When Anger Drives Resolution. An Australian Call to Action

Let’s lay the cards on the table. Climate change is not only real, but is making its presence felt in catastrophic ways more often. There’s little doubt that climate change is anthropogenic: 98% of world climate scientists agree that this is the case. There are ample papers and graphs which demonstrate this well and I don’t need to add the links here. The debate was over long ago. Once you agree with the science and accept this premise, it’s time to move down the path of action. If you don’t accept that climate change is either real or does not originate from human activity, you either don’t read widely, are ignorant or brainwashed, or belong to a cult. The Australian Prime Minister, a member of the Pentecostal Church, is well known for his climate change denial stance. It’s a handy belief – that God or nature caused this problem- and underlies his irresponsible stance on climate action, and continued promotion, expansion and subsidisation of the fossil fuel industry. The IMF estimates that annual energy subsidies in Australia total $29 billion, representing 2.3 per cent of Australian GDP. On a per capita basis, Australian fossil fuel subsidies amount to $1,198 per person. As Australian voters, we have a lot to answer for and a lot to change.

I’m not going to write about the heartbreaking and catastrophic fires here in Australia. Others have done so very poignantly in the media over the last few weeks, describing the loss of homes, forests, native animals, ecosystems, and more. I’m attempting to harness my anger and sense of impotence by directing it in a very conscious way towards action. During this sad time in Australia, I’ve been reflecting on hope. Not the nonsensical Hope that goes with Faith and Charity in the old Catholic mantras. Today’s hope is more urgent, real and insistent, driving personal action that leads to a change of the current paradigm.

So what are the goals that emerge from hope? Below is my list. It’s based on where I live, which is in a rural bush setting, 40 kms from Melbourne, my age which is a few days short of 70 years old, my access to time since I am retired, and my political ideology. My list is also a statement of  where I stand at present ( the personal is political, as the old saying goes) and the choices I’m prepared to make or not make. I’ll review these goals in one year’s time.

  1. Government and leadership. In terms of urgency, it is essential that Australia is led by a government that is ready to embrace climate action by phasing out the fossil fuel industry. The current government is hell bent on expanding it. This is the first goal: to work towards the removal of the present government and simultaneously encourage alternative parties or independents to honestly address this urgent issue as a priority. There are various actions you might follow in order to achieve this. You may write to your local MP, asking what their stance is on climate change and emission reduction over the next 5 years. You can join a group such as Extinction Rebellion, or Friends of the Earth ( there are many other groups) which encourage a variety of activities to suit all ages and level of risk. You can attend a climate protest demonstration event in your capital city. The era of protest is back- and is growing weekly in Australia. I’ve found that by being with like minded others, my hope has grown.
  2.  Boycotts. Primary and secondary boycotts are a useful way to bring about change. This involves a bit of homework. Know more about your bank’s investment activities. Divest funds away from companies that support polluting, especially coal mining, activities. Move your banking and superannuation to companies which support green economies. Boycott companies that are financing or assisting Adani in any way. Secondary boycotts are tremendously effective, so much so, that the current government has moved to make them illegal. Primary boycotts include avoiding all media owned by Murdoch. This includes canceling subscriptions to the usual newspapers run by News Corps Australia, the ‘Australian’ and most of the daily and weekend papers in each state. A comprehensive list of Murdoch owned press can be found here. It includes many popular magazines, websites, as well as Foxtel and Sky News. Murdoch, through his stranglehold of Australian media, promotes climate denial and misleading, if not outright false, information and news. On the positive side, the Australian independent media network includes the following : The Guardian, New Matilda, The New Daily, Indigenous X, Renew Economy, The Conversation, The Saturday Paper, The Monthly, Crikey, Meanjin, No Fibs, Junkee, Buzfeed Oz News, The Big Smoke. Many are free, while others allow you to read a free article or two but require paid subscription for full access. Subscriptions keep independent media alive.
  3. Cars. Use public transport and leave the car at home. Use a car only when necessary or when there’s no public transport available. An ideal stance would be to not own a car at all. At present, I believe this is not possible for most Australians, given the geography of the land, the spread of the suburbs, and the length of travel time to work. It is, however, quite feasible for inner city apartment dwellers who have access to GoGet cars for hire short term, and who live on major train and tram routes. I live 7 kms from the nearest train station and use public transport as often as I can. My current small and economical Toyota is 10 years old: my mechanic suggests it will keep going well for another 10 years. On average I spend $25 a week in petrol which is going down with more frequent train use. I’ll probably hang on to this car for a while. A huge carbon footprint went into the making of it, which is a factor to consider before letting it go. When I do buy a new car, it will be electric.
  4. Fridges and electric gadgets. Check the efficiency and environmental star rating of your fridge and air conditioner. Refrigerants contained in older air-conditioners and refrigerators can be extremely harmful to the environment. Many refrigerants, such as chlorofluorocarbons (CFCs), damage the ozone layer, while others are extremely potent greenhouse gases. “One kilogram of the refrigerant R410a has the same greenhouse impact as two tonnes of carbon dioxide, which is the equivalent of running your car for six months.” Throw away your old shed fridge- it’s bound to be a major polluter. Also check the star rating of other gadgets. For instance, I have a 90 cm wide oven which allows me to bake two loaves of bread simultaneously or lots of pizzas. But on the average night, heating this large electric oven for a meal is extremely wasteful and inefficient. I’ve noticed a large spike in power usage on baking days. So I’m transitioning to weekly bakes and stove top cooking which uses minimal gas. Don’t use clothes dryers, there’s really no need to do so in Australia, and add your excess boiling water to a thermos. This can be used over the day for tea making. The electric kettle is a huge energy user. Wash clothes only when you have a full load.
  5. Air Travel. This is a difficult one for most Australians to address. Europeans are able to commute between cities by train, and what an enjoyable way to travel for the tourist too. If Australians abandon air travel, the country will become isolated once again. Having grown up in the 50s and 60s in a country that was suspicious of foreigners, and extremely insular, I would hate to see our country return to this state. The best one can do is to reconsider each trip and limit air travel, especially longer trips to Europe or America. One way to assuage your guilt is to plant trees. Joining a Landcare group is a viable way of getting more trees into the ground. Sadly though, as Australia happily adopted the 20 million tree programme which is about to conclude, the NSW government allowed 58 thousand hectares of land clearing and native forestry removal over the last two years. If you live in that state, demand a halt to land and forest clearing. ( see australia-spends-billions-planting-trees-then-wipes-out-carbon-gains-by-bulldozing-them ) Other States have similar problems with clearing. NSW stands out as having the worst record.
  6. Diet. Meat eating is not sustainable. “If cattle were their own nation, they would be the world’s third largest emitter of greenhouse gases after US and China.” The problem does not simply lie in methane gas. Forest and land clearing, water usage and fertilizers also have a huge impact on the environment. I haven’t eaten meat for 40 years. This environmental message is not new. One of the most influential books on the topic, Diet for a Small Planet  by Frances Moore Lappé, was written in 1971 and had a major impact at the time. I’m not including dairy in my goal statement here- it’s hard to imagine a world without cheese, yoghurt and milk products from small grazing herds of cattle, sheep or goats. I also eat eggs and raise chickens for eggs- their spent straw and manure is a dynamic component in compost making. I occasionally eat fish and carry an App list of sustainable options when shopping for fish.
  7.  Shopping. Clothing manufacturing has a huge carbon footprint, it currently stands at 3% of all global emissions of C02. ( air travel currently stands at 2%). This goal is relatively easy to attain- don’t buy new clothes, but if you do, make sure it’s a rare event, an annual treat and not a mindless habit. Every 10 minutes, 6 tonnes of clothing goes to landfill in Australia. My approach is to look for second hand clothing in fabrics that I like or those with Australian designer labels. Refashioning second- hand clothes made from fabulous fabric is a creative way to approach the problem. I also keep an eye out for great trims and buttons on old clothes. I’m not alone in this hunt, I’ve noticed. I think the fashion industry is slowly being turned on its head and many are now embracing individual styling, and anti fashion statements. Let’s hope it’s not a passing trend among the young but a lifetime commitment.
  8.  Composting. I’m a great believer in composting. Not only does composting help reduce methane emission from landfill, but the resultant humus enriches the soil and traps carbon at the same time. Carbon farming on a large scale is another great way to reduce emissions. In my own small way, it’s one of my private offsets. “Today there is a revolution in agriculture that recognizes the importance of building healthy soils by replacing the organic matter that has been lost,” says David Wolfe, professor of plant and soil ecology at Cornell University. This new approach is called carbon farming. According to Wolfe, in theory, implementing this method on cultivated lands could slow the pace of global climate change by offsetting as much as one-quarter to one-third of annual increases in atmospheric COfor 20 to 50 years, until soil carbon stocks are once again fully restored. Others have argued that a 5 to 10 percent offset benefit is more realistic”. Nothing is wasted in my compost making. I rake mown grass, collect hundreds of buckets of fallen oak tree leaves, collect shredded paper from my daughter’s business and spent straw and manure from the hen house, as well as all food scraps. This is a daily business and often takes hours but it beats going to the gym for exercise. This would not be one of my priorities if I lived in an apartment or house without some accompanying land. It’s not a goal for everyone.
  9. One of the more unusual things on the lists I have read ( and borrowed from) is the Education of Girls. This often appears as Number 4 on world goals to save the planet, but perhaps it should be number 1. You can change the pattern of unsustainable growth through education. Girls education is the single most important thing in reducing  the birth rate: at the same time, educated women have a powerful influence over culture and survival. Find a charity that supports girls education in places where it is most needed. If you know of any good ones, please let us know by commenting below.
  10. Recycling. I’ve added this at the bottom of my list as it’s still an important goal to improve in this area. I believe most people do have a conscious approach to recycling and are trying hard to manage their waste through sorting into the appropriate categories and limiting their purchase of plastic wrapped goods. I’m not ready to obsess about scraps of waste that end up in my landfill bin. My waste will not fit into a Mason jar. Waste management also needs further work at the state level.

This is my list of achievable goals. Some things I already do, others are works in progress. The ranking is random, except for number 1, government change. Your list may be completely different, because you are a busy mother holding a full time job, because you need to cross the city to get to work, because your job demands that you fly, because you are much younger or older than I am, because you live in an apartment, because you have a disability or have special needs. My list is not meant to sound preachy or self righteous. If it does, I apologise, knowing there’s nothing more annoying and counter productive than those who signal their own virtue. The Best Broad Bean Soup, with grated outrage on the side?

I wish modern life was as simple as a freshly picked broad bean. Broad beans keep on giving, to us, back to the earth, to the future, and don’t ask for much in return. They are prolific, nutritious and easily grown, but their season is short. When I’m picking broad beans or fava, I feel safe and in touch with something primordial and elemental: they’ve been cultivated for 10,000 years and pop up in all sorts of world cuisines. The recipes are endless and all tempting. I often notice how well these tall plants support each other in the wind when they’re heavy with fat beans. Bending my way through the pale stalks as I pick the plump young pods, I often reflect on the grander issues of life. Gardening is my thinking space, free from distraction and noise and it is, in a sense, quite subversive . It’s a world away from the culture wars that dominate my screens, where new causes and self -righteous stances pop up daily and divide and split those on the same side, each issue mutating along the way. Young versus old, boomer versus millennial, carnivore versus vegan, on and on it goes. Is this cartoonist a misogynist? Change the Date, Nup to the Cup, farmers versus city folk, who has the holiest milk, almonds versus cows, will the real water thieves please raise their hand, diet religion. Division is the name of the game here, and those climate crisis deniers who speak untruths, who adopt slogans without meaning in response to catastrophe, dealers in fake religion, prayers and hopes and rhetorical nonsense, the used car salesman in a baseball cap holding a lump of coal, or those sporting silly hairstyles, the cretins in power are laughing all the way to the next polls. Unlike our co-operative and timeless tall broad bean plants, progressives around the globe are divided and distracted, too busy with their own point scoring and breast thumping, privately self congratulatory at their stance on… fill in your own issue. Beware of smugness and mindless memes. Read more books and turn off the screen. View with suspicion new language, appropriated words from African Americans, if it makes you feel superior, separate or better than others. Keep your eyes on the main event. There is only one earth. Divided we lose.

My Best Broad Bean Soup. Crema di Fave Fresche con Pecorino Romano.

  • freshly picked broad beans, 800 gr or more
  • one large potato or 2 medium, peeled and cubed
  • one medium onion, finely chopped
  • new season garlic, 3 or more, finely chopped
  • EV olive oil
  • stock, home made or water with stock cube/powder
  • fresh marjoram leaves, torn
  • sea salt, white ground pepper
  • grated pecorino romano cheese
  1. In a heavy saucepan, sauté the onion and garlic in olive oil gently for 10 minutes till soft and golden.
  2. Add the chopped potato, and cover with stock. Cook on medium heat.
  3. Meanwhile, shell the beans and cook them in boiling water for around 1 minute. Drain, cool the beans in cold water, then shell them. The delicious green centre will pop out easily between finger and thumb, once parboiled.
  4. Once the potato is almost soft, add the green shelled broad beans and the torn marjoram. Cook gently for another minute or so. Season well.
  5. Add the contents to a blender or food processor and buzz until smooth.
  6. Serve with freshly grated Pecorino Romano. Of course you could use another cheese, but Pecorino and broad beans( fava) make a wonderful marriage, and are a traditional match.

This post was inspired by an overdose of activity, by way of comment in the Guardian, with a whole heap of supposedly progressive younger people who like to use the meme, #okboomer, an ageist term destined to divide activists on the basis of age. Use it and be the unconscious tool of fascism.

The Best Day of the Year. Some Random Thoughts.

Phew, I’m glad that’s all over for another year. Without a doubt, the best day of the year is Boxing Day. It’s a significant turning point in the Australian calendar, marking the start of summer holidays in earnest, a time to indulge in guilt free relaxation, simple foods, barbecues, books and trips to the beach. As much as I tried to avoid the Christmas mayhem this year, the gift giving merry-go-round, and the over indulgence in rich food, I admit I did succumb. I guess I’m too well-trained: Christmas, with all its trappings, is ingrained in my DNA. It’s a romanticised and mythologised Christmas that bears no resemblance to the modern-day version. Next year, I might run away.

Peach time, always ready on Boxing Day.

In my retrospective analysis of that over- rated day, one bonus was that I avoided visiting large department stores. Most gifts were purchased online ( from some of those large stores) which were delivered to my front door. The extra shipping cost was far less than the return drive to the nearest bastion of commerce, not to mention the enormous saving to my sanity. No Christmas carols, no maddening queues, no parking angst. I also found a few gifts in a nearby village, two novels for my bookworm granddaughter, purchased in a newly established, tiny children’s bookshop. This shop needs supporting.  I also found a hand made shoulder and neck heatbead pack from the local osteopath. The same village has a Japanese gift shop with an array of tempting goods, jewellery and clothing, a little gold mine of inspiring gifts for the hard to please at any time of the year.  And my gift from Mr T were two young black Silky chickens from a livestock poultry cart at the local farmers’ market. I plan to support more small local stores in the new year. 

Although Boxing Day is a secular holiday, it most likely has roots in St Stephen’s day. It’s derivation is worth noting in this modern day of  online delivery service. In 19th century Britain, Christmas boxes ( gifts or money donations)  were left out for post- men, errand boys and servants on the 26th December.

“In Britain, it was a custom for tradesmen to collect “Christmas boxes” of money or presents on the first weekday after Christmas as thanks for good service throughout the year. This custom is linked to an older British tradition: since they would have to wait on  their masters on Christmas Day, the servants of the wealthy were allowed the next day to visit their families. The employers would give each servant a box to take home containing gifts, bonuses, and sometimes leftover food.”

During the Middle Ages, alms boxes were left at the door of churches to distribute to the poor. This, in turn, may have evolved from the late Roman/early Christian era, when metal boxes were placed outside churches and used to collect special offerings for the Feast of Saint Stephen, which falls December 26, or  Boxing day. 

Life’s peachy

I’m now wondering whether we should leave tips for those van drivers who bring our shopping to the front door. I remember a time when we would leave a gift of beer for our garbos, ( rubbish collectors). Recently a wine delivery courier arrived in a rental van, a charming and very chatty Sikh. His father came to assist in the weekend deliveries but didn’t speak English. The younger turbaned chap explained that his father had been visiting for a year, but the cost of an extension to his temporary visa amounted to well over $100,000. Our new  postal carriers work harder than ever in this day of online shopping.

And like those masters of yore, I too have a surfeit of food when it comes to Christmas leftovers. Yet in this age of plenty, my palate yearns for simpler delights- a freshly plucked peach from our laden tree, a simple zucchini and basil soup, or a spoonful of leftover creme caramel flan, a simple thing made from our fresh hens’ eggs, a little sugar and milk.

Some cheeky visitors retain their Christmas colours all year round. Very rude when they take a fancy to the mixed nuts on the table.

I’ve been thinking about Western over indulgence lately, all that plastic, the indulgent gift giving, the accumulation of junk, the groaning table of food. We need to return to simpler practices. Will a shift in the economic tide bring with it an appreciation of basic things- a hand-made gift or a longed for book? Has the internet era killed the joy of Christmas in the young? What happened to toys? In the age of electronic device, do children still run and play? Do I need my sleep measured by an app?

Another Green Recipe from a Militant Gardener

The word ‘green’ is associated with more connotations than most other colours, including immaturity, rawness, naivety, pale and sickly looking, envy, and the green environmental and political movement, just to name a few. Perhaps some of these concepts are inadvertently connected? As an offshoot of the green environmental movement, some cooking sites loudly proclaim to be ‘green’, a word that has become synonymous with healthy. A quick perusal of these sites will reveal recipes using all sorts of everyday ingredients that are neither ‘green’ nor  healthy. ‘Green’ food, just like that other odd term, superfood, has become another marketing tool. Maybe green is the new lite?

Pasta della settimana

As I suggested in a recent post on eating greens, I am enjoying taking the word back to its literal meaning, given that I have a vast array of garden greens to choose from. I can honestly say that most of the things I eat are unavailable in restaurants. I prefer to eat my own concoctions more than ever and have no time for flashy, restaurant styling or plating. I’m after big flavour, freshness and ease of production. My garden greens go in soups, pastas, risotti: they top pizzas, go in salads and stir fries, while the herbs flavour bland foods or star in their own right.

Growing our own food and eating with the seasons is a fifty year old habit, though I think we’ve become better at it with age and more time. My green stories are not meant to promote a romanticised view of country life. Far from it. It’s a lifestyle choice which comes with a fair amount of dedication and is not for the armchair tree changer, the naive or the time poor. The picture of country life, at least in the Italian context ( this blog does, after all, rely on a certain Italianità for content and inspiration) pictures a nonna making bread and preserves or a nonno making sausages and eating pecorino and fresh fava beans under an olive tree. There will be home pressed olive oil and maybe an outside fireplace to cook alla brace. This is the stereotypical view of Italian country life, a wonderful food marketing myth. The idyllic notions about cucina povera conveniently ignore the laborious and hard life of the peasant. Italian migration, especially after WW2, took place as a result of desperate poverty in Italy. We can forgive the modern-day Italian blogger who pretends, just a little bit, to be connected to the land and the seasons, writing from the comfort of her own modern apartment or suburban home via a trip to the nearby farmers’ market to check what’s in season. These stories make people feel that their food has authenticity, another marketing tool.

It’s not easy being green. It’s hard work living by the seasons, which involves making vast amounts of compost based on the layering of collected manure, grass clippings, oak leaves, and scraps, as well as saving seed, pruning, netting fruit crops, harvesting gluts of food and giving it away or preserving it, watering, mulching, and ensuring that the fences keep out unwanted pests such as rabbits. The food tastes good because it has been nurtured well.

If you are fortunate enough to have any small patch of land that accompanies your abode, grow herbs that suit your climate, plant some silverbeet (chard) in the flower garden- rainbow chard, with its yellow and red stems looks wonderful. Plant an annual crop of cavolo nero for winter soups. These tall dark green plants look statuesque in a garden bed next to lavender. Why not grow some artichokes in an unused corner of the yard? Their silver leaves are as ornamental as any other exotic plant and they grow like weeds. Pop in a row of radish every fortnight and some soft heading lettuce. Tend to them like children and learn what they need. The old cop-out, having a black thumb, is an excuse for not learning about your own environment or the needs of plants. Agitate to save an old growth forest from logging and learn to grow a few greens at the same time. 

The two pastas shown throughout this story both rely on the same base soffritto shown in the picture below.

As the spaghettini cooks in the pot of boiling salted water, chop some soffritto ingredients. I like to use anchovy fillets, garlic and dried chilli. Heat a good glug of EV olive oil in a wide and deep frying pan and add this mixture, stirring about to break up the anchovy. Add some greens to the pan- I like to use broccoli Calabrese, a side shooting broccoli that is even finer than broccolini and cooks in a minute, a few young leaves of cavolo nero and some immature zucchini cut into the same shape as the other greens. Toss these about for a few minutes, then add a ladleful or two of the pasta cooking water. Raise the heat to reduce the liquid a little. Once the pasta is al dente, drain it and add it to the pan of greens. Toss about and season with ground pepper. Serve in big bowls and dress with grated Parmigiano or more good oil, or leave it as is.

No quantities are mentioned in the recipe. It’s entirely up to you and what greens you use. This recipe only works because the greens in question were picked 20 minutes beforehand. Herbs work well. Lettuce, chicory, chard, shaved young artichoke- whatever you can find or forage.

Simply pink. A few stray small garlic before cleaning. I’ll use this lot while young and ‘green’.

Notes.

  • Brocollini Calabrese seeds can be bought from Eden seeds. Sow these directly into the ground in April ( or towards the end of Autumn). I pick side shoots every second day.
  • Sunny brand anchovies come in 750 gr cans. I buy these at Gervasi supermarket in Brunswick, Melbourne. I haven’t seen them anywhere else in my travels. They are very good and last well, packed under oil.
  • If you grow too many chillies, dry them out and grind them in a spice grinder for the year. You can then decide on your own level of heat. They last in sealed jars forever.

 

Pasta of the Week, Pantacce and Borlotti Beans with Rugola. I Can’t Believe it’s Vegan

Lots of Italian food is vegan by nature and vegan by tradition but you never see it labelled as such. And that, in my opinion, which is neither humble or otherwise, is a good thing. I can’t stand labels. Most of the food you will read about on my blog is vegetarian, but I rarely mention that word in the post. I firmly believe that once we do away with labels- vegetarian, vegan, plant-based, omnivore, ethically farmed (hallelujah) and heaven forbid, Paleo- the culinary world will be a better place. A good recipe tempts the taste buds with the summary of its parts and its visual tease.

Another version of Pasta e Fagioli

I’ve tasted very good vegan food in restaurants without that little colour- coded ‘v‘ in the corner to guide me, many a fine Italian antipasto and primo, as well as lovely traditional Indian, Greek and Middle Eastern dishes. Last Saturday I joined the throngs at the popular A1 bakery in Brunswick and ordered the Ful Mesdames platter. It  was comprised of a large bowl of semi mashed warm Ful,( dried fava beans recooked) dressed with a few chick peas, olive oil, parsley and sumac, sitting on a wooden board full of extras, gherkins, pink turnip pickles, warmed middle eastern bread cut into quarters, and a generous side salad of tomatoes, lettuce and onion. It was a surprising bargain for $8, a dish that would generously feed two people. No v word in sight. The stuff that parades as vegan around the cooler traps of Melbourne is either bland or highly processed and appeals to those whose taste buds are still transitioning from childhood to something else. The newly converted may need a label to spur them on. The best vegan food is never described as such. Look at the wonderful Italianesque recipes of Rose Gray and Ruth Rogers of The River Cafe fame, whose simple vegetable based recipes make me drool at the thought, sending me running to the kitchen garden. Again, no v word required. Good food is based on fresh seasonal ingredients, combined with a solid understanding of the role played by complementary herbs and spices, then presented in such a way in such a way to excite the diner.

This week’s Pasta Della Settimana ( pasta of the week) came about thanks to the current seasonal offerings from my garden- abundant rocket, fresh borlotti beans, tomatoes, garlic and chilli. It’s a solid meal for a cooler day. It’s another take on Pasta e Fagioli, that classic Italian dish that has moved up the ranks from Cucina Povera to bourgeois heaven. It can be deveganised by adding some finely grated parmigaino or any other animal based shavings you might fancy.

Pantacce pasta

Today’s pasta of the week calls for Pantacce, a mini bite sized lasagna pasta shape with a diagonal cut and a frilled edge along one side. These shapes are made by Molisana, another brand of pasta I sometimes use. It’s a versatile shape that goes well with most sauces. My garden inspired the rest. In this recipe, the beans are the main star, with a small handful of pasta per person to help unite the dish, providing a farinaceous element for the hungry.

Ingredients. Once again, this recipe is descriptive, not prescriptive.

  • Fresh borlotti beans, cooked slowly with a handful of herbs, a pinch or two of salt and a drizzle of oil. If you can’t access fresh borlotti, use dried beans and cook them slowly so they don’t split or go soggy.
  • Pantacce pasta, a lasagnette shape made by Molisana or any other medium-sized short pasta shape. I have used one large handful per person as I wanted the beans to star.
  • Some left over home-made tomato sugo, a few tablespoons per person. If you don;t have fresh tomatoes, use a good quality, thick tomato passata, cooked with a little garlic and oil.
  • finely chopped garlic to taste.
  • one finely chopped fresh chilli or a pinch or two of dried chilli flakes.
  • EV olive oil
  • fresh oregano, finely chopped.
  • fresh rugola ( rocket) torn.

Method

  1. Boil pasta in abundant salted water until al dente. Keep back some of the cooking water.
  2. Meanwhile, in a wide and deep pan, add some olive oil to the pan and heat it on medium. Add the garlic, chilli, and oregano. Stir about for one minute then add the tomato sugo or passata, a few tablespoons per person. Stir through the beans, season well, then add the cooked pasta. Use a tablespoon or two of the pasta cooking water to loosen the sauce. The dish needs to be well sauced. Bring the dish to high heat, stirring, then add the rocket and move it about until it wilts. Serve hot with a drizzle of good oil.

Villa Farnesina, Rome. Who was Agostino Chigi?

This summer throughout January, I’m catching up with some of my unpublished stories from earlier travels in Europe in 2017. Some posts will be light-hearted, centered around food and accommodation, ‘the best of’ reports, while others are research based essays. It will be rewarding to polish them up and give them a final airing. Of course there will be a few cooking posts along the way too.

I’ve been thinking a lot about Agostino Chigi lately, and wondering why there’s not a great deal written about him. Given that he commissioned one of the most elegant and beautiful buildings of the Renaissance, Villa Farnesina in Trastevere, Rome, and was a generous patron of the arts, I find this quite unusual.

Agostino Chigi, (pronounced kee-gee) was a 15th to 16th century banker who was born in Siena then moved to Rome to assist his father, Mariano Chigi in 1487. He became the wealthiest man in Rome, especially after becoming banker to the Borgia family, in particular Pope Alexander V, followed by Pope Julius 11. If there’s one thing that helps a banker stay at the top, it’s having business dealings in Rome and becoming the Pope’s treasurer. The Florentine Medici, Giovanni di Bicci and Cosimo de’ Medici, also milked their Roman and Papal connections in the preceding years. Chigi’s financial interests expanded to obtaining lucrative control of important minerals, including the salt monopoly of the Papal States and Naples and the alum monopoly in Southern Italy. Alum was the essential mordant in the textile industry. With financial and mining interests, like a modern-day crony capitalist and entrepreneur, Chigi was ready to splurge.

The connection between the arts and banking makes an interesting Renaissance study in itself ¹. Banking families were keen patrons of the arts, not only in a bid to show off their taste and refinement, but also to cast off the slur of usury. Usury, making profit from charging interest on a loan, was a crime in 15th century Europe: a usurer was heading straight to hell, according to the main religious thinking of the day, unless he made a few corrections to that practice, through intricate bills of credit requiring lengthy international currency exchange deals. Banker patrons, worried about their afterlife, could buy a place in heaven by financing religious works -perhaps a marble tomb for a Pope, or some fine brass relief doors for a baptistry, or a few walls of religious themed freschi demonstrating their piety and devotion by appearing as genuflecting bystanders in a painting or two.

Chigi, like other bankers before him, was keen to spend time with the literati and patronised the main artistic figures of the early 16th century, including Perugino, Sebastiano del Piombo, Giovanni da Udine, Giulio Romano, Il Sodoma and Raffaele. These artists, and the architect Baldassare Peruzzi, all had a hand in making Villa Farnesina so attractive and harmonious. But the main feature you’ll notice in the painted works is its secularity: no religious themes appear in the decoration at all. Thus somewhere between the mid 15th century and 1508, when this building was commissioned and begun, the subject of the visual arts had shifted. Here, the freschi depict classical and historic themes: there’s not a Madonna or baby Jesus in sight except for those cheeky putti holding up garlands. I doubt that Agostino Chigi was overly concerned with the sin of usury. Times had changed.

The ground floor room, the stunning Loggia di Psiche e Amore, was designed by Raffaele, though was mostly executed by one of his followers Giulio Romano, and seems heavier in style. It’s not the best secular work by Raffaele: his most graceful works are held in the quiet gallery of Gemäldegalerie, in Berlin, Germany ( more on this gallery later). The decorative garlands and festoons are by Giovanni da Udine, and although hard to get close to, draped as they are on high ceilings and around tall window sills and pillars, they steal the show.

Sensuous and erotic, the total effect of the Loggia is complete in its aim and purpose. This is a pleasure palace, a space decorated with pagan themes of love and seduction from classical mythology, designed to amuse Chigi’s guests. The modern addition of a walled glass fronting the garden allows more light to shine on the rich colours and detail. It is delightful.

Upstairs in a smallish room, the wall panels by Il Sodoma, ( catchy nick name for the artist, Giovanni Antonio Bazzi , no two guesses why), depict scenes from the marriage of Roxana and Alexander. In such a small space, the painted walls are ceilings are visually overwhelming.

At the end of the 16th century, Villa Farnesina was bought by Cardinal Alessandro Farnese ( of course a Cardinal needs an erotically decorated villa) and its name “Farnesina” was given to distinguish it from the Cardinal’s much larger Palazzo Farnese on the other side of the Tevere. Today the Villa is the centre for the Accademia Nazionale dei Lincei, the Italian Science Academy and the rooms are open to visitors. Palazzo Farnese, across the river, is occupied by the French Consulate and is not open to the public.

These small decorative motifs on window shutters and in cornices add to the overall aesthetic of the villa.

 

Some useful accompanying notes.

Giorgio Vasari, (1511-1574) author of Lives of the Most Excellent Painters, Sculptors and Architects, often simply called Vasari’s ‘Lives’, was the first art historian and the first to use the term rinascita ( Renaissancein print, though an awareness of the ongoing “rebirth” in the arts had been in the air since the writings of the Florentine Humanist, Alberti, almost a century earlier. He was responsible for the use of the term Gothic Art, and used the word Goth which he associated with the “barbaric” German style. His work has a consistent bias in favour of Florentines and tends to attribute to them all the developments in Renaissance art. Vasari has influenced many art historians since then, and to this day, many travellers to Italy are blinded by Vasari’s Florentine list and bias, at the expense of other important works in Milano and Rome. Vasari, however, does recognise the works in the Farnesina.

Totally Stuck for Words

Most village markets in France are orderly, traditional and predictable. Sensibly dressed women arrive with shopping baskets, older men often sport a beret or cap to ward off the morning chill. There will be stalls selling vegetables, a cheese van, a saucisson stall, a pan- Asian fast food van, to which the French flock – vive la différence – and perhaps a cake stall, featuring this season’s walnuts. And so when the knife sharpening man turned up at the weekly market in Monpazier, dressed in colourful clothes and working under the old covered hall, I was instantly drawn to his stall. I asked him if I could take his photo, although the conditional and polite part of this question, the ‘could I or may I’, suddenly escaped my memory.  He happily obliged despite these omissions and mentioned that if someone takes his photo without asking first, he would not give his permission. As my mind slowly processed this information, I noticed the roughly painted anarchist sign on his leather apron.

And then it happened. I stupidly inquired, in my primitive French, which is always stuck in the present tense, about why he wore this sign. I may have simply asked, ‘Pourqui’, while pointing.

He replied passionately, rapidly and fairly vocally, why he was proud to wear this sign. I could follow bits of his response: there was mention of the new French President Macron and then he concluded, “But you don’t understand, do you. You can’t respond, can you. Can you speak?” I’m standing there paralysed and the words won’t come. “Je… je… je... ” A crowd is gathering behind me and he continues his anarchist rave. “Je… Je.” And I wanted to say, “OuiJe comprende ” or something agreeable, like “d’accord”, just so I could run away and save face but I feel like I’ve just left the frontal lobotomy ward.” Je…Je...”. I want to agree that the handsome Macron bloke has turned out to be a huge disappointment, so much for middle ground, but what can you expect from a former investment banker, and do you mind pouring me a glass of wine even though it’s only 10.30 am, because I really need one now. But nothing comes out of my mouth, nothing, until eventually I mumble je suis désolé and I’m feeling like a total fuckwit. I haven’t even had time to get out Mt T’s favourite opening line and gap filler, “Excusez-moi, mon français est très mal” to which I usually add behind his shoulder, “you mean c’est merde”, c’est tres merde.”

Salut

The knife sharpening man is laughing now, enjoying his wine, probably not the first for the day, and so we exchange drinking salutations, salut,  santé, salute, chin chin, na zdrowie proost, sláinte, cheers ( mate) and so on. It’s an exchange of sorts.

Travellers, like me, who have a smattering of French, tend to stick to simple conversations, which hover around known contexts and commerce such as buying food or goods, and include a working grasp of salutations and courtesies, all limited to the present tense with an occasional flirtation with the simple past tense and with an excellent grasp of nouns but not so many irregular verbs. Is it possible to have a real conversation without a working knowledge of the multi- tiered tenses that we use everyday without thinking, the past perfect and imperfect tenses, the future and historic tenses, all woven together, like a language knitting pattern, with fancy stitches that include the conditional, the imperative, the reflexive and the subjunctive moods used in past tenses, stitched up with  the gerund and embroidered with the nuances of language that involve irony, idiom and cultural understandings? I think not. I stand accused, sir. I would love to sit down with you and have a chat and a wine, but I can’t. Well not in French anyway. Cheers.

 

Balinese Tourism, the Australian Media and National Identity

The Australian media revels in stereotyping Australian tourism to Bali. It’s an annual event, always bound to get a heated reaction. Fake news and generalisation usually does. The story follows the same old path: find a group of poorly behaved Australian bogans ¹, make sure they are shirtless or dressed in gaping singlets; a few tattoos help magnify the picture. Film them at a bar or nightclub in Kuta or Legian, with sound grabs of their loud, appalling behaviour. Beer swilling scenes and expletives complete the picture. This minority group is an easy target for the media. It’s an historic one too, recalling in recent times, the singlet wearing, fag in mouth, ‘ocker’ of the 1980s, and before that, the yobbo, the larrikin and the ‘wild colonial boy’. Australians have a love -hate relationship with their own working class. Often despised, they become symbols of our national cultural cringe. At other times in history, they’ve been employed to boost patriotism ( Ned Kelly, WW1 diggers, Henry Lawson characters). We either love or despise our famous bogans. A few random modern examples include Dawn Fraser, Paul Hogan, Shane Warne, Lleyton Hewitt and his wife Bec ( Australia’s answer to the Beckams), Kath and Kim, and Pauline Hanson. I have included Pauline Hanson, the Kabuki masked racist, in this list as she might be considered the bogan queen.

‘It can be argued that the larrikin tradition of disdain for authority, propriety and the often conservative norms of bourgeois Australia, are two sides of a self-reinforcing dynamic; the social conservatism of the mainstream fuels the undercurrent of larrikinism and rebellion, which, in turn, is seen as demonstrating that a firm hand is needed. This is sometimes referred to as the “larriken- wowser nexus”, ‘wowser’ being an Australian colloquial term for a person of puritanical mores.’²

A few more Australian stereotypes might be added to this time-honoured clichéd portrait of the Australian tourist in Bali. Enter the CUB family (cashed up bogans). The media portrays this group as a wealthy but poorly educated sub- class of ‘tradies’³, who have no time for Balinese culture or culture in general. The successful ABC television drama Upper Middle Bogan milks this stereotype to the hilt. Add to this the media’s obsession with the Corby family and the vacillating portrayal of Schapelle Corby as innocent victim or guilty bogan drug smuggler. The annual media focus on ‘Australian young lad caught with a stash of marijuana gets caught up in the Indonesian prison system’ amplifies this stereotype. The media’s dramatisation of these sad stories suggests a deep distrust of the Indonesian legal system, resulting in untold damage to Australian- Indonesian business and political relationships.

A quick look at the annual tourist arrivals to Bali is of interest here. The figures for 2016 reveal Australian visitors leading the way at 1.137 million visitors per annum. This year, 2017, the figure has been surpassed by the Chinese.

The Balinese will be the first to tell you about their impressions of tourists. They love Australian tourists because they spend money on local products and services and engage with the locals in an open and good-humoured way. They pump money into the local economy.  The Chinese, according to the Balinese, don’t spend any money in the markets or on transport and don’t engage with the locals. Their tours are usually packaged; as a result, very little money flows directly to poorer Balinese people. My own observations of Malaysian and Japanese visitors, if I may generalise a little here, suggests they have a preference for large internationally owned hotels which effectively insulates them from Balinese people. European visitors prefer to eat in Western restaurants, and are far more hesitant with the locals. They do, however, spend money on transport, water sports, hired sun baking chairs, and tours.

The following is a summary of the makeup of Australian tourists in Bali based on my own observations over the last 39 years.

  • Younger tourists travelling overseas for the first time. Bali is an affordable destination for them. Some have studied Bahasa Indonesian at school and have a smattering of the language. This group spends money on sporting activities, transport, cheap clothing, sarongs and nicknacks. They tend to stay in budget or family run accomodation, and eat in cheaper, family run warungs.
  • The Bogan- Ocker tourist who usually base themselves around Kuta/Legian and Seminyak. They don’t take much interest in Hinduism or Balinese culture generally. They come to Bali to party. This is the group which gives Bali a bad name. They spend money on alcohol, transport and accommodation.
  • Family groups who travel to Bali during the Australian school holidays. They tend to stay in bungalows and small family run middle of the road Balinese owned hotels with swimming pools and proximity to the beach.
  • Older, retired couples or singles. This is a growing market and one that the Balinese are very happy to accommodate, by providing more flexible visa extensions, reliable health care and on site massage. The main attraction for this group is the climate and the affordability of food and services. Many in this group often stay in the same accommodation for a month or more at a time and are treated almost as family by the managers. This option is particularly appealing to older, single women, who feel much safer and more comfortable in Bali than in Queensland, for example. This group spends money on massage, pedicures, local warung food, drivers and accommodation.
  • Active travellers who enjoy watersports such as surfers, divers, snorkelers, wind surfers, bikers, cyclists, trekkers.
  • Cultural tourists interested in women’s’ textiles and ikat weaving, language, meditation and yoga, Hinduism, cooking, art, landscape design, and history.
  • Those travelling to Bali to attend the annual Jazz festival and Writers’ Festival, a growing market.
  • Business tourists who open franchises or restaurants. Whilst these operators are making big money in Bali, they do also provide hospitality training to the Balinese.

    Eating locally at family run restaurants, not International hotels. And yes, it’s chicken, not dog, as some of the idiotic media love to suggest! The chicken here is free range.

I’ve just spent two weeks with 15 members of my own family in Bali. In many ways we are a typical Australian family. We have different interests, different occupations, ages, educational levels and aspirations. I can happily say that we all have a high respect for the Balinese culture and people. I would also argue that most Australian visitors to Bali do.

Vincent and Beyond. The National Gallery of Victoria for Kids

In the digital age, where many children have instant access to famous art images from worldwide galleries, a visit to a national gallery may produce two completely opposite responses: they will either be enthralled, eager and stimulated or bored, indifferent and restless. Fortunately for me, I visited the National Gallery of Victoria (NGV) with a young art sponge: the day was a huge success for both of us. Oliver was keen to visit Van Gogh and the Seasons, an exhibition of 50 paintings and drawings by Van Gogh, which is now showing at the NGV until July 12. Like many other 8 year olds, he had some previous knowledge of the works of Vincent, mostly through art programmes at his school. He had also spent time with me leafing through large glossy art books and discussing these images, something that the curious love doing with an older person, unlike the image trawling, swipe, reject, like, swipe attention span deficient pastimes of today, where discussion, reading, and dialogue are sadly missing.

Our visit was planned a few weeks beforehand, with a discussion of Vincent’s works and a look at a couple of other art movements in history. Oliver was also keen to see the work of Picasso, his current favourite artist, and fortunately, the NGV holds one small painting. He was also keen to see the Michelangelo’s Pietà and Leonardo’s Mona Lisa! I think this boy may need to travel to Italy and France one day.

Before embarking on a trip to the Gallery with young children, consider the following:

  • The age of the child. Kids’ attention spans differ greatly from age to age.
  • The interests of the child. Not everyone travels with an ‘art sponge’ but a trip to the gallery can be tailored to meet the interests of the child.
  • Pre- planning. Go through the collections online and choose a few pieces from one or two areas that are appealing rather than wandering aimlessly.
  • Limit the visit to one or two sections so that they are keen to return.
  • Be informed about the works you have decided to visit. Kids ask a lot of curly questions.
  • They probably won’t read the plaques alongside each painting. Kids will find stories in the works that will surprise you. I usually ask them to read the date and the artist of each piece.
  • Don’t be surprised if they move along faster than you would like.
  • Factor in a few breaks. There are lots of chairs and couches about the gallery. Have a break here and there.
  • Buy them a few postcards of famous artworks at the end as mementos of their visit.
  • If visiting a temporary exhibition, such as Van Gogh and the Seasons, book the tickets online before you go and arrive at opening time. There is nothing worse than trying to appreciate art through a sea of heads and iPhones.
  • The NGV is free of charge- only temporary exhibitions have entrance fees –  and is surprisingly empty on a Saturday morning.

A few surprises for Oliver included Tiepolo’s The Banquet of Cleopatra, held in the 17th to 18th Century European Paintings Gallery, Level 2, NGV International. I am saving a few edited stories about this one for our next visit. He loved the grandeur of it, the dog, and the costumes. Other surprises included the Egyptian Sarcophagus, 700 BC, which led to an endless array of questions about dates, maths, AD versus BC, and the promise that we would return to visit the Egyptian and Ancient Art Collection next time.

I also discovered a few gems and am looking forward to returning to immerse myself in the Art of the Sublime, an English art movement that I find intriguing, and a concept where the word ‘sublime’ ( like other tainted words such as awesome, terrible, amazing, horrible) held far more meaning that it does today. Two works from this movement caught my eye. Mount St Michael, Cornwall by Clarkson Stanfield, 1830 and After the Massacre of Glencoe, by Peter Graham 1889, might need a solo visit, with the stories and the history of Glencoe stored until the young ‘art sponge’ is 14 or so. Let’s hope he’s still keen.

Oliver was impressed that there were no fakes in the gallery, something that I just took for granted but that many kids don’t. The geekish acronym IRL, or In Real Life, resonates loudly here. He is keen to return and I can’t think of a lovelier person to accompany me.

Give Us This Day

Warning. This post is not about religion but bread, although it’s hard to resist segueing into the religious connotations associated with bread, not to mention bread’s best mate, wine. As these two life-giving basics feature often in my daily life, I give thanks but I’m not sure who to. I remember the ending of the Lord’s prayer quite well: it always signified the end of Mass which meant freedom was just around the corner. I also recall the hilarious Mondegreen* of my younger sister’s friend, Cecilia, whose child’s voice could be heard clearly from a nearby pew, as she chanted

         “Give us this day our daily bread…. and deliver us from eagles, Amen”

I  rather like this alternate ending and I think my chickens feel the same way too.

The joys of bread are almost too numerous to list. Unassuming and humble, bread is central to most western meals. The breaking of bread at the table amongst friends, the dipping of bread into new season’s olive oil, the grilling of bread for bruschetta or the morning toasting of yesterday’s loaf, smothering it with quince jam, or Vegemite, or just butter. The dunking of bread into soup, or the submerging of bread under Italian Ribollita or French onion soup. The left over stale loaf crumbed and stored to top a future  gratin, or cubed then baked in garlicky oil for croutons. Given the effort gone into baking a good loaf of bread, (even if you haven’t made it yourself), it seems a sin to waste it.

Bread making has a certain rhythm: once the pattern is broken, it takes a bit of discipline to get it all happening again. My sourdough bread takes 24 hours to come to fruition: one day of feeding my starter, beginning at 7 am,  with 4-5 hours between each feed. One evening of mixing and stretching, which takes very little time, but requires my presence at home. An overnight rise of around 8 hours followed by an early start at around 6 am  to shape, rise and re- shape at  7 am. Into the oven, a 40 minute bake, and there you have it. Fresh bread by 8 am, 24 hours later. Cost, around 50 cents a loaf. Very little work, but bucket loads of discipline, and a ritualistic start to each day, not unlike meditating or praying.

The aroma of freshly baked bread is a morning sensory pleasure, only to be rivalled by the smell of a good curry in the evening or the aroma of slow baked quinces on a chilly Autumn day.

“A mondegreen is a mishearing or misinterpretation of a phrase as a result of near homophony that gives it a new meaning. Mondegreens are most often created by a person listening to a poem or a song; the listener, being unable to clearly hear a lyric, substitutes words that sound similar, and make some kind of sense. American writer Sylvia Wright coined the term  in 1954, writing about how as a girl she had misheard the lyric “…and laid him on the green” in a Scottish ballad as “…and Lady Mondegreen”

“Pinker gives the example of a student stubbornly mishearing the chorus to ” I’m Your Venus” as I’m your penis, and being surprised that the song was allowed on the radio.
