There’s always more to do in a garden, the commitment is ongoing, but the work keeps me sane in these dark times. Once I cross the threshold, which is a rather unromantic industrial looking tall gate, I find peace, timelessness and a belief in something greater than my own existence, a space beyond the worries of the world. I suppose you could call it hope, as vegetable gardening is about the future, a belief that through careful nurturing, the earth will be productive and plants will provide more food, that the bees and insects will continue to play their role, that seed will become flower, and flower fruit, then seed once more.

When I walk through the orto, I enter a trance like state, while still unconsciously doing what needs to be done. A little weeding here and there, gently transplanting self – sown lettuces to better spots, coaxing a pumpkin vine to take a different route, or watching the white butterfly moths as they rise from the brassica beds in the morning sun, and all this under a vast sky, wrapped in total silence and the aura of our planet, until a kookaburra laughs from the gum trees beyond, kookoook kaakaa, breaking the spell. It’s meditation and an antidote to these times, but it’s also fragile, so fragile. I close the gate behind me and return to the kitchen, the other centre of life for me. Nature and nurture.

Autumn is the busiest time of the year in the garden and consequently so it is in my kitchen. The tomatoes are still producing, but slowing down now. Their life cycle began in late July, when I germinated the seed in our north facing windows. It has been a long journey and now the seed is being selected from the best plants to preserve for seeding later this year. Every year I plant around 15 San Marzano tomatoes. Their fruit, an egg shaped thick skinned tomato, is kept strictly for saucing. To date we’ve made passata from around 21 kilos of fruit. This year one plant surprised me. We had a few spare plants leftover and so I shoved one in the citrus grove, adding a spade full of compost and some sugar cane mulch. It has grown into a sprawling ground bush of around two metres square. To date, I’ve picked 96 tomatoes from it, and there are still heaps more green tomatoes ripening. It will survive for another month.

The peppers and capsicums are all turning red, finally, which means it’s preserving time in the kitchen. Traditional Italian recipes use the old techniques of sott’olio and sott’aceto, under oil and under vinegar, or sun drying and salt curing. I’ve been inspired by the recipes found in Preserving the Italian Way, by Pietro Demaio. I first read about this specialist cookbook in the April edition of Gourmet Traveller and during an insanely annoying 3 am insomniac moment, I purchased a copy. It arrived promptly and I’ve used two recipes to date. The book includes chapters on preserving vegetables in oil and vinegar, then moves on to chapters on funghi, olives, herbs, syrups, bread, fish, cheese, cured meats, wine and liqueurs. Other than the meat chapter, I will get great use out of this book. It’s a gem. Today I bottled a jar of long red chillies under vinegar, and made the delicious sounding Involtini di Peperoni, little rolled capsicum strips stuffed with anchovy, capers and chilli preserved under oil. Both these preserves are now hidden in a dark spot for a month or so to cure. I often wonder why I do this when big jars of preserves such as peppers, cucumbers, capsicums and so on are cheap to buy from shops such as Bas Foods, Terra Madre, Harvest and Psarakos, to name a few of my favourite places. The cost of white wine vinegar has increased dramatically over the last two years, (ordinary white vinegar isn’t recommended for preserving) and using good olive oil, as recommended by Pietro, does not come cheaply. I guess the proof will be in the eating. The produce is organic and the process is hand crafted rather than industrial.

This year’s fruits were disappointing. Only the apples were prolific as well as the figs, which are finally ripening. Most of the other fruits lost their flowers during an extremely destructive storm last Spring, affecting power supplies and bringing down trees across the State. One of my favourite apple concoctions comes from a cookbook by Lorenza de’Medici.1 I’ve written about this lovely dessert before, but it’s worth re- visiting the recipe, as I do every Autumn. If you grow the fruit, your only expense is the butter for the pastry and a slug of Marsala, for the lovely fruit mixture, if not also for you. If you can’t be fussed (that almost sounds like a slip of the tongue) making the pastry, the fruit mixture makes an excellent crumble.

For the Short pastry.

  • 350 g plain flour
  • 2 egg yolks
  • 125 g sugar
  • 225 g butter
  • pinch of  salt

For the filling

  • 1 orange
  • 300 g blood plums
  • 1 kg apples
  • 225 g sugar
  • grated peel of 1 lemon
  • 2 Tbsp Marsala
  • 3 cloves

Method

  1. Prepare the short crust pastry. Place the dry ingredients in the food processor, add the butter, process, then the egg yolks, until mixed and formed into a ball. ( you can do this by hand if you prefer). Roll or press into a flat slab, wrap in cling wrap and let rest in the fridge for an hour or so.
  2. Meanwhile, make the filling. Grate the orange peel and reserve. Peel the orange, removing any pith, and divide into segments. Peel the plums and apples and cut into pieces. Cook the fruit together with the sugar, lemon and orange peel, Marsala, cloves and vanilla pod for 20 minutes, uncovered, over low heat.
  3. Butter and flour a 25 cm springform pan. Roll out two-thirds of the pastry to line the base and sides of the pan. Fill with the cooled cooked fruit and cover with the remaining pastry, rolled out thinly. Cook in a preheated oven at 180 degrees c /350 f for 45 minutes. Let cool before removing from the pan. Dust with icing sugar,and serve at room temperature with cream Serves 8-10.

Not far from my garden, the sprawling chook house is another spot where I can lose myself totally. I do like our eggs so much. Some of our lovely lunches consist of a herb omelette and a garden salad. As most of my larger chooks are now in semi- retirement, living out their remaining years in relative chook luxury, with an orchard to run in, spare greens from our garden, and a tree to perch in, some decisions need to be made about the blokes. There are too many roosters so two must go. Discussing the methods of dispatch is akin to the opening scenes of Macbeth, ‘If it were done, when ’tis done, then ’twere well it were done quickly’. Gone are the days when some locals would happily take young roosters to eat, or the Cambodians would bid a dollar or two for a fancy rooster, especially the black skinned silkies, at the Mernda poultry auction. That old market site is now a new sprawling suburb. Last week we visited a nearby hatchery in the Yarra Valley and bought 6 female day old chickens- don’t ask what happens to the newly hatched roosters. And don’t ask what the free range egg farmers do with their laying hens after 18 months when they become less productive. It’s a mean old world.

Just out of the oven this morning, sourdough HC Buns. We ate four, with butter. This is the easiest and by far the tastiest recipe I’ve made in a while. It’s a keeper. Contact me if you would like the recipe.

Baci Birthday Cake, Flourless and Decadent.

I love making birthday cakes for others. Often it’s an excuse to dig into my prized stash of good quality chocolate or ground nuts. Most of us will be celebrating our birthdays without fanfare this year and so a delivered cake becomes a small symbolic mark of recognition in lieu of a family gathering. During this pandemic, I’ve been nervously eagle eyeing my exotic ingredient stash. It’s easy enough to refill the dark cooking chocolate container, which is sometimes subject to a midnight raid, but my hazelnut and almond meal supplies are precious commodities, not so easily sourced. I’ve made two versions of this Italian style torta over the last year. One was a classic Torta di Nocciole, famous in Piedmonte, and light as a feather, with only four ingredients, butter, sugar, eggs and ground hazelnut. This version is much richer, with the addition of dark chocolate. It stays fresh under a glass dome and keeps well for a week. Unlike the classic Reine de Saba which tends to sink and crack a little, this cake is firmer and stands tall, so long as you use the recommended sized tin and just laid eggs. It’s very easy to make for that special person in your life and tastes a lot like Baci. xxx

Torta di Cioccolato e Nocciole (senza farina)  Flourless chocolate and hazelnut cake.

  • 200g dark chocolate, 70%, chopped
  • 150g butter, chopped
  • 6 eggs, separated
  • 2/3 cup caster sugar
  • 1 1/2 cups hazelnut meal
  • double cream, to serve
  1. Preheat oven to 170°C/150°C fan-forced. Grease a 6cm-deep, 20cm round cake pan. Line base and sides with baking paper.
  2. Combine chocolate and butter in a bowl and melt gently over a saucepan containing water. Cook over low heat, making sure the base of your bowl doesn’t touch the hot water. Stir until melted and set aside to cool slightly.
  3. Place egg yolks and sugar in a bowl. Using an electric mixer, beat until thick, pale and creamy. Add the chocolate mixture. Beat to combine. Add hazelnut meal. Beat to combine.
  4. Place eggwhites in another bowl. Using an electric mixer, beat until soft peaks form. Using a metal spoon, stir one-third of eggwhites into chocolate mixture. Gently fold remaining eggwhite through chocolate mixture.
  5. Pour mixture into prepared pan. Bake for 1 hour or until a skewer inserted into the centre comes out cleanly. Stand in pan for 10 minutes. Turn out onto a wire rack to cool.
  6. Serve, dusted with icing sugar and cream.

Today is un giorno festivo according to the bus timetable, which simply means it’s Sunday, a holiday, a holy day, as opposed to all the other working days of the week. I’ve arrived in Castellina in Chianti, a small village 15 kilometres from Siena, after a slow but pleasant bus trip through rolling Tuscan hills dotted with small historic settlements with names that resonate more loudly than they should: Ficareto, Colombaio, Quercegrossa, Croce Fiorentina, San Leonino. I mentally translate every printed word that flashes by: names of villages and rivers, traffic directions and road signs, as figs and doves, large oak trees and Florentine crosses, saints, wells and fountains overload my thinking. This habit is mentally exhausting. Last night’s drift of snow left no visible sign in these hills, but it’s still cold and bleak. I’m wearing a thick brown coat- one that I purchased from the bi – weekly market near the medieval wall just outside the centro storico in Siena. It’s my bag lady coat, coarse and graceless, but warm. I feel like an outsider, an imposter, and terribly lonely: this coat doesn’t help. I’ll blame the coat for my sense of estrangement, given that all the Senese look so elegant in their long, fur trimmed woolen coats, not unlike those well- behaved citizens in a medieval Ambrogio Lorenzetti fresco. Not to mention the local taste for expensive, narrow, fine leather or reptile skin shoes, elegant and totally impractical, which don’t fit my broad Australian feet. The stall holders at the Sunday market in Castellina in Chianti are now packing up: I’ve arrived too late to pick up a little antique hand worked pillow case or vintage ceramic plate. The village looks deserted and uninviting. I’m not sure why I came, or where to go, not having done much research before making this lone journey. A church bell chimes in the distance signalling that it’s already past one pm, a reminder to the secular that it’s time to eat. Distant church bells can be comforting or dispiriting, arousing a sense of belonging or sadness. Today’s bells ring melancholy. A sense of cognitive dissonance overcomes me: it seems that the more I learn this language and bathe in the familiarity of Italian sounds, the less certain I feel about my place here. The empty streets loudly announce that everyone else is already seated at a table, either in a family home or warm restaurant, coats now hanging on pegs by the front door, primo piatto about to be served, a bottle of Chianti Classico proffered, as loud and excitable conversation fills the room. The choice on the menu won’t be novel or foreign: Italians are far more comfortable with regional food, or even more precisely, the food of their paese, the local village or district, food that is cooked simply and according to tradition. That’s what is so appealing about Italian food. At times, I’ll admit, Italian regional cuisine can become stubbornly insular and unbending too. Campanilismo, a word derived from campanile, the village church bell, suggests a rigid adherence to one’s local food, method of cooking, ingredients, dialect and ways of doing things: it’s about local pride. The bell tolls for many reasons.

I’m feeling anxious now and walk more desperately. The town is much smaller than I anticipated. If I’m not seated at a table by 1.15, I may miss out on lunch altogether. I’m looking for a small restaurant or trattoria, one that isn’t too well patronised by noisy extended families in elegant clothes, having attended, or pretending to have attended, church. Pretending to attend church is an art form in Italy, a performance that I greatly admire. You don your Sunday best, make a brief appearance at the church with the family, double or triple kiss your friends at the front steps, enter and sit down for a bit, pop out the front for a smoke (male), or chat loudly with your friends in the mid to rear rows (female), while ignoring most of the action at the front altar. The reverberating monotone of the priest echoing around the walls, ‘Santo, Santo, Santo il Signore Dio dell’universo. I cieli e la terra sono pieni della tua gloria’, produces a ready response from the front two rows of pews. High pitched, croaky voices pray in unison, the pious and the permed: small boned and ancient women kneel, rosaried and devout, as they prepare for their future in paradiso.

I peer through the window of a small and very plain looking trattoria and see a tangle of bright yellow pasta lying on a wooden bench, liberally dusted with flour. A plump middle aged woman in a plastic cap adds more to the pile- pasta freshly rolled and cut for today’s lunch. The menu board says Tagliatelle al Burro e Salvia. ( tagliatelle with butter and sage). I don’t read any further, I don’t need to know what’s on offer for the piatto secondo. I walk straight in.

When the eggs are plentiful and spring vegetables and herbs announce their readiness to be picked before bolting to heaven, I think back to that simple meal in Castellina in Chianti. It was elegant yet comforting, it’s success arising from restraint. Freshly made egg pasta is a joy to make and consume soon after. It requires only 2 ingredients: eggs and flour, along with a bit of kneading, resting, rolling and cutting and that’s all. No salt, no oil, no sourdough starter, no colours, no heavy artisan type flours, no chia seeds and no fuss. The sauce should gently coat the strands. Ideally, you want the fresh eggs to sing, their golden yolks colouring the mixture. At this time of the year, fresh pasta is almost saffron in colour, the eggs are so good. In the case of Tagliatelle with Butter and Sage, the sauce comes from lightly browned butter in which you crisp a few sage leaves. You could add a grating of nutmeg. It is served with grated parmigiano. Authenticity, although a fraught concept, requires you to stick, as much as possible, to the traditions of a country’s cuisine, if you have the ingredients on hand to do so. Once you start fiddling with a recipe, expect the results to speak a different language. Restrained is a good word to describe the elegance of Italian food. I hear those bells ringing. Time to make fresh pasta.

April was busier than usual with children on school holidays, beach days, Easter, followed by Anzac Day. I’m rather pleased that May has come around and I can get back to my home kitchen full-time, with some mellow Autumn cooking, interspersed with trips to the library. Anzac day, April 25th, demanded a few biscuits to mark the occasion. It’s a baking tradition in my kitchen as it was in my mother’s until recently. My Anzac biscuits are flat and crispy, the way I like them. I pop them in an old Anzac tin in the hope that they might last a few days. They never do. The Department of Veteran affairs has firm rules about Anzac biscuits. You risk a large fine if you attempt to call them cookies or play with the original recipe, or misappropriate the name in a commercial business. While not patriotic at all, I still believe in the uniquely Australian/New Zealand aspects of this day. Anzac biscuits are so popular with my extended family, I should bake them more often. For flatter, brown and crispy Anzacs, slightly reduce the percentage flour and add more brown sugar.

I whipped up these yeasted buns for Easter this year: unfortunately there was little time to concentrate on feeding a leaven for a sourdough version. This lot had extra fruit and were glazed with quince jelly. Unlike the supermarket versions which can still taste fresh after a week, ( or maybe even a month), these buns are preservative free so they don’t keep for more than a day or two. The left over buns landed in a rich bread and butter pudding.

One vegetable that grows very happily in this awful drought is chilli. They ripen in autumn and will continue to enjoy life in the garden until the first frost arrives. I use a few fresh, but the bulk of the crop is dried and ground into flakes for the year ahead. I also make chilli oil. Small batches are better as the oil can go rancid. This small jar will last a month or so. A nice drizzle for a pizza or crab pasta.

It’s garlic planting time. When you see sprouting garlic around the markets, you know the time is right. I usually plant 300 each year. This basket of 100 is a mixture of my own garlic and some Australian grown garlic from the market. Three separate plantings over May will ensure a staggered pick.

The chooks are pumping again, and suddenly I have far too many eggs. I have sent Mr Tranquillo the recipe, again, for Crème Brûlée, purchased some second-hand shallow terracotta ramekins, and I have also given him a blow torch for caramelising the tops. It’s his favourite dessert so I’m hoping it becomes his signature dish. I really do like it too.

Autumn also sees the return of pasta making in my kitchen. Three eggs and 300 grams of flour, preferable tipo 00, or a mixture of tipo 00 and semola rimacinata, or just plain flour if that’s all you have: no oil, no salt and no other additives, according to Italian nonne. This will make you a truckload of fresh pasta. I fiddled with some parsley leaf pasta in these lasagne sheets. Not worth the effort and such a 90s thing to do.

It’s pastie time again. The filling in these pasties was fairly Cornish- onion, carrot, parsnip, potato. I found this puff pastry hard to digest. The sheets were left over in my fridge. For my next lot, I’ll focus on a good home-made short crust pastry.

There’s always soup in my kitchen. We don’t wait for Autumn or cooler weather to make good soup- we have it all year round. I am passionate about the building of a good soup. My soups are never randomly made. I like colour combinations, creating different flavour bases via a finely chopped soffritto, and seeking pleasing presentations so that you mangiare con gli occhi, or eat with the eyes before tasting the soup. Today, I wanted to paint a monochromatic soup in white and pale green, a contrast to today’s earthy dark rye bread. After building a soffritto of finely chopped garlic, fresh rosemary, a few anchovies and a pinch of ground chilli, I added a pile of cooked cannellini beans, shredded pale green cabbage ( wongbok cabbage which cooks quickly), and a handful of Pantacce pasta. A little grated Parmigiano Reggiano at the table and buon appetito. It’s ready.

Another cold day soup was built with Autumn colours, a typical Ribollita style soup. The soffritto build included onion, carrot, celery, and garlic. Once softened in EV olive oil, I added borlotti beans, more carrot, shredded cavolo nero, and some halved cherry tomatoes. This dense soup was served with a hunk of white sourdough.

A new cake has come into my life. I love flourless cakes that aren’t too cloying. This one has four ingredients ( butter, sugar, walnuts, eggs)  and can be whipped up in a few minutes. It is dense, is a great keeper and très French. The recipe for Walnut Cake from Perigord can be found here.

Easy Summer Zucchini Pies

It’s on again. Mid January in Melbourne brings soaring temperatures, and for those fortunate souls on holiday, lazy days inside watching the Australian Open tennis (one ball game I can tolerate) or reading a pile of novels. AND, of course, zucchini! When the pile of green zeppelin starts to stare me down, I force myself off the couch and into the kitchen, looking for more novel ways to cook this bountiful vegetable.  Small zucchini pies, or Kolokythopitakia, are a tasty useful alternative to the more common place Spanakopita ( Spinach and Fetta pie). The recipe is also a good way to use around 7 zucchini. Light and nutritious, they go well with salads. I stashed two in the freezer for next week’s heat wave. My recipe uses kefalograviera cheese, a nice change from fetta, and one I recommend you try in this recipe. You can use the remaining kefalograviera to make saganaki.

Kolokythopitakia. Zucchini summer pies, warm potato salad, grilled peppers.

Kolokythopitakia (Small Zucchini pies). This recipe makes four small pies of around 12 cm/ 5 inch diameter.

  • 700 g zucchini
  • 8 sheets filo ( fillo/phyllo) pastry ( I always seem to have this quantity left over in the fridge after making a big family pie)
  • 1 cup grated kefalograviera cheese
  • 1 cup mixed fresh herbs, finely chopped ( eg dill, mint, parsley)
  • 6 spring onions, finely sliced including most of the green
  • 3 eggs, lightly beaten
  • salt, pepper
  • butter or olive oil for brushing the filo leaves
  • sesame seeds

Method.

Preheat oven to 180c

  1. Grate the zucchini with a box grater or the largest hole of a food processor grating disc. Place in a colander, lightly salt and toss through. Cover the mixture with a small plate, weight with something heavy, then place in the sink or over a bowl to drain. After 30 minutes or so, squeeze out as much liquid as possible and add the zucchini to a large mixing bowl.
  2. Grate the kefalograviera on a large grater. Add it to the zucchini along with the chopped herbs, the chopped spring onion, and eggs. Mix well.
  3. Lay the 8 sheets of filo pastry on the bench and halve them. You want 16 pieces in all which will be shaped about 27 cm X 21 cms, almost a square shape. Stack them up and cover with a damp tea towel, especially if the day is hot and dry as they become brittle and tear easily.
  4. The pies need four filo sheets each and will be used for the base and the top. Using small pie tins with removable bases, radius 12 cm and height 3 cm, paint the insides with melted butter or oil. Lay one filo pastry sheet into the tin, centering the sheet so that the extra pastry hangs evenly around the outside. Paint this sheet with butter or oil then continue with 3 more sheets, making sure that you place the sheets in such a way so that the overhang lands in a different corner with each sheet.
  5. Repeat with remaining tins.
  6. Fill each pastry lined pie tin with the filling. Then bring the hanging pastry leaves over the pie filling, one corner at a time and paint each pastry sheet with melted butter or oil as you go. When complete, sprinkle with sesame seeds.
  7. Bake for 20 minutes at 180c. Leave for a few minutes before turning out.
  8. Serve with salads.

Spring Gardening and Green Recipes

‘Eat your greens’ was a familiar reproach from the elders around my childhood dinner table, as the boiled beans lay listlessly on the plate at the end of a meal. My father tried to lighten the mood by inventing riddles to encourage or distract the young diners, “Beans were made for queens”, or rhymes about historical events. There was nothing appetising or appealing about cooked greens in the Australian kitchens of the 1950s and 60s. All the culinary devotion was given to the meat, the centre piece of all our meals except on Fridays. The range of greens was fairly limited and included beans, peas, cabbage, brussel sprouts and lettuce, that is, iceberg lettuce. Broccoli, broccoletti, cima di rape, kale, cavolo nero, fennel, asparagus, broad beans, radicchio, bok choy, chinese broccoli, choy sum, wong bok and the vast variety of lettuces came to Australia much later. Silverbeet appeared occasionally, always served under a blanket of bechamel. Parsley was the main herb grown, the curly variety used to decorate scrambled eggs or a casserole, never featuring in its own right as a pesto or in tabouleh. Basil Genovese was still to make itself known and loved, followed by Thai and Greek basil. And then came Japanese herbs and leaves, shiso and mustard greens, mizuna, as well as the wild pungent rocket, rucola selvatica, that pops up everywhere, anise, coriander, lemon grass, the green tops of turnips and radish, the leaves of pumpkins, and the chicory family of greens.

All the greens of the world have their moment of glory in my garden and I would be lost without them. Most grow wild now. They are the star of many a dish, or are the inspiration for others. My green garden is most prolific in Spring and now, as I pull out the last of the broad beans, and watch the parsley and silverbeet bolt towards heaven, I’ll share a few simple green recipes.

These silverbeet and haloumi fritters were popular for lunch. They are fast and easy to prepare. I’m tempted to call them gozleme fritters as the taste is similar to the filling of a Turkish gozleme. Some oil softened onion could be a good addition to the mix. I always keep a tub of brined Haloumi in the fridge and find that buying it bulk in a Middle Eastern store is economical. A big tub lasts a year.

Silverbeet and Haloumi Fritters

  • 180g haloumi cheese, coarsely grated
  • 2 cups silverbeet, finely shredded
  • 2 Tablespoons mint, finely shredded
  • 1 lemon, finely zested
  • 2 eggs
  • 1/2 cup plain flour
  • 2  Tablespoons EV olive oil

Grate the haloumi on a box grater ( large hole) into a bowl. Remove the white stalks from the silver beet and finely shred then add to the bowl. (Save the stalks for a soup or gratin). Add the mint, lightly beaten eggs, and flour. Mix well. Heat the oil in a large frying pan. Scoop large tablespoons into the pan, and slightly flatten as you go. Don’t overcrowd the pan. Gently turn to brown both sides and place them on a plate with paper towels to absorb the oil. Serve with a lemon wedge or yoghurt.

The broad beans starred in many a recipe during Spring, but this dish, also using haloumi, was popular.

Smashed Broad Beans with Haloumi, mint and lemon.

  • up to 1 kilo broad beans
  • 150-200 g haloumi
  • one garlic clove
  • sea salt, black pepper
  • EV olive oil
  • mint
  • lemon wedges

Shell the beans and cook briefly in a pot of boiling water for 1-2 minutes. Drain and submerge them in cold water to stop the cooking. Remove the skins by popping the green centres out between your thumb and forefinger. (This is an easy but tedious task, and one I hand over to my kitchen hand, Signore Tranquillo, who is an uncomplaining soul.) Smash most of the beans in a mortar and pestle, adding some finely chopped garlic, salt and pepper and a dash of olive oil. Meanwhile fry rectangular pieces of haloumi in hot oil. They don’t take long to turn golden. Prepare the serving dish with salad leaves, then the smashed fava beans, then the fried haloumi and torn mint leaves. Place lemon  wedges on the side.

Fig Semifreddo, a Magic Dessert.

I have a backlog of good recipes to share with you, dear reader, as I’ve been rather quiet on that front for a while. Thanks to a flurry of small luncheons and dinner parties, I was compelled to lift my game and search out dishes that might even excite my own jaded appetite. In sharing them with you, I also benefit by adding them to a safe place for the future, my recipe file. Most of these new recipes involve seasonal fruits, especially figs.

The fig season has given us one month of sweet eating. Every day I take an old hand-woven basket down to the orchard and carefully select a few ripe specimens. They continue to ripen on the bench for another day, but the window of opportunity passes quickly. Other than scoffing them down with some soft gorgonzola dolce and toasted walnuts, I’ve been hunting and collecting the best fig recipes for desserts, jams and sweet/savoury salads. 

We have two varieties in our garden- the commonly grown Brown Turkey fig and the green-skinned White Adriatic fig, sometimes called the strawberry jam fig, in reference to its sweet jelly like red flesh, excellent flavour and flesh quality. Both have their place, although I have a preference for the Adriatics. The leaves make great serving platters, or are useful for covering up various body parts or embarrassments. They are easy to grow, don’t need pollinating or pruning, but prefer a non windy site and plenty of water in late Spring and Summer. If you have room, I recommend that you plant one, if only for the thrill of making figgy desserts.

I’ve only recently discovered the joys of making semifreddo since the demise of my ancient ice cream maker. I might just stick with this faster and easier concoction in the future. The following recipe is a beauty, especially for those who are blessed with a productive fig tree as well as lots of home laid eggs.

Semifreddo di Fichi /Fig Semifreddo

Ingredients

350 g fresh figs
125 g brown sugar
7 egg yolks
100 g caster sugar
350 ml whipping cream
3 tsp fresh lemon juice

Method

  • Wash the figs, remove the stems (keep the skin on) and finely dice. Place them in a non-stick pan on a high heat, stirring constantly. After a few minutes add the brown sugar. Reduce the heat to a low simmer and allow the figs and brown sugar to caramelise for around 20 minutes until you have a jam-like consistency.
  • Stir in the lemon juice and remove the pan from the heat to cool to room temperature. Once cooled, add the 50 ml of cream and gently work it into the jam.
  • In a stand mixer with whisk attachment, whip the egg yolks on high for 10-15 minutes until they triple in volume. Add the caster sugar slowly, ensuring it is well mixed with the eggs. The mixture should be quite thick.
  • In a clean bowl, whip the rest of the cream to soft peaks. Then slowly fold the cream into the egg mixture, being careful not to lose the volume.
  • Gently fold the fig jam into the cream.
  • Place a large sheet of cling wrap over a plastic or metal container. I used a bread loaf tin, measuring 24cm L by 11 cm W and 10 cm D. Pour the cream into the container, filling to the top, leaving the cling wrap to hang outside each side. Cover well with tin foil and place in the freezer for at least 12 hours. You can make this dessert a day or so ahead.
  • About 10-15 minutes before serving, take the tin out of the freezer and flip it upside down onto a long tray before slicing it.

Make a compote of lightly poached figs. Remove the figs after a few minutes of poaching then reduce the sauce then strain it. Serve with the semifreddo.

  • 2 cups water
  • ¼ cup honey
  • 2 tablespoons brown or granulated sugar
  • ½ vanilla bean, split lengthwise and seeded (optional)
  • 1 cinnamon stick
  • 8 or so figs

Plum Clafoutis, a Light Summery Pudding

Another day, another plum recipe. Will my pile of plums ever shrink! This classic Clafoutis recipe is based on Julia Child’s cherry Clafoutis. As the cherry season never really got into full swing this year, I found this plum version to be a wonderful substitute. When fruit other than cherry is used in a Clafoutis, such as pears, apples, plums, prunes, blackberries or other berries, it is called a flaugnarde. I can see a fig and blackberry flaugnarde coming my/your way soon. This plum version resembles that lovely winter dish from Brittany, Far Breton. Left over Clafoutis makes a wonderful breakfast.

Ingredients

  • 500 gr firm, ripe plums
  • 1¼ cup milk
  • 1/3 cup sugar
  • 3 eggs
  • 1 tablespoon vanilla extract ( or 3 teaspoons or 15 ml)*
  • 1/8 teaspoon salt
  • ½ cup flour
  • 1/3 extra cup sugar
  • icing sugar for dusting

Directions

Preheat oven to 180ºC. Cut plums in half and sprinkle with some sugar. Set aside.

Place all the ingredients except the last 1/3 cup sugar in a blender in the order they are listed. Cover and blend at top speed for 1 minute.

Butter the base and sides of a low sided 8 cup gratin dish. Pour in a shallow layer (1.2cm) of batter and put in a moderate oven for a few minutes until a film of batter has set in the bottom of the dish. Remove from heat. Place plums over the batter and pour on the remaining batter; smooth the surface with the back of a spoon.

Bake in the middle rack of the oven for about an hour, or until the Clafouti has puffed and browned on top. Check with a toothpick to that it comes out clean. Sprinkle the Clafouti with icing sugar before serving. Serve with runny cream or ice cream.

*About Tablespoons. As Julia child was an American chef, she would have used an American Tablespoon, naturally. But did you know that American tablespoons are smaller (15 ml)  than Australian tablespoons (20 ml) ? 1 American tablespoon = 3 teaspoons, whereas 1 Australian tablespoon = 4 teaspoons.

Waiting for Cherries. A different Clafoutis

One of the joys of Christmas, as far as our seasonal food calendar goes, is the arrival of fresh cherries in abundance. The season usually peaks in mid to late December but this year they are appearing more slowly, thanks to a very cold Spring. The plump, expensive boxes have hit the shelves, but I am still waiting for the big flush, when cherries appear in luscious piles on fruiterers’ tables, dark, plump and cheap, the Tinker Tailor Soldier Sailer cherries, to hang over ears or slurp out of the bag before reaching home, as well as a few kilos to preserve in Brandy, or to stud a Clafoutis.

In the meantime, this unusual recipe for Cherry Clafoutis caught my eye. It utilises dried sour cherries, reconstituted in Cognac. Or perhaps the Cognac caught my eye first, a Christmas life saver of a drink for those who feel a little stressed.

Preserved Cherry Clafoutis.

  • 150 ml pouring cream
  • 1/2 vanilla bean, split and seeds scraped
  • 2 eggs
  • 85 gr caster sugar
  • 1 egg white
  • 25 gr ( 1/3 cup) plain flour, sifter
  • icing sugar to serve
  • clotted cream, or mascarpone whipped with cream, or just cream, to serve

Preserved Cherries

  • 60 gr dried cherries
  • 100 gr white sugar
  • 3 ml Cognac

For preserved cherries, combine dried cherries in a saucepan with sugar, Cognac and 150 ml water and cool on low heat for 7-8 minutes until liquid is syrupy. Watch that the liquid doesn’t turn to toffee.

Preheat oven to 180C. Heat cream and vanilla bean in a saucepan over medium heat, bring to boil, remove from heat and cool. Remove vanilla bean. Using an electric mixer, beat eggs and sugar until light and creamy. In a separate bowl, whisk egg white until soft peaks form, then add the cream mixture and fold to combine. add the flour and fold in, then slowly beat in the egg mixture.

Spoon cherries into a lightly buttered and sugared 6 cup ovenproof baking dish. Pour batter over cherries and bake for 10-15 minutes or until golden and cooked through. Serve immediately, dusted liberally with icing sugar and with cream.

This version of clafoutis is very light and more like a souffle in texture, so it is best to eat it straight from the oven, though I must mention that it is rather nice at 6.30 am, eaten straight from the fridge, which is the quiet hour when I like to write and eat leftovers. The recipe is also handy for all other seasons, and may suit the cherry- deprived in the Northern Hemisphere. Of course you can use fresh cherries or ones you preserved from last year.

Eggs with Dukkah. The Perfect Lunch

Have you noticed that eggs are back in fashion and are considered the perfect protein, high in all the omega numbers and good for you? The belief that eggs equal cholesterol is now discredited and considered to be another food myth. Knowing the source of your perfect protein is important though. Choose eggs from suppliers that give their hens a good time, with the run of a grassy paddock, and a varied diet of organic feed. It’s worth spending an extra dollar or two on these parcels of total goodness.

Eggs make the perfect lunch or quick dinner and are very satisfying, especially for those folk who follow a vegetarian diet. Lunch time egg specials include hardboiled eggs sprinkled with Dukkah, or rosemary salt, or draped in a parsley pesto, or chopped through a salad of endive leaves then tossed in a garlicky mustard dressing. I love them cracked onto a bed of peperonata in a little rustic terracotta dish, then baked in the oven till set. Hard boiled eggs make for a simple tomato based Indian curry, served with rice. The Chinese chefs in Yunnan province stir fry them with tomatoes then add some soya sauce, while the French poach them perfectly and place them on top of a butterhead lettuce salad, with croutons and a good dressing. Two eggs tossed with a generous handful or two of finely chopped parsley and a grating of good pecorino or parmigiano makes a fast little lunchtime frittata. Made them paper-thin, then roll them up and serve in slices for a Spring starter.

Making dukkah once a month is a cheap way to add oomph to a lunchtime egg.

  • ¼ cup of whole almonds (or hazelnuts or macadamia)
  • 2 Tablespoons coriander seeds
  • 2 tablespoons white sesame seeds
  • 1 tablespoon cumin seeds
  • ½ teaspoon fennel seeds
  • 1½teaspoons peppercorns
  • ½ teaspoon dried mint
  • ½ teaspoon fine salt

Serve with extra flaked salt and EV olive oil at the table.

Heat a large frying pan over medium heat. Add the nuts and toast until browned and fragrant. Transfer to a small bowl. Repeat with the other seeds and peppercorns, toasting each separately and allowing them to cool completely. Put the peppercorns in a mortar and pestle and pound until crushed. Add the nuts and seeds, along with the mint and salt and crush to a course consistency. ( I used  almonds and a coffee grinder for the nuts, then ground the toasted seeds, as they cooked, one at a time in the mortar).

Peel the eggs. Sprinkle with Dukkah, drizzle with oil, and add a tiny bit of flaked salt such as Maldon salt to taste.

Dukkah will keep in a well sealed jar in a cool place for up to one month. Cool!

The following method produces the most edible boiled eggs. A bit of care makes all the difference.

  • Put the eggs in a saucepan of cold water eggs, covering them by 2.5 cm/1 inch.
  • Bring the water to a rolling boilSet the pan over high heat and bring the water to a boil, uncovered.
  • Turn off the heat and cover the pan. As soon as the water comes to a boil, remove the pan from heat and cover the pan.
  • Set your timer for the desired time. Leave the eggs in the covered pan for the right amount of time. This depends on whether you want soft-boiled or hard-boiled eggs. For slightly runny soft-boiled eggs: 4 minutes. For custardy yet firm soft-boiled eggs, 6 minutes. For firm yet still creamy hard-boiled eggs, 10 minutes.
  • Eat them hot or submerge the eggs in a few changes of cold water for a minute or two before cracking and peeling. They last for 1 week in the fridge, unshelled.
