In My Kitchen, May 2019.

April was busier than usual with children on school holidays, beach days, Easter, followed by Anzac Day. I’m rather pleased that May has come around and I can get back to my home kitchen full-time, with some mellow Autumn cooking, interspersed with trips to the library. Anzac day, April 25th, demanded a few biscuits to mark the occasion. It’s a baking tradition in my kitchen as it was in my mother’s until recently. My Anzac biscuits are flat and crispy, the way I like them. I pop them in an old Anzac tin in the hope that they might last a few days. They never do. The Department of Veteran affairs has firm rules about Anzac biscuits. You risk a large fine if you attempt to call them cookies or play with the original recipe, or misappropriate the name in a commercial business. While not patriotic at all, I still believe in the uniquely Australian/New Zealand aspects of this day. Anzac biscuits are so popular with my extended family, I should bake them more often. For flatter, brown and crispy Anzacs, slightly reduce the percentage flour and add more brown sugar.

I whipped up these yeasted buns for Easter this year: unfortunately there was little time to concentrate on feeding a leaven for a sourdough version. This lot had extra fruit and were glazed with quince jelly. Unlike the supermarket versions which can still taste fresh after a week, ( or maybe even a month), these buns are preservative free so they don’t keep for more than a day or two. The left over buns landed in a rich bread and butter pudding.

One vegetable that grows very happily in this awful drought is chilli. They ripen in autumn and will continue to enjoy life in the garden until the first frost arrives. I use a few fresh, but the bulk of the crop is dried and ground into flakes for the year ahead. I also make chilli oil. Small batches are better as the oil can go rancid. This small jar will last a month or so. A nice drizzle for a pizza or crab pasta.

It’s garlic planting time. When you see sprouting garlic around the markets, you know the time is right. I usually plant 300 each year. This basket of 100 is a mixture of my own garlic and some Australian grown garlic from the market. Three separate plantings over May will ensure a staggered pick.

The chooks are pumping again, and suddenly I have far too many eggs. I have sent Mr Tranquillo the recipe, again, for Crème Brûlée, purchased some second-hand shallow terracotta ramekins, and I have also given him a blow torch for caramelising the tops. It’s his favourite dessert so I’m hoping it becomes his signature dish. I really do like it too.

Autumn also sees the return of pasta making in my kitchen. Three eggs and 300 grams of flour, preferable tipo 00, or a mixture of tipo 00 and semola rimacinata, or just plain flour if that’s all you have: no oil, no salt and no other additives, according to Italian nonne. This will make you a truckload of fresh pasta. I fiddled with some parsley leaf pasta in these lasagne sheets. Not worth the effort and such a 90s thing to do.

It’s pastie time again. The filling in these pasties was fairly Cornish- onion, carrot, parsnip, potato. I found this puff pastry hard to digest. The sheets were left over in my fridge. For my next lot, I’ll focus on a good home-made short crust pastry.

There’s always soup in my kitchen. We don’t wait for Autumn or cooler weather to make good soup- we have it all year round. I am passionate about the building of a good soup. My soups are never randomly made. I like colour combinations, creating different flavour bases via a finely chopped soffritto, and seeking pleasing presentations so that you mangiare con gli occhi, or eat with the eyes before tasting the soup. Today, I wanted to paint a monochromatic soup in white and pale green, a contrast to today’s earthy dark rye bread. After building a soffritto of finely chopped garlic, fresh rosemary, a few anchovies and a pinch of ground chilli, I added a pile of cooked cannellini beans, shredded pale green cabbage ( wongbok cabbage which cooks quickly), and a handful of Pantacce pasta. A little grated Parmigiano Reggiano at the table and buon appetito. It’s ready.

Another cold day soup was built with Autumn colours, a typical Ribollita style soup. The soffritto build included onion, carrot, celery, and garlic. Once softened in EV olive oil, I added borlotti beans, more carrot, shredded cavolo nero, and some halved cherry tomatoes. This dense soup was served with a hunk of white sourdough.

A new cake has come into my life. I love flourless cakes that aren’t too cloying. This one has four ingredients ( butter, sugar, walnuts, eggs)  and can be whipped up in a few minutes. It is dense, is a great keeper and très French. The recipe for Walnut Cake from Perigord can be found here.

Summer Buddha Bowls

Buddha bowls have made a mysterious appearance around here lately. They are deceptive little meals. Initially, they seem easy enough- shove a few things in a bowl, grab a fork or chopsticks and plonk yourself and filled bowl in front of Netflix, then veg out – literally. But once you get into the building stage, you may find yourself led down a culinary rabbit hole, creating more and more interesting elements to complement your initial idea.

Buddha bowls, otherwise known as macro or hippy bowls, have been around for a few years, spreading from the inner suburban haunts of the hipster to outer suburban cafés and the countryside. According to the urban dictionary, ‘Buddha bowls are packed so full that they have a rounded belly appearance on the top much like the belly of a buddha’. While I’m not one for succumbing to food trends, I love a hippy macro buddha bowl in summer, so long as certain conventions are followed.

A fine Buddha Bowl is one where the individual elements and flavours complement each other culturally and ethnically. I tend to apply this general principle to other plated meals too. I don’t like mixing Middle Eastern foods with Asian, or Mediterranean with Indonesian, though I have eaten some culturally mismatched foods in cafes which make me cringe. I like to start with a particular cuisine- Japanese, for example, then ferret around the pantry and fridge finding elements that build on that theme. You could add more guidelines: there should be contrast in colour and texture and the composition should be appealing to the eye and not look like a dog’s dinner. Try to include one grain, preferably a wholegrain, the macro element, and some form of protein- such as egg, fish, pulses, beans, or tofu, as well as fresh uncooked vegetables, something pickled, seeds or nuts, and a good dressing. Your bowl doesn’t have to be overflowing like a fat Buddha- a few contrasting elements with some good flavour is all you need.

Today’s macro hippy buddha bowl followed a Japanese path and tasted clean and sustaining. It  included:

  • brown rice, cooked, cooled a little, then dressed with sushi dressing and black sesame seeds
  • tofu chunks, fried, then glazed in a miso and mirin sauce
  • pickled cucumber and red onion with ginger for crunch
  • fresh mustard leaves, shredded
  • young radishes

It was one of my ‘holier than thou’ bowls, perfect for the post-Christmas season, the umami element, the warm miso sauced fried tofu, saving the dish from total puritanism. I also considered adding some torn nori. Steamed green beans tossed in browned sesame seed sauce might have gone well too, or a sliced avocado. On market day, a crunchy fried miso glazed small fish would be a good addition. The thing is to use what you have that sits comfortably within a particular country’s culinary framework and that includes using a neutral flavoured oil, and not olive oil, if heading down the Asian path.

When does a bowl become a share platter? New terminology for old ideas. The Medit bowl made from Puy lentils, dressed in olive oil and sherry vinegar, parsley, shallots, goat’s cheese, black olives, toasted almonds. Served with croutons.

Last week’s bowls included a Mediterranean bowl for two ( pictured above) and an Indian feast. To be fair, Indian bowls are as old as Buddha himself. While the rice and dhal are cooking, begin creating small add ons- baked cauliflower with whole cumin seeds, toasted almonds, hard-boiled eggs, and a simple raita, made from yoghurt and cucumber or mint. At this time of year, fresh mango chutney adds a seasonal sweet touch.

Today’s pickle was made as the rice cooked. It goes well with Japanese meals and makes a nice crunchy change from the commercial pink pickled ginger. It is not one to store.

  • 2 small cucumbers, finely sliced
  • one red onion, finely sliced
  • 1 cup rice vinegar/ or apple cider if improvising
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons minced/grated ginger.
  • pinch of dried chilli flakes.

Layer vegetables in a small jar. Mix the sugar, salt and vinegar, stir until blended and pour over. Leave for one hour.

Part of today’s culinary rabbit hole- a crunchy fresh pickle.

Out to Lunch in Dordogne, France

I’m writing at the kitchen table, as I usually do, before dawn. The sun rises slowly, though here in the Dordogne region of France, dawn seems to drag on forever, like a long twilight in reverse. Morning is not much fun: fog and mist often continue until lunchtime when the sun finally breaks through and shoos the grey away. Jackets and scarves for the morning: t-shirts and sun hats for the afternoon. No wind spoils Autumn, no leaves quiver: the climbing vines on village stone cottages are turning crimson and pink.

On days like this, an outdoor lunch calls, perhaps a picnic by the Vezere river or a drive to a nearby village, just in time to nab an outside table at a little inn for the menu du midi. For us it will depend on the offerings of the day, which are chalked up on boards at around 11 am. Some days the menu has little appeal: it’s often duck gesiersmagret de canard, salade d’ aiguilllettes, or fois gras – it’s a hard life for ducks and geese around here. As pescatarians ( vegetarians who eat some fish on occasion), we can be hard to please in this region so there’s always a back up plan.

Packed in a little box in the boot of our car is a good goat’s cheese, a few tomatoes, a baguette and a bottle of Bergerac Rosé for our little field trips into the woods, rivers and villages of the lovely Dordogne countryside. If we pass a market on the way, we add a homemade walnut tart, a bag of apples, or perhaps a nice quiche. One way or the other, there’s always a good lunch.

Totally Stuck for Words

Most village markets in France are orderly, traditional and predictable. Sensibly dressed women arrive with shopping baskets, older men often sport a beret or cap to ward off the morning chill. There will be stalls selling vegetables, a cheese van, a saucisson stall, a pan- Asian fast food van, to which the French flock – vive la différence – and perhaps a cake stall, featuring this season’s walnuts. And so when the knife sharpening man turned up at the weekly market in Monpazier, dressed in colourful clothes and working under the old covered hall, I was instantly drawn to his stall. I asked him if I could take his photo, although the conditional and polite part of this question, the ‘could I or may I’, suddenly escaped my memory.  He happily obliged despite these omissions and mentioned that if someone takes his photo without asking first, he would not give his permission. As my mind slowly processed this information, I noticed the roughly painted anarchist sign on his leather apron.

And then it happened. I stupidly inquired, in my primitive French, which is always stuck in the present tense, about why he wore this sign. I may have simply asked, ‘Pourqui’, while pointing.

He replied passionately, rapidly and fairly vocally, why he was proud to wear this sign. I could follow bits of his response: there was mention of the new French President Macron and then he concluded, “But you don’t understand, do you. You can’t respond, can you. Can you speak?” I’m standing there paralysed and the words won’t come. “Je… je… je... ” A crowd is gathering behind me and he continues his anarchist rave. “Je… Je.” And I wanted to say, “OuiJe comprende ” or something agreeable, like “d’accord”, just so I could run away and save face but I feel like I’ve just left the frontal lobotomy ward.” Je…Je...”. I want to agree that the handsome Macron bloke has turned out to be a huge disappointment, so much for middle ground, but what can you expect from a former investment banker, and do you mind pouring me a glass of wine even though it’s only 10.30 am, because I really need one now. But nothing comes out of my mouth, nothing, until eventually I mumble je suis désolé and I’m feeling like a total fuckwit. I haven’t even had time to get out Mt T’s favourite opening line and gap filler, “Excusez-moi, mon français est très mal” to which I usually add behind his shoulder, “you mean c’est merde”, c’est tres merde.”

Salut

The knife sharpening man is laughing now, enjoying his wine, probably not the first for the day, and so we exchange drinking salutations, salut,  santé, salute, chin chin, na zdrowie proost, sláinte, cheers ( mate) and so on. It’s an exchange of sorts.

Travellers, like me, who have a smattering of French, tend to stick to simple conversations, which hover around known contexts and commerce such as buying food or goods, and include a working grasp of salutations and courtesies, all limited to the present tense with an occasional flirtation with the simple past tense and with an excellent grasp of nouns but not so many irregular verbs. Is it possible to have a real conversation without a working knowledge of the multi- tiered tenses that we use everyday without thinking, the past perfect and imperfect tenses, the future and historic tenses, all woven together, like a language knitting pattern, with fancy stitches that include the conditional, the imperative, the reflexive and the subjunctive moods used in past tenses, stitched up with  the gerund and embroidered with the nuances of language that involve irony, idiom and cultural understandings? I think not. I stand accused, sir. I would love to sit down with you and have a chat and a wine, but I can’t. Well not in French anyway. Cheers.

 

Plum Clafoutis, a Light Summery Pudding

Another day, another plum recipe. Will my pile of plums ever shrink! This classic Clafoutis recipe is based on Julia Child’s cherry Clafoutis. As the cherry season never really got into full swing this year, I found this plum version to be a wonderful substitute. When fruit other than cherry is used in a Clafoutis, such as pears, apples, plums, prunes, blackberries or other berries, it is called a flaugnarde. I can see a fig and blackberry flaugnarde coming my/your way soon. This plum version resembles that lovely winter dish from Brittany, Far Breton. Left over Clafoutis makes a wonderful breakfast.

Ingredients

  • 500 gr firm, ripe plums
  • 1¼ cup milk
  • 1/3 cup sugar
  • 3 eggs
  • 1 tablespoon vanilla extract ( or 3 teaspoons or 15 ml)*
  • 1/8 teaspoon salt
  • ½ cup flour
  • 1/3 extra cup sugar
  • icing sugar for dusting

Directions

Preheat oven to 180ºC. Cut plums in half and sprinkle with some sugar. Set aside.

Place all the ingredients except the last 1/3 cup sugar in a blender in the order they are listed. Cover and blend at top speed for 1 minute.

Butter the base and sides of a low sided 8 cup gratin dish. Pour in a shallow layer (1.2cm) of batter and put in a moderate oven for a few minutes until a film of batter has set in the bottom of the dish. Remove from heat. Place plums over the batter and pour on the remaining batter; smooth the surface with the back of a spoon.

Bake in the middle rack of the oven for about an hour, or until the Clafouti has puffed and browned on top. Check with a toothpick to that it comes out clean. Sprinkle the Clafouti with icing sugar before serving. Serve with runny cream or ice cream.

*About Tablespoons. As Julia child was an American chef, she would have used an American Tablespoon, naturally. But did you know that American tablespoons are smaller (15 ml)  than Australian tablespoons (20 ml) ? 1 American tablespoon = 3 teaspoons, whereas 1 Australian tablespoon = 4 teaspoons.

Paris. It’s all in the Name

What does the name Paris, said in a French accent, conjure in your mind? Let’s add to that initial sensation with more names of eating places, bistro, café, restaurant, brasserie or names of fast foods, tartes, crêpes, baguette or frites: names of streets and places, rue, arrondissement, porte, pont and parc, église and musée. My list could go on forever. The names of commonplace things sound far more romantic and exciting in a foreign language. There’s more resonance, frisson, and nuance in saying or thinking the words. The very naming of things in your second or third language takes you to that place, is an admittance into a new way of thinking, invoking the culture and history of a place. Foreign language gives you a different perspective on life.

Akaroa, New Zealand’s French Village

It is unusual to find French settlements in Australia: it seems that on every occasion when French explorers, cartographers and naturalists came sniffing around, they were pipped at the post by the Poms.

Given the absence of historic Frenchness in Australia, it was a surprise then to find a quaint little French village in the South island of New Zealand. Akaroa ( its French name became Port Louis Phillipe for some time before reverting back to the original Maori name) began its French life in 1838, when Captain Francois Langloir

‘ made a provisional purchase of land in the greater Banks Peninsula from Tuaanau… On his return to France, he advertised for settlers to come to New Zealand and ceded his interest in the land to the Nanto- Bordelaise Company of which he became a part owner. On 9 March 1840, 63 emigrants left from Rochefort. The settlers embarked on the Comte de Paris – an old man-of-war ship given to them by the French government – for New Zealand. The Comte de Paris and its companion ship the Aube, arrived in the  Bay of Islands in the North Island on 11 July 1840, where they discovered that the Banks Peninsula had been claimed by the British. The French arrived in Akaroa on 18 August and established a settlement.’¹

Today, Akaroa and the nearby smaller settlement of Duvauchelle, retain a pride in their French beginnings, fostering French detail in the local architecture, and ambience as well as holding a biennial French festival held in odd-numbered years in Akaroa.

Those looking for a French conversation will most likely be disappointed. Most of the old-time French speakers have long passed. There is a French cemetery, French named streets and of course, French bistros and restaurants, the local gendarmerie and a boucherie, a French backpacker hostel and wine bars. The local council is active in preserving its French heritage; new buildings and beachside apartments come with de rigueur French roof lines. It stops short, just, of being theme parkish.

Other pleasant pastimes include a stroll down the long picturesque jetty, stopping along the way for a tray of Murphy’s freshly caught and grilled fish. In town there is a famous cooking school, coffee shops and restaurants along the promenade, sea voyages to visit the Akaroa Dolphins and other wild sea creatures, getting completely lost in the Garden of Tane, strolling through the older parts of the village, and the listening to the Tim Minchin -like guy who plays classical music on an old piano along the main promenade.

Like many place names in New Zealand, the name Akaroa is Maori, meaning “Long Harbour”, which is spelled “Whangaroa” in standard Māori.

Akaroa is around one hour’s drive from Christchurch. It is a great road trip, with scenic views along the way. The town, being so close to Christchurch, makes a great place to start or finish a trip around the South island of New Zealand.

Chicken Marengo and Toulouse – Lautrec

Every now and then, I cook a few meat dishes for the ‘export market’, reverting to retro classics, given that they freeze well and make for simple and nourishing meals that can be reheated easily.  I am more than happy to cook meat for others, especially if the recipient is ill or otherwise disinclined to cook.

Searching the shelves, (and not the internet) for something French, a Chicken Chasseur perhaps, I noticed a big black French culinary hole in my cookbook collection: probably because the cuisine of France tends to be very meat focussed. On the top shelf I keep some much treasured ‘collector’ cookbooks, purchased from second hand shops and read for amusement.  ‘The Art of Cuisine’ by Toulouse-Lautrec and Maurice Joyant is one of these. And very French it is!

There is a story behind this book.  Henri Toulouse-Lautrec and Maurice Joyant had been friends since childhood. Joyant was the executor of Lautrec’s will and created the Musée Toulouse- Lautrec at Albi. The two friends had a mutual love of food which was the true daily link between these men.

‘In the last years of his own life, Joyant collected the recipes invented in Lautrec’s company and combined them with the recipes that he and Lautrec had garnered throughout their years of companionship. He embellished the text with Lautrec drawings …….The book was published in a limited edition, and was conceived by Joyant as a work of art and as a tribute.’

My copy is a new – 1966- copy of the original work, ( which was most likely published in the 1920s) translated by Margery Weiner.  The only modifications are a few culinary notes, added in bold at the end of the recipes. The book includes fabulous coloured plates of Lautrec’s art, including many sketches he designed for menus.

Toulouse Lautrec’s ‘Chicken Marengo’

Put in a saucepan some olive oil, a crushed clove of garlic; heat and brown pieces of chicken. When these pieces are a good golden colour, take them out and make a roux with a spoon of flour.

When the roux is well browned, moisten with good bouillon, put back the pieces of chicken, salt and pepper, and let simmer on a low flame.

Half an hour before serving, add some sautéed mushrooms, a few spoons of tomato puree, and pitted olives. Just as you serve, sprinkle with croutons of bread fried in butter.

2 Tbs oil, 1 Tbs flour, 1 cup chicken stock, 1/2 lb mushroom sliced and heated in 2 Tbls butter, 2 Tbs tomato puree and 1/4 cup black olives.

1 kilo free range chicken thigh fillets, cut into thirds, 2 Tbs Extra virgin olive oil, 1 Tbs butter, 1/4 cup white wine, a slurp of brandy, 3 cloves of garlic, smashed, plain flour to dredge the chicken pieces, 1 cup of stock, salt and pepper, 2 Tbs tomato paste, 300 grs mushrooms, quartered.  No olives and no croutons.

Dredge the chicken pieces in the flour, fry till golden in oil and butter in a heavy based pan, making sure you don’t crowd the pan.  Remove pieces when done, then add the garlic to the pan and cook briefly, then  the cognac and wine. On high heat scrape the stuck bits on the base, reduce a little, then add the stock and tomato paste. Put the chicken pieces back into the pan, add salt and pepper to taste,and cook on very low flame.  Add the mushrooms towards the end of cooking.  Add more stock as needed.  Total cooking time, around 30 minutes.

My version uses chicken thigh pieces as it is much faster to cook and easier to box up for the ‘export market’. The boxes will contain a side of fettucine.
