra handful
salt and pepper
200g  home made egg pasta

Bechamel Sauce

150g unsalted butter
100g plain flour
1.5 litres hot milk
freshly grated nutmeg

Method

  1. To make the béchamel sauce, melt the butter and mix with the flour. Cook a little but without browning. Stir in the milk, bit by bit, mixing with a wooden spoon. Initially the mixture will be like a gluggy lump but as you add the milk it will break down more and more. Cook it gently for 20 minutes or more, taking care that it does not stick to the bottom of the pan. Add nutmeg to taste. This recipe should yield a fairly soft sauce, which is what we want. If it is too thick add more milk or water. If you think you have some lumps in it, pass it through a fine sieve and everything will be all right.
  2. Bring a large pot of salted water to the boil and blanch the spinach, drain and squeeze dry. (I far prefer using proper bunches of spinach, rather than ready-trimmed little spinach leaves.) Roughly chop the spinach.
  3. Heat the butter in a large pan and briefly sauté the spinach. In a separate bowl, combine the ricotta, eggs, grated cheese, salt and pepper. Stir in the spinach and mix well.
  4. Roll the pasta through the last setting on your pasta machine and cut the sheets into sections about 10 cm wide. Cook the pasta sheets in plenty of boiling salted water, then plunge into a bowl of cold water. When cold, place on a tea towel to dry.
  5. When you are ready to cook the cannelloni, preheat the oven to 180°C. Spread a third of the béchamel sauce over the bottom of a baking dish. Lay the pasta sheets on a work surface and spoon some filling along the centre of each. Roll up to form fat cigars. Arrange the filled cannelloni in the baking dish and spread the remaining béchamel sauce over the top. Sprinkle with the extra cheese and bake for around 15 minutes until the top is bubbling and golden.
  6. If you like, you can introduce a tomato element to this dish. Spoon a few tablespoons of home-made tomato sauce over the béchamel before topping with the extra grated cheese. Don’t overdo the tomato though, as the acid can rather dominate the flavour.

Tagliatelle with Butter and Sage

It was in Castellina in Chianti, just north of Siena, in 1993, when I first ate Tagliatelle con Burro e Salvia. I remember the day quite vividly. At the time I was studying Italian at the Scuola di Dante Alighieri per Stranieri for a month and, as school attendance required me to be present only from 8 am to 1 pm, I had the rest of the day, as well as each Sunday, to roam around Siena and Tuscany, often taking the local bus to a small village, followed by a lunch and a stroll. It was on one of these jaunts that I ended up in Castellina in Chianti, and not long after hopping off the bus, I was drawn to a modest ristorante where a big pile of freshly made tagliatelle was laid out on display. I was in like a shot.

Although seemingly a very simple dish, fresh tagliatelle with butter and browned sage leaves does require some hours of preparation. There is no point making this dish with dried pasta or even shop purchased fresh pasta. This is where I get bossy. The pasta must be freshly made up to two hours before. This is why it tastes so good and comforting.

Making pasta at home is an easy process if you have a little time AND a helper. I never make pasta on my own, but when young Daisy Chef is around, what seems like a tedious business becomes a joy. We flour up the benches, get the aprons on and make a load of yellow snakes. She loves to crank that handle and feed the stretched pasta through the wide cutting blades.

First make the pasta.

  • 300 g flour, preferably farina doppio zero, or ’00’ flour
  • 3 large eggs ( around 60 g each)

Make the pasta dough either by hand or in a food processor. I simply place these two ingredients into the food processor and pulse until the dough clumps together. If it doesn’t, have another small beaten egg on hand and add it, bit by bit, until the pasta clumps. Don’t over process it.

Bring the dough together on a lightly floured bench and, without kneading, cover the dough ball in plastic for 20 minutes or so to rest. Unwrap the ball and knead the dough for around 5 minutes, turning and folding, until it is smooth. Wrap again in plastic and leave on the bench to rest for another 30 minutes or more, until you are ready to continue. In summer, this step may involve resting the dough in the fridge, but always bring it back to room temperature before rolling

Flour the bench well. Feed the dough through the pasta machine, twice at each number, from 7 to 5, then once on each number down to number 2. If the dough sheets get sticky along the way, dust them with more flour.

Feed the long sheets through the tagliatelle blade, then place them on a large flour covered tea towel and toss around so that the strands don’t stick together. Cover the pasta with another tea towel until ready to use.

The fun part!

  • Boil up a large pot of water and add ample salt.
  • Cook the pasta until al dente- two minutes is usually enough but this will depend on how long the pasta has been resting.
  • Meanwhile, melt some unsalted butter in a wide frying pan and cook some sage leaves until crisp. Remove. Then add more butter to the pan to melt. Return the sage leaves. The butter is main sauce so be generous, around 40 g for two serves.
  • Drain the tagliatelle and toss through the butter and sage in the pan. Add some freshly ground pepper or nutmeg. Serve with lots of freshly grated grana padano or reggiano parmigiano.
