In My Kitchen, August 2021

It’s challenging to write about my kitchen exploits without resorting to the L word. L is for lockdown, of course, and Melbourne has had it’s fair share, with 234 days since the pandemic began, but who’s counting. One of the crazy things that happens when we come out of lockdown is the excitement of shopping for food in a venue of one’s choice, which for me simply means anywhere but the local Coles supermarket. It’s like panic buying in reverse. The post -lockdown shopping list is always a huge one. My haul just after Lockdown 4 lasted very well and took me through to Lockdown 5, thanks to the spare fridge running in the laundry. My solar power app indicates that my fridges hardly make a dent on my power consumption. Unlike that wonderful cultural habit seen in parts of Asia and the Mediterranean where shopping for perishables takes place on a daily basis, lockdown style shopping is the antithesis.

I know that my food preferences have radically altered since 2020, the year when life changed for everyone. We eat more simply than ever, waste less, and write a weekly menu which we follow unless I get side tracked. I rarely eat out these days, but when doing a big post lockdown shop, I always buy the same treats for lunch- a big fat samosa or a freshly made gozleme.

Over the last two months, we’ve probably eaten more Asian than Italian food and I’ve developed a real fondness for cooking in a Vietnamese claypot.

I’ve also discovered an excellent fish sauce, Nước Mắm Nhĩ 3 crabs fish sauce which has more depth of flavour than the cheaper brands. The search for a better quality fish sauce began after I read ‘New Flavours of the Vietnamese Table ‘ by Mai Pham, 2007. There is a traditional saying about fish sauce, ‘without good fish sauce, the father’s daughter will not shine‘. Mai Pham says she has always been struck by this saying.

On one level, it points to the Vietnamese view of the universe and how everything is seen from the family’s perspective. The implied pronoun- in this case ‘she’- is replaced with the ‘father’s daughter’. On another level, it suggests that without good fish sauce, the quintessential sauce of Vietnamese cuisine, food can never taste good, no matter how talented the cook. “

I know, dear reader, that, like me, you’re probably thinking that the daughter’s skill as a cook would make her more marriageable, and that her role in the traditional family was defined by this. Nevertheless, this particular fish sauce is good, and you only need to use a few drops to transform all sorts of dishes that require a little salt. It makes a wonderful nuoc cham dipping sauce, but I also add a few drops to an Italian style pasta with prawns. But please don’t tell the Italians. Non autentico ma buono!

Another very tasty addition to this spaghetti prawn dish is prawn oil. This is a trick I learnt from Adam Liaw’s ‘The Cook Up’ on SBS. After de-heading and shelling your prawns, gather the heads and shells, fire up a wok with a little oil, and toss the heads around until bright red, then slowly add more oil. The addition of a little tomato paste adds to the colour of the oil. Once made, drain the brightly coloured oil into a jug or jar, then start cooking your garlic and prawns in some of this oil, which will coat the strands of spaghetti with a umami loaded pink gloss.

Above are some of the ingredients that add excitement to my non supermarket shopping. I tend to use the rice noodles in Char Kway Teuw, my favourite Malaysian dish, or in Thai Drunken noodles or Pad See Ew. The Sichuan Chilli Douban sauce is reserved for that Sichuan classic, Fish Fragrant Eggplant, while the little jar of XO mushroom sauce is a wonderful base for any claypot concoctions such as mushroom and tofu.

Indian lunches are always welcome on a freezing day. I prefer a main meal for lunch, with a simple soup for dinner rather than vice versa. This is one of the changes that came about since lockdown- big lunch, small dinner. The main dish here is Moong Dal with spinach, accompanied by lemon rice, and a left over Muttar Paneer from the previous day. Did you know that dal means ‘split’ in Hindi? And Moong/mung means yellow, though whole Mung beans are green. As a general rule, dried split beans don’t need soaking while whole beans do.

Eating with the eye is a rather important idea, especially when serving a simple cheap meal such as pea soup. These large yellow dried split peas, unlike the tiny yellow moong dal, definitely need pre -soaking. This is a vegetarian version of that classic pea soup I grew up with, which was loaded with salty ham bones or hocks. In this version, the flavour comes from the vegetables, ( onion, parsnip, celery, carrot, swede, turnip and parsley) the salt from a small rind of parmesan, the latter added after pureeing and re-warming. The extras on top add more flavour and texture- garlic sourdough croutons and fresh marjoram leaves.

During one of those treasured spaces between lockdowns 4 and 5, we headed into the city with Daisy and visited every Korean and Japanese shop in Melbourne’s CBD. She was keen to eat at a Sushi Train restaurant, one of the highlights of the day, after spending her hard earned pocket money at the expensive KPop store. This is my little non- kitchen addition to this month’s post, though it is food related. My message to all – enjoy these moments of freedom, the breathing spaces outside of lockdown, which is how we measure time now. Do something special, especially with the little ones who’ve had their world turned upside down.

Summer Buddha Bowls

Buddha bowls have made a mysterious appearance around here lately. They are deceptive little meals. Initially, they seem easy enough- shove a few things in a bowl, grab a fork or chopsticks and plonk yourself and filled bowl in front of Netflix, then veg out – literally. But once you get into the building stage, you may find yourself led down a culinary rabbit hole, creating more and more interesting elements to complement your initial idea.

Buddha bowls, otherwise known as macro or hippy bowls, have been around for a few years, spreading from the inner suburban haunts of the hipster to outer suburban cafés and the countryside. According to the urban dictionary, ‘Buddha bowls are packed so full that they have a rounded belly appearance on the top much like the belly of a buddha’. While I’m not one for succumbing to food trends, I love a hippy macro buddha bowl in summer, so long as certain conventions are followed.

A fine Buddha Bowl is one where the individual elements and flavours complement each other culturally and ethnically. I tend to apply this general principle to other plated meals too. I don’t like mixing Middle Eastern foods with Asian, or Mediterranean with Indonesian, though I have eaten some culturally mismatched foods in cafes which make me cringe. I like to start with a particular cuisine- Japanese, for example, then ferret around the pantry and fridge finding elements that build on that theme. You could add more guidelines: there should be contrast in colour and texture and the composition should be appealing to the eye and not look like a dog’s dinner. Try to include one grain, preferably a wholegrain, the macro element, and some form of protein- such as egg, fish, pulses, beans, or tofu, as well as fresh uncooked vegetables, something pickled, seeds or nuts, and a good dressing. Your bowl doesn’t have to be overflowing like a fat Buddha- a few contrasting elements with some good flavour is all you need.

Today’s macro hippy buddha bowl followed a Japanese path and tasted clean and sustaining. It  included:

  • brown rice, cooked, cooled a little, then dressed with sushi dressing and black sesame seeds
  • tofu chunks, fried, then glazed in a miso and mirin sauce
  • pickled cucumber and red onion with ginger for crunch
  • fresh mustard leaves, shredded
  • young radishes

It was one of my ‘holier than thou’ bowls, perfect for the post-Christmas season, the umami element, the warm miso sauced fried tofu, saving the dish from total puritanism. I also considered adding some torn nori. Steamed green beans tossed in browned sesame seed sauce might have gone well too, or a sliced avocado. On market day, a crunchy fried miso glazed small fish would be a good addition. The thing is to use what you have that sits comfortably within a particular country’s culinary framework and that includes using a neutral flavoured oil, and not olive oil, if heading down the Asian path.

When does a bowl become a share platter? New terminology for old ideas. The Medit bowl made from Puy lentils, dressed in olive oil and sherry vinegar, parsley, shallots, goat’s cheese, black olives, toasted almonds. Served with croutons.

Last week’s bowls included a Mediterranean bowl for two ( pictured above) and an Indian feast. To be fair, Indian bowls are as old as Buddha himself. While the rice and dhal are cooking, begin creating small add ons- baked cauliflower with whole cumin seeds, toasted almonds, hard-boiled eggs, and a simple raita, made from yoghurt and cucumber or mint. At this time of year, fresh mango chutney adds a seasonal sweet touch.

Today’s pickle was made as the rice cooked. It goes well with Japanese meals and makes a nice crunchy change from the commercial pink pickled ginger. It is not one to store.

  • 2 small cucumbers, finely sliced
  • one red onion, finely sliced
  • 1 cup rice vinegar/ or apple cider if improvising
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons minced/grated ginger.
  • pinch of dried chilli flakes.

Layer vegetables in a small jar. Mix the sugar, salt and vinegar, stir until blended and pour over. Leave for one hour.

Part of today’s culinary rabbit hole- a crunchy fresh pickle.

Keralan Lemon Rice

The travel brochures in Kerala refer to their State as “God’s own Country” and I have to agree. Bordered on one side by the Malabar Coast, there are many spots along that stretch of sea to while away the hours, Varkala being the most famous. The breeze blows gently from the Arabian sea, the people are friendly, it is the home of Ayurvedic medicine, the food is sensational and the fertile jungle, reaching up into the tea gardens at Munnar, provide the world with the spices we love- cardamom, vanilla, black pepper, along with other goods such as coffee, tea, cashews, rubber and coconut. Like most folk who visit that State in India, we arranged to spend two days travelling on a rice barge through the backwaters,  a ‘network of  interconnected canals, rivers, lakes and inlets, a labyrinthine system formed by more than 900 km of waterways.’ Kettuvallums, old restored rice barges, are houseboats which travel very slowly around the tranquil backwaters near Alleppey (Alappuzha), passing colourful villages, fertile agricultural scenery and larger lakes. It is easy enough to organise your trip once you are in Alappuzha. There are many agencies around the town or be guided by the recommendation of your guest house owner.

Our houseboat tour for two included all meals, a comfortable bedroom with en suite, two living areas, one with a dining table, the other, a deck with two comfortable cane chairs to watch the world go by. You may need to do some serious exercise after the trip as the meals are generous. We enjoyed a mostly vegetarian diet with the occasional fish when available. The meals included rice, chappatis or puri, four curries and raita, and fried river fish. The cook, a young man trained to work in hotel restaurants, would negotiate a fish purchase along the way by popping into backwater village markets for fresh supplies. On one occasion, he came back with some huge fresh water marron, which he cleaned and then rubbed with a wet masala mix to marinate for some hours before frying. I loved watching him prepare our meals.

Lemon rice appears on the menu often in Kerala. It makes a perfect side dish to fried fish or an egg curry. It is  also a very soothing dish: there are never any leftovers.

Lemon Rice

  • 1 tablespoon coconut oil
  • 1 teaspoon brown mustard seeds
  • ½ teaspoon cumin seeds
  • 2 teaspoons blanched cashews, coarsely chopped
  • 2 teaspoons channa dal
  • 3 cups (330g ) cooked rice
  • 1 teaspoon minced ginger
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • 1 tablespoon chopped coriander leaves
  • 2 teaspoons or more of lemon juice
  • 1/2 teaspoon asafoetida

Heat the oil in a large frying pan over a medium heat, then add the mustard and cumin seeds. When they start to splutter, add the cashews and channa dal, and stir over heat to roast. When the nuts begin to colour, add the hot rice, ginger, turmeric, salt and freshly chopped coriander. Stir thoroughly to combine.

Sprinkle with the lemon juice and asafoetida to serve.

Notes.  The success of this dish relies very much on all the little crunchy bits which are roasted at the beginning. If you don’t have channa dal, use masoor or mung dal instead. Broken raw cashews are often found in Middle Eastern stores. Use long grain or medium grain rice, not basmati.
