Maccheroni Rigati with Sweet Pepper Sauce

Since beginning my little pasta series, Pasta della Settimana, readers have asked me all sorts of pasta questions. Is pasta fresca (fresh) better than pasta secca, (dried)? How do I choose a good dried pasta without paying a fortune? And the answer always comes down to the same thing: taste a variety of pasta brands and discover the difference between good and bad pasta. Commercial ‘fresh pasta’ sold in plastic packets in supermarkets is stodgy, far too thick and is inedible, despite the alluring sounding stuffings. It tastes just like the wrapping it comes in. If you want good fresh pasta, either make a batch yourself or find a reliable source of fresh pasta that is not too thick and floury. A good quality dried pasta beats a badly made industrial fresh one any day. Look for dried pasta that has a rougher surface and has been manufactured using bronze dies, or ‘Trafilatura al Bronzo’, meaning it has been extracted through bronze and not teflon dies, the latter more commonly used. A good pasta should hold its shape when cooked, the cooking water should not become overly cloudy and it should be firm and not floury to taste.

The other key thing about pasta is to choose a shape that marries your sauce. Short pasta with ridged lines (rigati) are good to hold creamy sauces. Look for this word on the packets (lisce means smooth, the opposite of rigati). Other golden rules include:

  • Never overcook pasta
  • Never over drain pasta, unless you are saucing with a thin brothy sauce or seafood. Pasta needs to be moist to marry well with the sauce.
  • Never over sauce pasta.
  • Use fresh, seasonal ingredients.
  • Find the best quality ingredients, including pasta, parmesan and EV olive oil that is fresh. When it comes to olive oil, check the use by date and choose one closest to the oil’s date of harvest and crush, which should be mentioned on the tin or bottle. In Victoria, Australia, Cobram oil is released in May each year so it’s easy to check the freshness annually. Many European oils often end up in famous delis with close to rancidity dates. Buyer beware.

In late Autumn, red peppers – bell peppers, pepperoni or capsicums- depending on where you come from, are at their peak and can be purchased in markets rather cheaply. They are far more suited to a sub- tropical climate: this is one vegetable that I prefer to buy than waste 5 months waiting for one two to ripen in my own orto.

The following recipe is a luscious creamy sauce which makes a great accompaniment to grilled fish as well as a pasta sauce. It keeps well, covered with a film of olive oil, for two weeks in the fridge.

This makes enough pasta sauce for 4 serves or a 225 g jar.

  • 4 large red peppers ( capsicum, bell pepper, pepperoni)
  • 65 g ground almonds or almond meal
  • zest of 1 lemon
  • 4 Tablespoons EV olive oil
  • 1 garlic clove
  • 2 teaspoons balsamic vinegar
  • 50 g freshly grated Parmigiano Reggiano or Padano
  • sea salt, black pepper to taste
  • pasta to serve, around 80 -100g per person
  • fresh basil leaves to serve.
  1. Preheat oven to 200c. Place the peppers on a baking sheet and roast them in the oven for 25 minutes. turning once during cooking. They should become charred and deflated. Remove and place them in a plastic or paper bag to cool.
  2. When the peppers are cool, peel off the skin and remove all the seeds. Try to save the pepper juice by holding them over a bowl.
  3. Put the pepper flesh and all the other ingredients into a food processor and whizz until blended, smooth and thick. Taste and adjust seasoning.
  4. Cook your chosen pasta, such as rigatoni, penne rigate or maccheroni rigati. Reheat the sauce gently in a wide and and deep frying pan then add the cooked pasta to the sauce, tossing well to completely cover.
  5. Serve hot with torn basil leaves.

    Sides- a good bitter leaf salad and sourdough bread, Panmarino.

Italian Wholemeal and Honey Bread / Pane Integrale

Bread has played a central role in the history of La Cucina Italiana and everyday life.: this is reflected in the endless array of expressions concerning Pane (bread) . Consider just a few of these,

  • Senza il pane tutto diventa orfano– without bread, everyone becomes an orphan.
  • Uscire di pane duro– to leave behind hard bread or to have a change for the better.
  • Essere pan e cacio- to be like bread and cheese, ie thick as thieves.
  • churigo come il pane, medico come il vino. Look for a surgeon who is like bread ( ie young) and a doctor like wine ( ie old).
  • E’ buono come un pezzo di pane. He’ s like bread, He’s a good person.
  • L’ho comprato per un tozzo di pane. I bought it for a piece of bread, (a bargain)
  • pane al pane e vino al vino , to call a spade a spade.

But wait there’s more. I’ll spare you the rest.

My most recent loaf, a wholesome, nutty Pane Integrale con Miele  ( wholemeal with honey) reminds me of a crusty loaf I bought years ago in a small Umbrian hill town. The crust is crunchy and dark, but not too much so, and the open textured bread is easy to digest, which is surprising for a loaf made of 100% wholemeal flour. I’ll admit that when it first emerged from the oven, I was a little concerned. Nothing worse than pane duro, hard bread.

The secret is the long slow rising ‘biga’ or starter, made especially for this loaf, and the addition of honey. The recipe comes from my favourite cookbook, The Italian Baker, by Carol Field, and I offer this bread recipe to Leah, of the Cookbook Guru as further proof of this book’s worth.

Pane Integrale con Miele– Wholemeal Bread with honey. ( Ingredients are listed in grams, ounces, cups )

Starter

  • 1/4 teaspoon active dry yeast
  • 160g/5.6 oz/2/3 cup warm water
  • 200 g/7 oz/1 1/2 cups minus 1 Tb unbleached white flour

Stir the yeast into the water in a mixing bowl and leave for 10 minutes. Stir in the flour with 100 strokes of a wooden spoon. Let rise, covered, for 6 to 24 hours.  Measure 1.4 cup of this starter and throw away the rest. ( NB. I used the rest in another recipe!)

Dough

  • 5 g/0.2 oz/13/4 teaspoons of active dry yeast
  • 35 g /1.2 oz/1 1/2 T of honey
  • 360 g/12oz/1 1/2 cups warm water
  • 500 g/17. 5 oz/3/3/4 cups whole wheat/wholemeal flour
  • 7.5 g/0.3 oz/1 1/2 t of salt

Method by stand mixer.

Stir the yeast and honey into the water in a mixer bow: let stand for about 10 minutes. Break up the starter and add to the bowl. Stir with the paddle until the stater is in shreds. Add the flour and salt and mix until the dough comes together. Change to a dough hook and knead for 2 minutes at low speed and 2 minutes at medium speed. The dough should be fairly smooth and have lost most of its stickiness. Finish kneading by hand on a floured board.

First Rise. Place the dough in a large oiled bowl, cover tightly with plastic wrap, and let rise for about 2 hours or until doubled.

Shaping and second rise. Turn the dough onto a well floured surface and shape into a round loaf without punching the dough down. Place the loaf on a slightly oiled baking sheet or a peel sprinkled with cornmeal . Cover with waxed paper or a towel and cover with plastic wrap. Let rise until doubled, around 45 minutes to one hour.

Baking. Preheat oven to 230 c/450 F. Bake for 10 minutes, spraying the oven three times with water. Reduce the temperature to 200c/400F and bake 25 minutes longer. Cool completely on rack.

My notes. My dough spread quite widely and looked like a cartwheel loaf one buys in Italy. I slashed the top of mine in a tic-tac-toe pattern, causing some deflation before it entered the oven: next time, no slashing to see what happens.  I used course semolina on the trays. No need to waste the left over biga – use it in another loaf while the oven is hot. The book also gives instructions for making the loaf by hand or with a food processor. I have listed the method by kitchen stand mixer only.

In My Kitchen. June 2014

I am attempting to clean up my Kitchen Chaos so that semi- resident family members and friends may find a user friendly kitchen while I am away.  Unfortunately, this does not extend to the pantry, which is far too small and has a secret life of its own.  I am attempting to use up all perishables, but the following items are always present in my kitchen:

  • good olive oil. I only use Australian extra virgin cold pressed oil, and for everyday use, I buy Cobram. It wins many prizes internationally, it isn’t doctored with crap – (imported Italian products are generally guilty of this and often have imprecise labelling).  Cobram oil is fruity, young and delicious. The date of harvest is mentioned on the bottle or large can. It is what it claims to be. I buy this in 3 litre containers and decant it  as needed.
  • Image
  • good parmesan cheese. Unlike my approach to olive oil, I only buy imported Parmigiano. Grana Padano or Reggiano Parmigiano is an essential pantry/fridge item and one that my offspring/grand offspring expect to find. I usually find a good ‘stagionato’ parmesan at the Mediterranean Wholesalers in Brunswick.
  • Pasta varieties. Here again I feel compelled to buy the imported product as I love De Cecco pasta and keep lots of pasta shapes on hand.

  • Cans of tuna ( check labels for ethical fishing methods), cans of tomatoes, large cans of anchovies, cans of ceci, borlotti beans and so on for whipping up some minestrone.
  • bread making flour and yeast. All my kids make Pizza. Renato, who will also visit, doesn’t use any of these products, earning himself the title of “Plastic Luigi”.
  • Plenty of home grown garlic.

With these basic supplies,and abundant herbs, lettuces and veggies from the garden,  plus the eggs that my girls lay, my family can make lots of good things. All they need to bring along is a hunk of cheese or some good bread. But hands off my good wine!!
